Ingredients: • 4 medium carrots • Salt & pepper • Chives • 1 egg • 2 handfuls shredded mozzarella Optional Fillings: Salad greens, avocado, smoked salmon, chicken, or your favorite sauce (yogurt mayo works great!) Instructions: ▪️Peel and grate the carrots. ▪️Add egg, seasoning, and shredded cheese. Loving the roasted pumpkin and mung beans in this one a great combo of soft, sweet, creamy, crunchy, and fibrous deliciousness from the kale, tahini dressing and dukkah too. Mung beans are not only an epic source of fibre, they deliver great plant protein to this salad. I still love to amp that up with some chicken breast or any of my go to tinned fish such as mackerel, tunning, salmon or sardines - all great for protein and omega 3 healthy fats to support heart and brain health and reduce inflammation. PREP TIP: with kale to make it easier to eat is to finely shred it, then massage and marinate some lemon juice into it before throwing into salads like these.
