Masala Dosa Appe – A Crispy & Flavorful Breakfast Twist! 🌞🧄🥔 Turn your regular dosa batter into a fun, bite-sized breakfast treat! These Masala Dosa Appes are filled with spiced aloo masala, crispy on the outside and soft inside – perfect for kids and adults alike. Serve them with chutney or sambar and enjoy a South Indian classic in a whole new way! ✨ 📝 Ingredients For Aloo Masala Filling: 3 medium-sized potatoes (boiled & mashed) 2 tbsp sunflower oil ½ tsp hing (asafoetida) 1 tsp mustard seeds (rai) 1 tbsp ginger (finely chopped) 8–10 curry leaves 1 medium onion (finely chopped) Salt to taste ½ tsp red chilli powder 1 tsp coriander powder 1 tsp sambar masala Fresh coriander leaves (chopped, for garnish) For Appe: Ready-made Dosa batter (I have used MTR) Water (to adjust consistency) Oil (for greasing appe pan) 👩‍🍳 Step-by-Step Recipe 1. Prepare the Aloo Masala: Heat sunflower oil in a pan. Add hing and mustard seeds. Let them splutter. Add chopped ginger, curry leaves, and sauté for a few seconds. Add finely chopped onion and sauté till translucent. Mix in boiled, mashed potatoes. Add salt, red chilli powder, coriander powder, and sambar masala. Mix well. Cook for a couple of minutes, then garnish with fresh coriander leaves. Set aside. 2. Prepare the Dosa Batter: Take the ready-made dosa batter in a bowl. Add a little water to adjust the consistency (should be pourable but not too runny). Mix well and set aside. 3. Cook the Masala Dosa Appe: Heat the appe (paniyaram) pan on low flame and grease each cavity with a few drops of oil. Pour a spoonful of dosa batter into each cavity – just enough to cover the base. Add a spoonful of the prepared aloo masala in the center of each cavity. Cover the filling with a little more dosa batter. Cover the pan with a lid and cook on low flame for about 7–8 minutes. Flip each appe gently and cook the other side for another 6–7 minutes until golden brown. 🍽️ Serve With: Coconut chutney, tomato chutney, or hot sambar! Weight Loss Series Ep 41 High-Protein Matar Appe 💪 Nutririon (5 appes): Protein: ~10 g Calories: ~160 kcal These high-protein matar appe are a healthy, no-fry snack perfect for weight loss. 📋 Ingredients: * Moong dal (soaked 4–5 hours) – 1 cup * ⁠Water – 2 tbsp * ⁠Green peas / matar – ½ cup * ⁠Ginger – 1 inch * ⁠Green chillies – 2–3 * ⁠Fresh coriander – a handful * ⁠Salt – ½ tsp or to taste * ⁠Baking soda – ½ tsp * ⁠Oil (for greasing) – 2 tbsp 👩‍🍳 Directions: 1. Grind the soaked moong dal into a smooth paste and transfer it to a mixing bowl. 2. Grind green peas, green chillies, ginger, and fresh coriander into a coarse paste and add it to the same bowl. 3. Add salt and mix well. 4. Add baking soda and gently mix. 5. Pour the batter into a greased appe/paniyaram mould. Cover and cook on low flame for 2 minutes. 6. Ingredients for Moong Appe - 🔹Moong/Sprouts - 3/4th cup (soaked and coarsely grinded) 🔹Suji/Rawa - 3/4th cup 🔹Curd - 1/2 cup 🔹Water - as needed 🔹Veggies - any of your choice (I have used carrots, onion and fresh coriander) 🔹Spice - salt, chilli powder and mixed herbs (pizza seasoning) 🔹Fruit Salt - 1/4th tsp (optional) 🔹Vegetable oil - to cook appes (2 to 3 tbsp) 🔹Mustard seeds - 1 tsp. Instructions - Mix all the ingredients except oil, mustard seeds and fruit sAlt and let it rest for 5 mins. Once done, add fruit salt (ENO) and mix well. Now in an appe pan, heat some oil and add mustard seeds. Once it starts to splutter, add prepared batter and cook it from both sides. Serve it with green chutney or tomato sauce. For fruit salad - Add boiled sweet corn with some pomegranate. Method: 1. soak 1 cup green mung dal for 4-5 hours 2. Blend together the soaked dal, 1 green chilli, 1 tsp ginger and salt. Set aside 3. In a pan, add oil, 1 diced onion, 1 diced tomato, 1 diced green chilli and sauté together 4. Add 1 tsp butter, 1 tbsp red chili powder, 1 tbsp podi masala, 1/4 tsp turmeric powder and salt 5. Mix well and garnish with coriander 6. Brush an appe pan with oil and add 1/2 tbsp of the batter in each cavity 7. Add in the tomato filling and close again with 1/2 tbsp more of the batter 8.
