Si vous avez des questions, dites-le-moi en commentaire. Je sais que le pochage et le lissage ne sont pas parfaits. Si vous avez des tips, je suis preneuse aussi, je suis en plein apprentissage 🥰 Bon alors, est-ce que le gâteau est validé ? 🍰 Layer vintage cake Ganache chocolat blanc mascarpone Curd framboise Crème de lissage au beurre russe Framboises fraîches TIPS DE LISSAGE 🍰 • Toujours lisser un gâteau bien froid. Un passage au frigo ou congélateur avant le lissage facilite énormément le travail et évite que la crème fonde et que le gâteau bouge. • Faire un crumb coat (fine sous-couche de crème) pour emprisonner les miettes, puis remettre au frigo 20/30 avant le lissage final, ça vous aidera à avoir un meilleur lissage à la fin. • Utiliser une crème à la bonne texture: souple mais qui tient. Trop molle elle glisse, trop ferme elle marque, vous avez la recette dans la partie 2 🍰 • Spatule de lissage légèrement inclinée, environ 45°, avec une pression très légère. Le but est d’enlever l’excédent, pas d’appuyer sinon vous ferez des trous et votre gâteau ne sera pas droit. • La main reste presque fixe, c’est le plateau qui tourne lentement. Éviter les mouvements brusques. • Nettoyer et essuyer la spatule entre chaque passage pour un rendu plus net. • Surélever le gâteau sur le plan de travail pour l’avoir à bonne hauteur. Ça évite de se casser le dos et permet de mieux voir les défauts. • Si la crème commence à marquer, faire une pause et remettre le gâteau au frigo ou congelé quelques minutes avant de continuer pour réussir son lissage final. RECETTE Génoise : Layer Cake (moule de 15cm de diamètre 10/12cm de hauteur) 5 oeufs 125g sucre 150g de farine 1/2 sachet de levure chimique 40g d’huile neutre Fouette les œufs avec le sucre jusqu’à ce que le mélange blanchisse et double de volume. Tamise la farine, la levure, puis incorpore-les en plusieurs fois à la spatule en effectuant des mouvements délicats pour ne pas casser la mousse. Ajoute l’huile et mélange doucement. Verse dans un moule beurré et fariné (ou chemisé de papier cuisson). Enfourne pour 20-25 minutes. Après cuisson, encore chaude ou tiède, enroule là de film alimentaire et place là au frais. OREO CAKE 🍰✨ 20 cm Durchmesser · 3 Böden ⸻ Böden Zutaten: • 120 g weiche Butter • 2 Eier (Zimmertemperatur) • 125 ml Sonnenblumenöl • 240 ml Vollmilch • 15 ml Zitronensaft • 10 ml Vanilleextrakt • 310 g Mehl • 200 g Zucker • 40 g Kakao • 5 g Natron • 1 Prise Salz ⸻ 🧁 Füllung – Mascarpone-Frischkäse-Oreo-Creme Zutaten: • 220 g Mascarpone • 220 g Frischkäse (zimmerwarm) • 60–70 g Puderzucker • 4–6 Oreo, grob gehackt • Optional: 1 TL Vanilleextrakt Zubereitung: 1. Mascarpone + Frischkäse KURZ! glatt rühren. 2. Puderzucker + Vanille unterheben. 3. Oreo-Stückchen vorsichtig unterheben. ⸻ Außen - Weiße-Schokolade -Buttercreme mit OREO Zutaten: • 250 g Butter (weich) • 300 g weiße Schokolade • 100 ml Schlagsahne • 1 Prise Salz • Vanillepaste / Vanilleextrakt • 4–5 Oreo, Füllung entfernt Zubereitung: 1. Schokolade hacken, Schlagsahne erhitzen (nicht kochen), über Schokolade gießen → 1 Min. stehen lassen → glatt rühren. 2. Auf Raumtemperatur abkühlen lassen. 3. Butter 10–15 Min. hell & luftig schlagen. 4. Vanille + Salz unterrühren. 5. Schokosahne löffelweise dazugeben, mittlere Geschwindigkeit kurz mixen. 6. Oreo-Stückchen vorsichtig unterheben (max. 5–6 Bewegungen). 7. Creme zu weich? → 15 Min. kühlen, dann kurz aufschlagen. ⸻ 🍫 Schoko-Oreo-Creme: Zutaten: • 1–2 Oreo, zu feinem Staub gemixt • 3–4 EL Schoko-Dessertsauce Zubereitung: • Zutaten miteinander verrühren ⸻ Tortenaufbau: 1. Erster Boden → dünne Schoko-Oreo-Creme + Ring (Buttercreme) 2. Zweiter Boden gleich behandeln → beide kurz kühlen 3. Mascarpone-Frischkäse-Oreo-Creme auf die beiden gekühlten Böden geben 4. Böden aufeinander stapeln 5. Dritter Boden oben drauf 6. Krümelschicht Buttercreme außen (optional) → leicht andrücken 7. Finale Schicht Buttercreme → glatt streichen 8. 🚨 STOP stacking cakes like they’re pancakes. This is how I properly stack a 4-layer cake. (My way. The stable way. The no-collapse-at-delivery way.) If you’re serious about tiered cakes, read this carefully: ✨ Step 1: Chill your layers. Cold cake = clean stacking. ✨ Step 2: Have EVERYTHING ready before you start. Buttercream. Layers. Fillings. Piping bags. GLOVES. Camera (lol). Professional bakers don’t move back and forth. We execute. ✨ Step 3: Use drums, not thin boards. Stability matters. ✨ Step 4: Add a little buttercream to glue the first layer down. ✨ Step 5: Every layer must be leveled. No exceptions. ✨ Step 6: Soak with simple syrup. Moist > dry. ✨ Step 7: Thin layer of buttercream. ✨ Step 8: Pipe a dam to contain the filling. ✨ Step 9: Add filling and spread evenly. ✨ Step 10: Place each layer centered. Every. Single. Time. ✨ Step 11: Crumb coat the first two layers. ✨ Step 12: Add straws for support. ✨ Step 13: Add cardboard every 2 layers (makes cutting easier and safer). Repeat the process for layers 3 & 4. ✨ Add a center dowel. ✨ Crumb coat top first, then sides. ✨ Smooth everything. ✨ Fill the holes. Scrape again. Clean cake = confident delivery. Side note: does gloves gives you a false sense of security to you? Here’s the truth!!!!! Have everything on hand, don’t move. Or are you pretending to make a cake while playing games and messing around? As you can see, I don’t move from my table. ALSO WASH YOU HAND!!! for at least 20 seconds. Using gloves is not a suggestion. According to the Department of Health you must use gloves while touching “ready to eat food.” Washing hands and wearing gloves are NOT ALTERNATIVES, they are BOTH A MUST. Please respect others people’s food. Or would you buy a sandwich made with bear hands? I don’t think so!! So why cake? “Ohhh I wash my hand 20 times a day”. Be serious, this is a real job. Most cake disasters don’t happen in the oven. They happen during stacking. Save this if you’re tired of leaning cakes. Comment “STACK” if you needed this.
