SU🥔✨ Today’s Jacket Potatoes ✨🥔
🍗 Chicken Filling:
• 2 lbs chopped chicken
• Salt (to taste)
• Lemon pepper (to taste)
• Paprika (to taste)
• Onion powder (for sautéing)
• Garlic powder (for sautéing)
Sauté until fully cooked.
Remove to a large mixing bowl and add:
• 1 cup mayo
• 1/4 cup Parmesan cheese
• 1 can corn (drained)
• 1 tsp onion powder
• 1 tsp garlic powder
• 1 tsp parsley flakes
• 1 tsp salt
Mix until well combined.

🥔 Potatoes:
• Large baking potatoes
• Mina olive oil (for drizzling)
• Salt (to taste)
• Butter
• Cream cheese
• Shredded cheese (for topping)
Blanch potatoes for a few minutes. Remove from water, drizzle with Mina olive oil, sprinkle with salt, and bake in a convection oven at 425°F until crispy outside and tender inside.
Crack open and mash in butter, cream cheese, and a few pinches of salt. Fill with chicken mixture, top with shredded cheese, and return to oven until cheese is melted.

Crispy, golden country potatoes loaded with melty cheese, smoky bacon, and creamy toppings—this hearty dish is the ultimate comfort food side or satisfying main.
📝 Ingredients:
✦ 600g potatoes, diced
✦ 2 tbsp olive oil
✦ 1/2 tsp paprika
✦ 1/2 tsp garlic powder
✦ 1/2 tsp salt
✦ 1/2 tsp black pepper
✦ 120g bacon, cooked and crumbled
✦ 150g cheddar cheese, shredded
✦ 100g sour cream
✦ 2 green onions, chopped
✦ 1 tbsp butter
👩🍳 Instructions:
1️⃣- Preheat oven to 200°C (400°F).
2️⃣- Toss diced potatoes with olive oil, paprika, garlic powder, salt, and pepper.
3️⃣- Spread on a baking tray and roast for 30–35 minutes until crispy and golden.
4️⃣- Transfer potatoes to a baking dish and dot with butter.
5️⃣- Sprinkle bacon and cheese evenly over the top.
6️⃣- Return to oven for 10 minutes until cheese is melted.
7️⃣- Top with sour cream and green onions before serving.
8️⃣- Serve hot and enjoy.

ALNacho Cheese Chipotle Beef Loaded Potatoes
This is one of my favourite dinners in a long time. Crispy potatoes loaded with smoky chipotle beef, a quick nacho cheese sauce and a fresh yog drizzle 🤤
Proper comfort food, high in protein and actually filling 🤌🏼�
Ingredients ( serves 2):
Potatoes
550g potatoes, chopped into bite sized chunks
1 tsp smoked paprika
1 tsp garlic granules
Salt
Back pepper
Chipotle beef
200g lean beef mince (5%)
1 small onion, finely diced
1 red pepper diced
2 tsp chopped garlic
1 tsp chipotle paste
1 tsp smoked paprika
1 tbsp tomato purée
150g passata
100ml water
Nacho cheese sauce
2 light cheesy slices
60ml semi-skimmed milk
To serve:
50g 0% Greek style yoghurt
Juice of ½ lime
Pinch of salt
1 spring onion chopped
2 sprigs of fresh coriander chopped
💞Add the potatoes to the air fryer. Season with smoked paprika, garlic granules, salt and pepper, spray with oil and cook at 180°C for 20-22 minutes until golden and crispy, shaking halfway. Or oven bake at 200°C for 30-35 minutes.
💞Add the beef mince to a frying pan and cook until browned. Add the onion and pepper and cook for a few minutes until softened, then stir through the garlic.
💞Add the chipotle paste, smoked paprika and tomato purée and cook for a minute to deepen the flavour.
💞Pour in the passata and water, stir well and let it simmer for 8-10 minutes until thickened but still saucy.
💞For the cheese sauce, add the cheese slices and milk to a bowl. Microwave in 10-15 second bursts, stirring vigorously each time until smooth and pourable.
💞In a small bowl, mix together the yoghurt, lime juice and salt.
💞Pile the crispy potatoes into a bowl. Spoon over the chipotle beef, drizzle over the nacho cheese sauce, followed by the yoghurt sauce. Garnish with spring onion and fresh coriander.

🌮 Loaded Fajita Jacket Potatoes (Serves 2)
Ingredients
Potatoes
• 2 large baking potatoes
• Olive oil spray, sea salt, butter, black pepper
Chicken Fajita Filling
• 350g chicken thighs, sliced
• 1 tsp each adobo, garlic powder, smoked paprika
• 1 tbsp fajita seasoning
• 1 tbsp chipotle paste
• Juice of ½ lime
• 1 tbsp olive oil
Veg
• 1 red pepper + 1 yellow pepper, sliced
• 1 onion, sliced
• ½ tsp fajita seasoning
• ½ tsp smoked paprika
Spicy Cheese Sauce
• 25g butter
• 20g flour
• 250ml milk
• ½ tsp taco seasoning
• ½ tsp Dijon mustard
• 80g grated cheese (mozzarella / chilli cheese / Red Leicester / garlic cheese – mix it up!)
To Serve
• Guacamole
• Sour cream
• Fresh coriander
• Tajín or chilli flakes
• Lime wedges
Method
1️⃣ Potatoes
Microwave for 6 minutes. Rub with oil + salt, wrap in foil and bake at 205°C for 45 mins. Unwrap and️nd return to oven for 10 mins to crisp.
2️⃣ Chicken
Toss chicken with spices, chipotle, lime juice + olive oil. Air fry or pan-fry for around 15 mins until golden and cooked through.
3️⃣ Veg
Fry peppers + onion with fajita seasoning and smoked paprika until soft with lovely charred edges.
4️⃣ Cheese Sauce
Melt butter, stir in flour, then slowly whisk in milk. Add taco seasoning, Dijon + cheese. Stir until silky smooth.
5️⃣ Assemble
Split potatoes and mash the inside with butter + a little cheese.
Layer: cheese sauce → chicken → peppers → more cheese sauce.
Finish with guac, sour cream, coriander + Tajín. Serve with lime wedges.
