Sharing one of my favorite oldie but goodie recipes from my Healthy to the Core ebook (it’s also in Passover Made Healthy). Make sure to save it💚 They’re elevated, slice pretty, and a delicious way to add gut healthy vegetables to your chicken dish. My step by step prep and cooking process is posted to my subscriber feed, if you’d like that✨ Recipe is below: 4-6 dark or white meat chicken capons (I used dark meat) I onion, chopped 1- 8 oz box sliced mushrooms 3 cloves garlic. chopped 2-3 handfuls fresh spinach (optional, love it, just didn’t have any here) Zest and juice from 1/2-1 lemon 1/4-1/3 c dry white wine, optional (sub broth) Himalayan salt/pepper to taste Heat olive oil in a medium sauté pan. Cook onions 1–2 minutes until softened. Add mushrooms and garlic, season with salt and pepper, and sauté until liquid evaporates and mushrooms brown (about 7–8 minutes). Add spinach for the last 1–2 minutes until wilted (if using). Remove from heat and let cool slightly. Meanwhile, place capons in a baking dish, open side up. Fill with the mushroom mixture, roll closed, and secure with toothpicks or twine. Squeeze lemon juice over the top, add zest, white wine, salt, and pepper. Cover tightly and bake at 375°F for about 45 minutes. Increase heat to 400–425°F and bake another 20–30 minutes, until cooked through and browned. Optional add-ins: cooked brown rice or quinoa. My new favorite ✨ This stuffed capon recipe is sure to be a hit for any crowd! #recipe Pastrami Stuffed Capons Ingredients: 8 chicken capons 4 cups mashed potatoes ( 1 10oz can ) 1 package sautéed onion cubes (optional) 2 packs wide pastrami deli Coating crumbs Apricot Jam Mayo Spicy duck sauce Directions: Pre heat oven to 350 Prepare mashed potatoes according to package. ( I just added boiling water to the flakes) Add in the onion cubes (optional) Open chicken capons flat Lay a slice of pastrami Add about 1/4 cup mashed potatoes Roll the pastrami and mashed potatoes Place in center of capon And fold capon over hiding the pastrami and mashed potatoes. Continue till all capons are full. There are 2 options for the sauce 1. Mix 1 cup apricot jam with 1/2 cup mayo 2. 1.5 cups (aprox) Spicy duck sauce Coat chicken with sauce , cover with crumbs. Bake covered for 1 hour and uncovered for 30 mins. I served this recipe on first days pesach and it was a HIT! Save this recipe , because you’re going to want to make it on repeat !

Seared Chicken with Caramelized Onion Sauce Ingredients • Chicken capons (boneless chicken thighs) • Salt and Pepper • Minced onion or onion soup mix • Minced fresh or dried garlic • Extra-virgin olive oil • 3 large sweet onions, thinly sliced • ½ cup beer or white wine (optional) • Honey or silan (date syrup), for drizzling Instructions 1. Season the Chicken Season the chicken generously with salt, pepper, onion and garlic. Mix well with extra-virgin olive oil 2. Sear the Chicken Heat extra-virgin olive oil in a large sauté pan over medium-high heat. Place the chicken skin-side down first and sear until golden and crisp on both sides. 3. Caramelize the Onions In a large deep skillet (which you have a cover for) Add the sliced sweet onions and cook over medium-low heat, stirring occasionally, until they become soft, golden, and jammy (about 20–30 minutes). 4. Combine & Simmer Add the seared chicken to the pan, nestling it into the caramelized onions. If desired, add ½ cup beer or white wine. The chicken and onions do release their own liquid. Drizzle lightly with honey or silan. 5. Cook Cover and simmer on low heat for about 40 minutes, or until the chicken is tender and fully cooked through. #chickenrecipes #chicken #recipes #kosherprivatechef #privatechef

A festive holiday recipe even Miami Boys Chior would approve of! Couscous Stuffed Capons for a Crowd Serves 12 2 cups water 2 tsp olive oil Salt and pepper, to taste 1 tbsp @liebersfoods consommé powder 2 cups instant couscous 3 cloves minced garlic 1/2 cup parsley, chopped 3.5oz. Roasted chestnuts, chopped 4oz. Dried figs, thinly sliced (or any dried fruit) 1/3 cup pine nuts 1/4 cup grapeseed oil Juice of 1 large orange 1 tbsp @liebersfoods honey Dash of cinnamon 12 capons (boneless chicken thighs, skin-on) Paprika, salt and pepepper, to taste 1 jar @liebersfoods Gourmet Sweet Chili Sauce 1 cup @liebersfoods seasoned Panko crumbs In a small Saucepan bring 2 cups of water oil salt and pepper to a boil. Add a consommé powder and whisk it in to incorporate. Add the couscous, give it a stir, turn off the heat and cover to steam for 10 minutes. Fluff the couscous with a fork and transfer it to a large mixing bowl. Add the garlic, parsley, chestnuts, figs, and pine nuts. In a small bowl combine the oil, orange juice, cinnamon and honey and mix into the couscous mixture, stirring to combine. Preheat oven to 375°. Working with one capon at a time, add the stuffing to one side of the chicken and fold it over, Wrapping the chicken around the filling. Transfer the rolls to a parchment-lined 9 x 13 pan so that they are tightly packed, 6 per pans. Sprinkle the stuffed capons with paprika salt and pepper and then brush generously with chili sauce. Cover each pan with two layers of foil and bake for one hour. Uncover the chicken and sprinkle with Panko crumbs. Return to the oven at 425° for 15 to 20 minutes until the chicken is lightly browned and Panko crumbs are crispy. I have a thing for stuffed items which is especially convenient since it is a popular custom to serve stuffed foods on the holiday of Succos next week. The custom expresses the abundance of God’s bounty especially at harvest time and our appreciation for everything in our lives. I have adapted my recipe to using capons here for easy serving (the original recipe in my book, The Giving Table, uses 2 butterflied turkey breast roasts (with skin) as an elegant roulade. Bonus recipe for all your holiday cooking! • 12 dark meat bonkess capons (skin on) • 4 tablespoons olive oil, divided • 4-ounces thinly sliced pastrami or beef fry • 2 cups chopped onion (1 large or 2 small onions) • 1 garlic clove, minced (about 1 teaspoon) • 2 cups peeled, chopped apples (1 very large or 2 small) • 1 teaspoon kosher salt, plus more to taste • ½ teaspoon freshly ground black pepper, plus more to taste • 1 (5.2-ounce) package whole peeled and roasted chestnuts, chopped (optional) • 3 tablespoons apple liquor (or white wine) • 4 slices day-old bread (hard crusts removed), cubed (about 2½ cups) • 1 tablespoon chopped fresh sage leaves (plus whole sage leaves for garnish) Black pepper, paprika for sprinkling Directions: 1. Stuffing: Place pastrami or beef fry in a large skillet (cold); place over medium-high heat. As it heats, fat will begin to render; cook until crisped and shriveled, about 5-6 minutes. Using a slotted spatula, drain and transfer to a plate (chop when cool). 2. Add 3 tablespoons olive oil to the pan. When oil is heated, add onion and garlic; sauté for about 3-4 minutes. Add apples, 1 teaspoon salt and ½ teaspoon black pepper. Sauté until apples begin to soften, about 3-4 minutes. Add chestnuts; sauté another 2 minutes. Add apple liquor; stir to blend until liquid is mostly absorbed, about 1-2 minutes. Remove from heat; add bread, chopped sage and reserved chopped pastrami/beef fry, tossing together until bread is moistened. Set aside stuffing to cool slightly (DO AHEAD: stuffing can be made 1 day ahead). ‘Con’t in comments…
