FUDGY PALEO BROOKIES 🍪 Ingredients ⬇️ 1️⃣The chocolate chip cookie layer: * 1 1/2 cups fine almond flour * 1 1/2 cups tapioca starch * 6 tbsp coconut flour * 1/2 tsp baking soda * 1/2 tsp sea salt * 1 cup coconut sugar * 1 1/2 tsp blackstrap molasses * 1 egg + 1 egg yolk * 1 tbsp of vanilla extract * 3/4 cup of unsalted non-dairy butter or grass fed butter (I’ve used Miyoko’s and Earth Balance Unsalted Sticks) * 1 cup of chocolate chunks or chips, I use Hu Kitchen 2️⃣The brownies layer: * 1 cup natural runny almond butter (ingredients just almonds/salt) * 2 large eggs, room temp * 1 tsp vanilla extract * 1/2 cup coconut sugar * 1/4 cup of non-dairy milk * 1 tbsp extra virgin olive oil * 1/3 cup cacao powder or rich cocoa powder * 1/2 tsp baking soda * 1/4 tsp sea salt INSTRUCTIONS⬇️ 🍫MAKE THE CHOCOLATE CHIP COOKIE DOUGH 1. In a medium bowl, mix together the coconut sugar and the molasses. Crumble together, it will start to resemble a traditional soft brown sugar texture. Add in melted butter, egg and egg yolk and vanilla extract and mix until combined. 2. In another bowl, combine your flours/starch, sea salt, baking soda until well incorporated. 3. Combine the dry into the wet ingredients and mix until a smooth dough forms, the coconut sugar granules should not be visible. The dough may be a little sticky and not totally scoopable yet. 4. Add in the chocolate chips, putting few aside to add on top later. Cover the bowl with plastic and place in the fridge for at least 30-45 minutes to chill. Can be up to overnight. The dough will become solid and scoopable once chilled. 🍪MAKE THE BROOKIES 1. Once the cookie dough has chilled, preheat the oven to 350F and line square 8” or 9” baking pan with parchment paper, or spray well with cooking spray. 2. In a large mixing bowl, whisk together almond butter, eggs, vanilla, coconut sugar, milk and olive oil until smooth. Then add in the cacao power, baking soda and salt and mix well until a batter forms. 3 INGREDIENT OREO TRUFFLES 🪩 (gluten free, vegan, paleo friendly option) Need a quick but impressive dessert for your NYE get together (or night in 🥳)? These classic Oreo truffles are made GF and only take 15 minutes to make, you only need 3 ingredients. Plus gold sprinkles! Makes 12 truffles: ▪️15 chocolate sandwich cookies (I use gluten free Oreos or Simple Mills cocoa cashew creme cookies for no refined sugar and paleo friendly) ▪️4 oz dairy-free vegan cream cheese (I use Miyoko’s @miyokoscreamery) ▪️1/2 cup dark chocolate chips or/and white dairy free chocolate chips, melted (I use Hu Kitchen and Enjoy Life or Lily’s for the white) ▪️Optional 1 tsp coconut oil melted with the chocolate for a thinner chocolate shell Make: 1. Line a flat plate or baking sheet with parchment paper or wax paper. 2. Crush the sandwich cookies in food processor until they become fine crumbs 3. In a medium bowl, mix the crumbs with the vegan cream cheese until fully mixed into a dough 4. Scoop out 1 Tbsp of mixture and roll into a ball. Repeat with remaining Oreo mixture. 5. Option to freeze the Oreo balls for 10-15 minutes until chilled for easier dipping 5. Melt chocolate in a small shallow bowl with coconut oil (optional but preferred). Using a fork, dip and roll each oreo ball into the chocolate and shake off excess. Place onto the parchment or wax paper. Top with extra Oreo crumbs and gold sprinkles. 6. Place in fridge until chocolate sets, 5-10 minutes. 7. Store in fridge or freezer until ready to enjoy. PALEO LAVA CAKES 😍 i am sooooo excited to share these before valentine’s day, i mean look at that gooey center! 💞 these are completely grain free, made with healthier sweeteners, but have that same rich lava cake flavor. the perfect easy treat to make if you’re looking for something sweet 🫶🏻 Lava Cake Recipe: * 1/3 cup melted coconut oil * 2/3 cup chocolate chips (Hu Kitchen for paleo) * 2 eggs * 1 egg yolk * 1/3 cup coconut sugar * 1 tsp vanilla extract * 1/4 cup almond flour * 1/2 tsp salt * toppings: powdered sugar, vanilla ice cream, and raspberries. 1. Preheat oven to 425F and grease 4 8oz ramekins well. I also placed a small round piece of parchment paper in the bottom of each to ensure easy release. can also sprinkle with cocoa powder like in the video. i did both! 2. In a small bowl, add chocolate chips and coconut oil. Melt in 30 seconds increments until fully melted. 3. Pour into larger bowl and whisk in two eggs and one egg yolk. Then whisk in coconut sugar and vanilla. 4. Stir in almond flour and salt. 5. Divide evenly into 4 ramekins. 6. Bake for 12 minutes or until top is giggly but not wet looking. Let rest one minute. 7. Use a knife to run around the edge of the ramekin. Add a small plate on top of the ramekin and using oven mitts or a towel, flip cake upside down. Let rest 30 seconds before removing the ramekin. 8. Filling: 1/2 cup pistachios 1/2 cup coconut cream 1/2 scoop plant protein (you can omit and add 1 Tbsp more maple) 1/4 cup maple (to taste) Vanilla bean or extract Blend till very smooth and creamy. Pour into molds or a loaf pan and freeze. Cut into desired slices. Melt dark chocolate (I used Hu kitchen) with 1 Tbsp coconut oil and dunk each bar in. Love how quick, easy and yummy it is! 🥐🍌🍫 Ingredients: Crescent roll, 4 triangles 2 bananas 1 Milk Chocolate Bar (I used Hu Kitchen) 1 egg, whisked Directions: Preheat oven to 350F. Cut each chocolate square in half. Peel the banana, gently scoop out the center using a spoon and stuff it with chocolate chunks. Unwrap the crescent dough and roll it out until thin. ( Check out video for reference). Wrap the dough around the banana. Brush whisked egg over crescent roll and bake for 16-18 minutes or until golden brown and cooked through. What I eat in a day for Healthy Hormone Balance!! My hormone balance journey didn’t stop once I corrected my issues- it’s become my lifestyle!! I talked a lot in my last hormone video about the things I did to get myself back in balance, and this little Eat In A Day video incorporates a lot of my hormone balancing principles. Protein with each meal has been GAMECHANGING. People will tell you 20g of protein with each meal- I don’t really count, I just make sure it’s incorporated. This is a chocolate almond protein smoothie! I also start each day with my probiotic seed, and inositol, which has been super helpful in keeping my testosterone low. If you remember we got a whole house water filtration system from Aquasana before the holidays, and it has been great for everything from purifying our drinking water to shower and sink water etc. I’m on a HUGE cobb salad kick right now- honestly just because I love bacon and it’s loaded with protein. I’ve been cutting back on sugar HUGE with our wedding coming up, and cutting sugar is imperative for hormone balance, but I refuse to cut it completely. I’ve been focusing on having clean QUALITY chocolate like HU Kitchen or chocolate Vitamins from Sourse. If you’re looking for a new recipe try these loaded egg cups. Line a baking sheet with parchment paper and set aside. 2. Gently peel the tangerines and separate them into individual segments. Pat dry to remove excess moisture. 3. Melt the chocolate using a double boiler or microwave in 20–30 second intervals, stirring until smooth. 4. Dip each tangerine segment halfway into the melted chocolate, letting any excess drip off. 5. Place dipped segments on the prepared baking sheet. Sprinkle with flaky sea salt or toppings if using. 6.
