Kofta Challow, juicy Afghan meatballs simmered in a flavorful tomato sauce and poured over a fluffy bed of basmati rice is exactly what you need to keep your energy going through the month! Ingredients: Meatballs (Kofta) 1 lb Ground Beef 1/2 Onion 1 cup Cilantro 1 tbsp Garlic (minced) 1 tbsp Oil 1 Egg Coriander Cinnamon Cumin Salt (to taste) Tomato Sauce: 1/2 Onion chopped) 1 cup tomato sauce 2 tbsp Tomato Paste 1 tbsp Garlic (minced) Turmeric Coriander Salt & Pepper (to taste) 2 cups Water Recipe: 1. Begin by placing an onion, cilantro, garlic cloves, and oil into a food processor, pulsing until finely chopped, and then pour this mixture over ground beef. 2. Then add an egg, cinnamon, salt, coriander and cumin, and thoroughly mix together. 3. Next, shape the mixture into small balls and gently pressing them into patties.  Set them aside. 4. Start your tomato sauce by adding diced onion, tomato sauce, tomato paste, minced garlic, water, turmeric, and coriander to a large pan. Stir everything together. 5. Allow the tomato sauce to simmer, and then add the meatballs (kofta) to the sauce. Let it all cook for about 30 minutes until the sauce thickens and your Kofta is cooked. Challow Ingredients: 4 cups Basmati Rice (extra long grain) 1/4 cup Oil 1/2 cup Water Salt Recipe: 1. Soak rice in warm water for an hour, then rinse until water runs clear. 2. In a pot, boil water and add drained rice in. Cook 5-7 minutes, before draining completely. 3. Add oil, water, and salt to rice, carefully stir together. 4. Create holes in the rice, place a paper towel on top and cover. Steam until rice is fully cooked. #afghanrecipes #challow #kofta #afghanifood #easyrecipes

afghan KOFTA• KOFTA CHALLOW • or qorma kofta (afghan meatballs) welcome to BACK TO THE BASICS when it comes to STAPLE Afghan dishes episode 02. Making Afghan food doesn’t need to be complicated and I’m here to show you how! This meatball dish doesn’t get easier than this. A handful of spices is all you need. You can add lentils, peas, potatoes or keep it simple and it’s delicious either way. FOR THE SHORTCUTS/TIPS -I’ve made my rice in the rice cooker. By the time the meatballs were ready so was the rice. -I like to puree my onions. This way you don’t see any bits of translucent onions in the dish (this is just preference) -For the spice blend if you have pallow masala- that’s what i love to use. If not, replace with ground cumin + a little more black pepper. INSTRUCTIONS: -puree 2 onions in a little oil -to a bowl add 2lbs ground beef. Add half the puréed onions along with 1 tbsp pallow masala (or use 1.5 tsp ground cumin), 2 tsp ground coriander, 1.5 tsp salt, 1/2 tsp black pepper, 1/4 tsp- 1/2 tsp cayenne pepper (optional). Mix well. -begin to form your meatballs -to pan/pot add oil and the other half of the puréed onions. Once sautéed add in: 1 tbsp ground coriander, 1 tsp salt, 1 tsp ground cumin, 1/4 tsp cayenne pepper, 1/2 tsp black pepper, and 1/2 tsp turmeric. Mix well. -add 4 small chopped Campari tomatoes ( optional but i do this when i have extra tomatoes on hand) -add 1 tsp garlic paste + 1/4 cup tomato paste -let this sear for a few minutes and the tomatoes to break down. -add 1.5 cups of water and place meatballs in -gently give the pot a stir by just holding the handle and not with a utensil so nothing breaks. Place a lid on. Medium heat and let this cook away. Depending on the thickness of the meatball this could take between 20-25 minutes. -the liquid should reduce and thicken. Keep lid open for last 5-10 minutes and let it simmer on low heat and continue to reduce. SABZI CHALLOW• spinach + white rice. welcome to BACK TO THE BASICS when it comes to STAPLE Afghan dishes episode 01. This is one that’s on constant rotation in our home. I make a little larger portion since my kids can eat this for days. For the meat i love using ribeye for this one- it’s so tender and falls right apart. FOR THE SHORTCUTS: -pull out the electric pressure cooker and get your meat going for 20 minutes. -wash and rinse your rice and get that going in a rice cooker. -while those two major things are going on its own- start the spinach on the side. -when the meat is done add it to the spinach with some of its liquid and let it simmer until combined. -DONE! Serve family style with maast (plain yogurt), salata (chopped salad) turshi (pickled veggies)- whatever you like! 🖤 main INGREDIENTS: 2lbs cubed ribeye, frozen CHOPPED spinach (two 1lb bags. Total 2lbs), 2 chopped green onions, 1 bunch cilantro chopped, 1 tbsp dried fenugreek 🖤 more below. INSTRUCTIONS: •turn pressure cooker onto sauté mode. add 1/3 cup oil and 1 puréed onion and sauté for 2-3 minutes. Add 2 lbs cubed ribeye (about 25 pieces). To it add 1 tsp minced garlic and all of your •SPICES: 1 tbsp bouillon and ground coriander- 1.5 tsp salt, 1 tsp onion powder, garlic powder, turmeric, ground cumin- 1/4 tsp cayenne pepper OR 1/2 tsp black pepper. Sauté until the meat has slightly browned. Add 1.5 cups water or enough until the meat is JUST slightly covered. •change function to pressure cook and set time for 20 minutes •on the stove top add CHOPPED frozen spinach to a hot pan/pot (i used 2 one lb bags so 2lbs total). 2 chopped green onions. 1 bunch of chopped cilantro. And 1 tbsp dried fenugreek. + 1/3 cup oil. •on low heat let this all come together and keep it on low until the meat is done. When meat is done transfer it to the pot and 3-3.5 cups of its liquid. •OPTIONAL: i add 1/2- 1 juice of a lemon. •Raise heat to medium and let this simmer until the liquid has reduced and the oil has “risen” to the top. Qeema challow 😍🤤خورشت قیمه با چلو مواد لازم خورشت : نیم گیلاس روغن ۲ عدد پیاز ۲ پوند گوشت گوساله ۱ قاشق غ سیر تازه ۱ قاشق غ زنجبیل تازه ۳ عدد بادنجان رومی رنده شده ۲ قاشق غ رب ۱ دانه مرچ تازه (دلخواه) ۱ قاشق غ پاپریکا ۱ قاشق چ زردچوبه نمک به قدر ضرورت آب جوش به قدر ضرورت ۱ گیلاس دال نخود (لپه ) جوش داده مواد لازم چلو : ۳ گیلاس برنج آب به قدر ضرورت ۲ قاشق غ نمک ۱ قاشق غ زیره ۳ دانه طعم مرغ نیم گیلاس روغن طرز تهیه خورشت : داخل دیگ بخار روغن و پیاز را اظافه کرده تفت دهید بعدا گوشت ، سیر و زنجبیل را اظافه کرده خوب سرخ کنید تا خام بویی گوشت گرفته بشه بعدا بادنجان رومی ،رب و ادویه هارا اظافه کرده سرخ کنید تا سر روغن بیاید . سپس آب جوش را اظافه کرده ۴۵ دقیقه بخار دهید تا گوشت نرم شود . بعد ازینکه گوشت نرم شد لپه جوش داده را اظافه کرده بگذارید قورمه سر روغن بیایه . خورشت ما آماده است بریم که برنج را آماده کنیم 😀 داخل دیگ آب را اظافه کرده بگذارید بجوش بیاید سپس نمک و برنج از قبل تر شده را اظافه کرده بگذارید تا برنج ۹۰ فیصد پخته شود . بعدازینکه برنج پخته شد صاف کنید طعم مرغ را با کمی آب جوش حل کرده روی برنج بریزید . زیره را بالای برنج اظافه کرده پنج دقیقه بالای حرارت متوسط بگذارید . بعداز پنج دقیقه روغن را داغ کرده بالای برنج اظافه کنید و برای ۱۵ دقیقه به حرارت کم دم کنید . حتما آماده کنید که خیلی خوشمزه میایه . Lawand Challow is a delightful creamery chicken stew, skillfully prepared with qoroot or chaka, turmeric, garlic, and an array of spices. This stew can also be made with other proteins such as duck, quail, or fish, and pairs well with Challow. Furthermore, adding mushroom brings out the best flavors in the dish. Recipe: 3 large chopped onion 3 pound chicken cut in med pieces 1 spoon coriander powder 1 spoon fresh minced garlic 1 teaspoon turmeric powder Salt and pepper to taste 1 cup chopped fresh cilantro 1 1/2 cup chaka or qoroot Fresh peppers Oil for cooking 1 1/2 pound fresh mushroom cut in two pieces (optional) ~~~~~~~~~~~ Start the cooking process by sautéing onions in 3-4oz of oil in a large pot until they are lightly browned and softened. Proceed with adding the chicken, salt, and garlic, and cook over medium-high heat for about 5-7 minutes, ensuring constant stirring. Next, incorporate the coriander powder and black pepper into the mixture, stirring well. Add 1 cup of water and let it cook until the chicken is cooked halfway and the liquid has reduced significantly. Then, add turmeric and mushroom, covering the pot and reducing the heat to low. Let it cook for another 10 minutes, or until the water is absorbed. Finally, add fresh pepper, chili flakes, and cilantro, and continue to cook until the chicken is tender and the sauce has thickened into a creamy and oily texture. Served w/ challow and a side of afghani Salata. .
