INGREDIENTS: 1 large white onion, sliced 4 garlic cloves, minced 1/2 cup sundried tomatoes, sliced 1 tablespoon dried Italian herbs 1 teaspoon chili flakes 1 tablespoon balsamic vinegar 2 tablespoons nutritional yeast 2 (400 gram) cans butterbeans and liquid 1/2 cup veggie broth 2 tablespoons tomato paste 1 cup fresh parsley, chopped Zest & juice of 1 lemon Sourdough bread or pasta, for serving RECIPE: 1. Heat a pan over medium heat and sauté the sliced onion for 10–15 minutes until deeply caramelized. Add a splash of water if needed. 2. Add garlic, sundried tomatoes, Italian herbs, and chili flakes. Stir for another minute. 3. Mix in the balsamic vinegar, tomato paste, and nutritional yeast. Cook for 2 minutes. 4. Pour in the butterbeans with their liquid and the veggie broth. Let simmer for 10 minutes until thickened. 5. Stir in fresh parsley, lemon zest, and lemon juice. Taste and adjust seasoning if needed. 6. Butter beans in the easiest (but most delicious) spicy harissa tomato sauce, topped with lots of dill and eaten with loads of crusty bread. It’s quick enough to make for lunch too! Heat olive oil in a pan and sauté the garlic for a minute before adding the green beans for a couple minutes and then the tomatoes. Pour in the cannellini beans, stock and chopped basil. Soaking beans reduces phytates, and increases nutrient availability… Soaking beans isn’t new. We know the Aztecs soaked their beans. Asian cultures soak them so long they ferment into thick, mushy pastes. Studies show that soaking legumes for a minimum of 12 hours reduces phytates, down to 9% in some types. What am I looking for when I soak my legumes? Chemical change!!! See those bubbles? That’s the release of phosphorus…that’s magic. The time I soak depends on the legume, and the temp in my home (warmer weather = less time). I wait until it “looks” done. Then I rinse them and cook them in fresh water. But it is always a minimum of 12 hours and typically 24 or more. I’ve been known to let theme sit for 3-4 days in colder times, just waiting for the magic to happen. How long do you soak your beans? Phytates are not ALL bad. Yes, they can bind to minerals and reduce the absorption (they can also cause gastric upset when broken down in the gut - see all those beautiful bubbles we release during soaking, way better upstairs than inside the gut), but phytates can also work as antioxidants. Soaking never removes them all, just like branching doesn’t remove all the Oxalates from spinach.
