PIZZA IN TEGLIA!! 🍕 In molti mi avete chiesto il procedimento completo per quanto riguarda l’impasto della pizza. Io per questioni di tempo ho dovuto realizzare l’impasto in poche ore e quindi ho usato una quantità di lievito pari al 2%. Se volete realizzarlo in giornata vi consiglio di usare l’ 1%. Mentre se volete farlo maturare in frigo, usatene tra lo 0,2% - 0,5%. Ingredienti per due pizze (660 gr l’una): 750 gr di farina (io ho usato 525 gr di tipo 0 e 225 gr di tipo 1) 540 gr di acqua (72%) 15 gr di lievito di birra fresco (2%) 19 gr di sale (2,5%) 22 gr di olio (3%) Procedimento: Sbriciolate il lievito nella farina e versate quasi tutta l’acqua. Impastate. Aggiungete il sale, la restante parte di acqua e continuate ad impastare. Infine aggiungete l’olio. Fate riposare per 15 minuti e date un giro di pieghe. Se l’impasto risulta liscio, siete pronti per la lievitazione, altrimenti fate una pausa di 15 minuti e date un altro giro di pieghe. Fate lievitare fino al raddoppio (nel mio caso circa un’ora e mezza). Dividete in due panetti da circa 660 gr l’uno. Fate lievitare fino al raddoppio (circa un’ora). Stendete sulla semola, mettete in teglia oliata e infornate (forno statico alla massima potenza) con un velo di pomodoro (in modo tale da permettere un migliore sviluppo) alla base del forno per circa 8 minuti, finite di condire e infornate nella parte centrale per altri 6 minuti circa. Tomato Basil Soup @jacquelinethoma ⬇️ Recipe ⬇️ Roasted Tomato Basil Soup: 6 larger vine tomatoes, quartered 2 cups grape tomatoes 1 large red onion, quartered 1 red bell pepper, chunked 2 bulbs garlic 2 tbsp olive oil 2 tbsp tomato paste 1 tsp oregano 1 tsp thyme 3 tbsp fresh basil (more or less depending on desired potency) 1 cup vegetable broth 1 cup heavy cream 1 tbsp sugar 1/4 cup parmesan cheese salt to taste pepper to taste On a baking sheet, add tomatoes, onion, red pepper and bulbs of garlic. Drizzle with olive oil, salt, pepper, oregano and thyme (or of course my back 9 seasonings) Roast at 400F for 35-40 minutes. Remove from oven and place in blender (don’t forget all the juices on the baking sheet). If you have an immersion blender that also works. Squeeze garlic out of bulbs. Add basil and blend to your desired consistency. Pour into a large pot on medium heat. Add vegetable broth, heavy cream, tomato paste, sugar, parmesan cheese. Stir and reduce to simmer once bubbling. Simmer for 15 minutes. Serve. #cooking #recipe #food #dinner #dinnerideas #husbandandwife
