This golden basmati rice with chickpeas and dill is one of my favorite easy sides for Friday night - warm, fluffy, and full of flavor from turmeric and coriander. Perfect next to chicken or fish!

Recipe:
Ingredients:
5 tablespoons extra virgin olive oil
1 shallot, chopped
3 carrots, shredded
1 can chickpeas, rinsed and drained
1.5 teaspoons salt
1/2 teaspoon black pepper
1 teaspoon turmeric
1 teaspoon ground coriander
2 cups basmati rice, rinsed and drained
A handful of chopped dill
4 cups boiling water
Method:
1. Heat the olive oil in a pan over medium heat. Add the shallot, carrots, and chickpeas.
2. Add salt, pepper, turmeric, and coriander. Stir and cook for about 3 minutes.
3. Add the rice and dill. Mix well until everything is coated and turns a beautiful golden color.
4. Pour in the boiling water, stir, and cook on high heat for 1 minute.
5. Lower the heat, cover, and cook for 20 minutes. Fluff with a fork.
Small tip: If you want extra fluffy rice, turn off the heat and let it sit covered for 10 minutes before fluffing.
