Cut into the bite-size pieces, drizzle generously with olive oil and I think I did half a packet of just a regular taco seasoning. 350° for 35-45 minutes until they’re done!

This is the meal you will keep coming back to- cozy, comforting, a true winner. Here is my Creamy Chili Miso bowl with Crispy Pork recipe 🍜 For the Pork & Marinade
• 8 oz ground pork (or any ground meat)
• 1 tbsp mirin
• 1 tbsp minced ginger
• 1 tbsp sesame oil
• 1 tbsp black bean sauce
• 2 cloves garlic, minced For the Soup Base
• 2 tbsp soy sauce
• 2 tbsp sesame paste (or peanut butter)
• 1 tbsp rice vinegar
• 1 tsp lime juice
• 3 tbsp white miso paste
• ½ tsp sugar
• 1 tbsp chili oil (preferably homemade)
• 2 cups chicken stock
• 1 can coconut milk For the Noodles & Toppings
• Noodles or rice, cooked per package directions
• 2 handfuls leafy greens (spinach, baby bok choy, or Chinese broccoli)
• 2 scallions, chopped
• Crushed peanuts Spicy chili oil. Instructions
Mix the ground pork with mirin, ginger, garlic, ssame oil. Let marinate for 15 minutes. Meanwhile, whisk together the coconut milk, chicken stock, soy sauce, sesame paste, miso paste, rice vinegar, lime juice, sugar, and chili oil. Bring gently to a simmer, then keep warm. Cook noodles or rice according to package directions. Steam or blanch the greens and set aside. Heat a wok over medium-high heat. Add 1 tbsp sesame oil or oil of choice then the marinated pork. Cook until deeply browned and crispy. Add the spicy bean sauce, cook for 1 more minute, then remove from heat. Assemble bowls with rice or noodles, ladle over the hot broth, top with crispy pork, greens, scallions, and crushed peanuts. Finish how you like. Cozy, spicy, grounding. #weeknightdinner

YOU’LL NEED -1 lb ground pork -2 T white wine vinegar -½ T soy sauce -¼ c finely chopped green onion -4 garlic cloves, minced -2 T minced ginger -½ tsp kosher salt -8 small flour tortillas -Oil, for cooking Topping ideas: Thinly sliced cabbage, shredded carrots, green onion, cilantro Mix up the filling, then scoop onto tortillas and spread into an even layer. Smash and cook meat-side down in a hot skillet until crisp, flip, and cook until the tortilla is golden. Top and serve hot! TERIYAKI CHICKEN NOODLES The perfect weekend Fakeaway, quick, easy & delicious. Has the flavours of a Chinese take out, but made at home in under 20 minutes 🥡🥢. Ingredients for 2 For the chicken: - 350g diced chicken thighs - 2tbsp cornflour - Tsp garlic granules & paprika For the sauce: - 2tbsp teriyaki - 2 crushed garlic cloves - 3tbsp soy sauce - Pinch chilli flakes - Tsp cornflour mixed with water For the noodles - 2 nests of dry noodles - 1 sliced onion - 2 spring onions - 2tbsp dark soy sauce - 1tbsp sesame oil Mix all the sauce ingredients together in a bowl. For the chicken use some kitchen roll to get rid of an excess moisture from the chicken. Then toss this in the cornflour and spices. Add a couple spoons of the sauce ingredients and stir. Then get a frying pan nice and hot with lots of low cal cooking spray, once the pan is hot add the chicken and make sure it’s not over crowded and try not to move the chicken too much. Leave it a good 2-3 minutes to cook on each side, so that it goes nice and crispy. When the chicken is almost cooked, reduce the heat of the pan and the sauce and leave this to simmer until it’s thickened and sticky. For the noodles, boil some water and add your noodle nests this takes around 5 minutes. In a wok fry the onion and whites of the spring onion. once soft add the greens of spring onion and cooked noodles, along with sesame oil and soy sauce and stir until the noodles are coated. Serve in bowls with the chicken on top and a sprinkle of sesame seeds and sliced spring onion.

NANDOS CHICKEN & HALLOUMI BURGER Follow @kimberlys_journeyy for more recipes like this⤵️ For the chicken: - 300g chicken breasts - 2tbsp peri peri marinade - 1tbsp chicken seasoning - 2tbsp Peri peri sauce For the burgers: - 2 ciabatta rolls - 15g garlic butter - 50g reduced fat halloumi - 2tbsp chilli jam - 2tbsp perinaise - Lettuce gem - Red onion Butterfly the chicken breast, add your marinade and then I cooked mine in m air fryer under the grill setting! When the chicken is almost cooked, fry or grill your Halloumi until golden. For the rolls, spread over the garlic butter and then toast. Assemble the burgers with some chilli jam, lettuce, red onion and Nandos perinaise. We had ours with chips cooked in the air fryer and some corn on the cobs Making meals like this really help me keep on track over the weekend! • • •

Seriously one of the nicest pasta dishes I’ve had in a while, and it couldn’t be easier to make. Sometimes the most fastest recipes are the most satisfying. Per serving 👉🏼 473 cals | 41.6g protein INGREDIENTS (serves 4): ▪️200g pasta, (uncooked) ▪️400g chicken (raw) ▪️x1 onion ▪️x2 peppers ▪️200g light garlic soft cheese ▪️x1 tin chopped tomatoes ▪️x1 pack peri peri mix ▪️100ml water (swill out tomato tin) ▪️80g mozzarella cheese (*onion, peppers, & spices not tracked) Bake 45 mins covered at 190c fan until pasta is cooked and juices are soaked up. When you’re short on time but still want an authentic Italian flavor at home, this Creamy Tortellini is the perfect and simple taste of Italy! ✨ You’ll need… 20 oz BUITONI Five Cheese Tortellini 1 pkg Boursin Garlic & Herb spread 1 cup heavy cream Fresh grated Parmesan Directions: COMBINE Boursin cheese and heavy cream in a large skillet over medium low heat. Stir to heat up and melt. PREPARE tortellini according to package directions. Drain and reserve ½ cup pasta water. ADD prepared tortellini into the sauce and add half of the pasta water, tossing to combine, adding more as needed to thin out the sauce. SERVE with fresh grated Parmesan cheese.
