🍗 Creamy Paprika Chicken with Tender Rice (Quick Recipe) ⏱️ Ready in: 30 minutes 🍽️ Serves: 3–4 Ingredients Chicken 500 g boneless chicken (breast or thighs), bite-size 1 tbsp oil + 1 tbsp butter 1 small onion, finely chopped 2 cloves garlic, minced 1½ tsp paprika (smoked if possible) ½ tsp black pepper Salt to taste ½ cup cooking cream (or fresh cream) ¼ cup chicken stock or water Optional: 1 tbsp tomato paste Tender Rice 1 cup basmati rice, washed & soaked 20 min 2 cups water or chicken stock 1 tbsp butter or oil Salt to taste Instructions 1) Rice Bring water/stock to a boil with salt & butter. Add rice, cover, simmer on low 12–15 min until fluffy. Rest 5 min. 2) Creamy Paprika Chicken Heat oil & butter in a pan. Sauté onion until soft. Add garlic, cook 30 sec. Add chicken, salt & pepper; cook until sealed. Stir in paprika (and tomato paste if using). Add stock/water, simmer 5 min. Pour in cream, simmer 5–7 min until thick and creamy. Serve Spoon creamy paprika chicken over tender rice. Garnish with parsley or a pinch of paprika 🌶️ 💡 Tips: For extra richness, add a little cheese at the end. Prefer mild? Use sweet paprika; spicy? Very special chicken curry, rich, bold and full of flavor. This is not your everyday chicken. Lots of oil, butter and fried onions involved, so make it once in a while and enjoy it properly. For 600 gm chicken, add juice of half lemon, ⅓ cup yogurt, 1.5 tbsp ginger garlic paste, ¼ cup melted butter, ½ cup fried onions, 1.5 tsp red chilli powder, 2 tbsp Kashmiri red chilli powder, 1 tsp cumin powder, 1 tsp coriander powder, 1 tsp garam masala, ¼ tsp turmeric, 1 tsp salt, 1 tsp black pepper and 1.5 tsp chicken masala. Mix everything well and let it marinate for 30 minutes. Grind ⅓ cup fried onions, 8 to 10 garlic cloves, 1.5 tsp fennel seeds, 1.5 tbsp Kashmiri red chilli powder into a coarse paste. Heat an iron kadai, add the marinated chicken and roast on medium heat for 15 to 20 minutes, stirring occasionally. Once it thickens and starts roasting, add the crushed fried onion garlic masala, mix well and cook until the oil separates and the chicken is fully done. Finish with curry leaves and chopped coriander. This is that proper weekend indulgence curry. Thick, spicy and unapologetically rich. Ingredients • 3 lbs chuck roast • 2 tsp salt • 1/2 tsp pepper • 1 tsp paprika • 1 tsp garlic powder • 1/2 tsp onion powder • 2 tbs oil • 3 tomatoes, quartered • 1 onion, quartered • 5 garlic cloves • 5 guajillo peppers • 5 arbol chilies • 2 ancho peppers • 3 cups beef broth • 4 bay leaves • 1 1/2 tsp salt • 2 tbs butter For serving • Bread • Cheese • Chopped onion • Cilantro • Lime Instructions Season beef with salt, pepper, paprika, garlic powder, and onion powder, then sear in oil until browned on all sides. Transfer to a slow cooker or pressure cooker. In the same pan, cook tomatoes, onion, garlic, and dried peppers for a few minutes, then add broth and simmer until softened. Blend until smooth and strain over the beef. Add bay leaves, salt, and butter, then cook until the beef is fall apart tender. Shred the meat, then build sandwiches with cheese, beef, onion, and cilantro, and toast until crispy. Maple Cinnamon English Muffins Ingredients • 1/2 cup warm water • 1 packet yeast • 1/4 cup maple syrup • 3/4 cup buttermilk • 3 cups bread flour • 1/4 tsp salt • 1/2 tsp cinnamon • Cornmeal, for dusting • 1 tbs oil (for cooking) Instructions Add everything except the cornmeal to a bowl and mix until a dough forms. Knead for 5 minutes, then cover and let rise in a warm spot for 1 hour. Sprinkle cornmeal on the counter and turn the dough out onto it (this becomes the bottom). Pat to about 1/2 inch thick and cut into circles using a cup, rerolling scraps as needed (you’ll get about 10). Preheat a skillet with the oil over medium and cook muffins on both sides until deep golden brown, then transfer to a baking sheet and bake at 350 for 10 minutes. Homefries Ingredients • 6 large potatoes, chopped • 4 tbs oil, divided • 1 tbs cornstarch • 2 tsp paprika • 2 tsp garlic powder • 2 tsp salt • 1/4 tsp pepper • 1/4 tsp onion powder Instructions Boil the potatoes for 6 minutes, then drain and let dry on a paper towel. Toss with 2 tbs oil, cornstarch, and seasonings. Heat the remaining oil in a skillet over medium, add the potatoes, and cook until crispy on the outside and fully cooked in the center. It was a quiet reminder that good food doesn’t have to be complicated, and that a lot of what we buy at the supermarket has been made far more complex than it needs to be. Recipes for these are all on my page 🫶🏻 Cooking from scratch was one of my favourite hobbies in 2025, and I can’t wait to see what I learn to make next in 2026 (tomorrow!?!). Chicken Cutlets Ingredients • 1.5 lbs chicken • 4 eggs • 1 cup flour • 2.5 cups bread crumbs • 1 tsp salt • 1 tsp garlic powder • 1/2 tsp pepper • 1 tbs dried parsley • 1/3 cup olive oil Instructions Set up three bowls, one with flour, one with eggs, and one with bread crumbs. Whisk the eggs. Add the salt, garlic powder, pepper, and dried parsley to the bread crumbs and mix well. Slice the chicken into cutlets and flatten as evenly as possible. Dredge each piece in flour, then dip into the egg, and finally coat in the seasoned bread crumbs. Heat the olive oil in a pan over medium heat. Cook the chicken cutlets in batches until golden brown and cooked through, flipping once. Transfer to a paper towel lined plate, sprinkle with salt and set aside. Quick Pasta Sauce Ingredients • 1/2 lb pasta • 12 oz cherry tomatoes • 1/4 cup olive oil, divided • 1 shallot, finely chopped • 4 cloves garlic, chopped • 2 oz tomato paste • 1/2 cup heavy cream • Salt • Pepper • Fresh basil Instructions Cook pasta according to package instructions. In a pan, heat 2 tbs olive oil over medium heat. Add the cherry tomatoes and a pinch of salt. Cook until the tomatoes soften and begin to break. Remove from heat, blend until smooth, and set aside. In a clean pan, heat the remaining olive oil over medium heat. Add the shallot and cook until fragrant, about 2 minutes. Add the garlic and cook for 30 seconds. Stir in the tomato paste and cook for about 2 minutes to deepen the flavor. Add the blended tomatoes and bring to a simmer. Stir in the heavy cream and season with salt and pepper.
