Season chicken with salt, garlic powder, and pepper. Mix flour, egg, and milk into a wet batter. 2. In another bowl, mix all dry coating ingredients. 3. Dip chicken in wet batter → coat in flour mix. 4. Deep-fry or air-fry until golden and crispy. 5. Chicken and Century egg congee Congee is my go to meal for when you need something warming but lighter on the stomach. Its typically enjoyed for breakfast but I think it is perfect for any time of day. Congee when enjoyed in Cantonese restaurants tends to be a bit runnier/looser in texture. There is less rice and it has been boiled for hours to the point each grain practically dissolves and you are left with this velvety and silky rice soup. My version of congee today is much thicker and very much how I grew up eating it. More of a home style version that takes much less time. My Husband’s father grew up in rural China. Congee back then, was a means of stretching out rice for them to feed a family of seven. It was often boiled with sweet potatoe and eaten plain. Recipe Serves 4 people 5 cups of chicken stock (for looser texture add half cup to one cup more stock) 2 cups of cooked rice 1 cup cooked chicken (thigh, breast, drum) shredded 1 century egg ( I did two because I like extra!) 1 tsp chicken bouillon Toppings: green onions, coriander, fried shallots, white pepper, light soy sauce and Chinese doughnuts Method: to a large pot over medium high heat, add in your stock and the cooked rice. Bring to a boil and reduce heat to a simmer, placing the lid half on and cook for 20 minutes or until the congee thickens, stirring intermittently to avoid sticking to the bottom of the pan. If you prefer your congee looser, go ahead and add ½ cup or more of stock to desired consistency and let it warm though. Add in chicken boullion, shredded chicken, chopped century egg and cook for an additional 2-3 minutes to warm the ingredients through. Serve in a large bowl and add all the toppings. Enjoy! Notes: Avoid box chicken stock with herbs and other ingredients. Find one that just has chicken or make it from chicken bones. Use an Asian chicken powder or boullion. Knorr or lee kumkee for example. Western chicken boullion has herbs and vegetables that don’t work as well in this dish. #chickencongeerecipe #centuryegg #chinesehomecooking #easychineserecipe
