Basic Green Chutney:- Coriander/ dhaniya: 1 bunch Mint leaves/ pudina: 1/2 bunch (optional) Garlic: 2-3 cloves Onion: 1 small Ginger: 1/2 inch Green chillies: 2-3 Lemon juice: 1 Pink salt: 1/2 tsp salt: to taste -Blend everything together with a chunk of ice to your desired consistency. Restaurant Style Light Green Chutney:- Dahi/curd: 1 cup Green chutney: 2-3 tbsp Chaat masala: 1/2 tsp Salt: to taste -Mix the prepared chutney with the dahi and whisk till smooth with some chaat masala and extra salt. Teekhi Hari Chutney:- Coriander/ dhaniya: 1 bunch Mint leaves/ pudina: 1/2 bunch (optional) Garlic: 2-3 cloves Onion: 1 small Ginger: 1/2 inch Green chillies: 2-3 Lemon juice: 1 Pink salt: 1/2 tsp salt: to taste Raw mango/Kachi kairi/ Ambi: 1 (can be replaced with Amchur) -Blend everything together with peeled and pitted raw mango and water added to adjust the consistency. Vrat Ki Chutney:- Coriander/ dhaniya: 1 bunch Ginger: 1/2 inch Green chillies: 2-3 Lemon juice: 1 Send Namak: to taste Peanuts: 1/4 cup (can be replaced with 1/4 cucumber) [Green chutney, Pudine ki chutney, pudina, Hari chutney, teekhi khatti chutney, mint sauce, green chilli sauce, restaurant style light green, mint mayonnaise, arjun narula, dahi chutney]

12 DELICIOUS DAYS OF CHRISTMAS Day 5: Slow Roast Lamb Shoulder with Mint & Mustard Sauce Something a little bit noice, different, unusual from the tradition ham or turkey to adorn the Christmas table. An effortless recipe that’s perfect if you have a crowd to feed….just 5 minutes to prep and then the oven does the rest of the work🙌🏼 Although this is part of my Christmas series, any given Sunday of the year is a perfectly good excuse to put this on the menu. Full recipe written below ⬇️ Serves 6 1 x 2.5kg lamb shoulder, bone in 8 cloves garlic, peeled 6 sprigs Rosemary 2 large red onions, halved 1 tablespoon ground cumin 2 cups chicken stock Sea salt and pepper to taste Mint & Mustard Sauce: 1 tightly packed cup mint, leaves picked 1 long green chilli, sliced 3/4 cup flat leaf parsley, roughly chopped 1 tablespoon Dijon mustard 2 tablespoons lemon juice 1 tablespoon malt vinegar 1 tablespoon honey 2 tablespoons extra virgin olive oil Pre heat the oven to 160 degrees C. Trim the lamb of any excess large pieces of fat. Using a small paring knife make 8 holes in the lamb then stud the holes with garlic cloves. Line a high sided baking dish with baking paper and place in the rosemary sprigs. Place lamb on top of the rosemary then add the onions into the tray. Scatter the lamb with ground cumin and sea salt flakes. Pour in the stock then cover the lamb tightly and place in the middle rack of the oven for 3.5-4 hours, or until the lamb meat is tender. Uncover the lamb, turn the oven up to 180 C and roast for a further 30 minutes, or until the outside is crisp, golden and caramelised. While the lamb finishing in the oven, place all the mint sauce ingredients along with a pinch of salt into a blender and blitz until bright green and smooth. Remove lamb from the oven and place onto a serving platter along with onions and a little of the cooking juices. Butter Chicken is a true BIR (British Indian Restaurant) curry house favourite. This recipe uses my curry base gravy which I prep ahead to make cooking this curry for dinner a breeze. You can find this Recipe along with the recipes for my mix curry powder in my feed, however, if you can’t find them, send me a DM and I will send across all of the recipe links you will need to make this curry from scratch. Butter chicken 2.0 (serves 4) Chicken Tikka: 500g boneless and skinless chicken thighs cut into bite size pieces 1 tbsp. garlic and ginger paste 1 tbsp. garam masala 1 tsp. turmeric 1 tsp. amchoor powder (dried mango) ½ tsp. dried fenugreek 1 tsp. salt 1 tbsp. mint sauce 1 tbsp. mango chutney ¼ tsp. red food colouring (optional) 100ml natural yoghurt Sauce: 30ml oil or ghee 1 small onion diced 1 tbsp. garlic and ginger paste 1 tsp. salt 1 tbsp. sugar 1 heaped tbsp. mix curry powder 1 tsp. tandoori masala 1 tsp. dried fenugreek 2 tbsp. tomato puree mixed with 100ml boiling water 1 x 300g portion of curry base gravy 100ml evaporated milk 40g butter Method: 1: Marinade the chicken in a bowl, along with rest of the Tikka ingredients. For best results, leave to stand in the fridge overnight if you have time, but if not, these are good to go. Thread onto skewers, then cook on a rack in your air fryer set at 200c for 14 minutes. Make sure the chicken reaches an internal temperature of at least 75c. 2: To make the sauce, melt the ghee then add the onion, ginger, garlic and the salt then cook for a few minutes. Sprinkle in the sugar, spices, fenugreek then fry for a minute. Pour the tomato puree and curry base gravy into the pan along with the evaporated milk then bring up to a simmer. Add in the butter and cooked chicken tikka then simmer for a further 5 minutes. Dependent on how thick you like your sauce, you may want to let it down with a little bit of water to thin it out. Sprinkle over a little more than your fenugreek before serving with rice.
