LIThick & Chewy Fruity Pebbles cookies

Fruity pebbles have always been one of my faves so of course I had to add some to a cookie. The secret to thick and chewy cookies is using cake flour & cornstarch, this keeps them soft & chewy. I’ll post my recipe below, you can substitute a different flour and your choice of sweetener to make these cookies a little more healthy. Here’s my recipe:
1 c flour
1 c cake flour (if you don’t have you can just use regular flour)
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp cornstarch
1/2 tsp salt
1 egg
1 egg yolk
1/2 c butter
1/2 c granulated sweetener
1/4 c brown sweetener
1 tsp vanilla extract
1/2 c white chocolate chips
1/2 c fruity pebbles cereal + more for dipping the tops
Beat butter until smooth, then add sweeteners. Mix in eggs and vanilla until combined. In a separate bowl, combine fry ingredients and mix. Gradually add dry ingredients to the wet and mix until just combined. Stir in white chocolate chips and cereal. Preheat oven to 400 and line a baking sheet with parchment paper. This recipe will make 8 large cookies or you can make 12 smaller cookies. Roll dough into balls and press the top of each ball into sone extra fruity pebbles cereal. Bake for 10-12 minutes until the edges are just set. Remove from oven and let cool. Drizzle with icing. I used the fruity pebbles flavored Duncan Hines frosting, but you can use any frosting or make your own by mixing up sone powdered sweetener, heavy cream, and vanilla extract.

Ingredients:
4 tablespoon Unsalted butter (melted)
6-7 Cups Fruity Pebbles
1 Bag - Large marshmallows
Instructions:
1. On the stove in a pan melt the butter. Make sure your pan is big enough to fit the fruity pebbles.
2. Add your marshmallows and mix until they're fully melted. Take the pan off the stove and add your fruity pebbles 1 cup at a time. Mix this together.
3. I used a square baking pan lined with parchment paper and added the fruity pebble Rice Krispie treats. Flatten with a plastic spatula.
4. Pop the Fruity Pebble Rice Krispie Treats in the fridge for one hour. Cut into 9 individual bars and enjoy.
