Strawberry Tres Leches Cake🍓 A fruity twist on the classic ultra-moist Latin dessert Ingredients Strawberry Purée * 16 oz (453 g) strawberries Sponge Cake * 1⅔ cups (211 g) all-purpose flour * 1 tsp baking powder * ¼ tsp salt * 5 large eggs, separated * 1 cup (200 g) granulated sugar, divided * ¼ cup strawberry purée * 2 tbsp whole milk * 1 tsp vanilla extract Tres Leches (Milk Soak) * 10 oz evaporated milk * 14 oz sweetened condensed milk * ¼ cup heavy cream * ½ cup strawberry purée Strawberry Whipped Cream * 4 cups heavy whipping cream * ¼ cup powdered sugar * 2 tbsp freeze-dried strawberry powder (optional) * ¼ cup strawberry purée * ½ tsp vanilla extract Instructions Strawberry Purée 1. Blend strawberries until smooth. 2. Simmer over medium heat, stirring often, until reduced to 1 cup (about 10 minutes). 3. Cool completely. Reserve: ¼ cup for cake, ½ cup for milk soak, ¼ cup for whipped cream. Sponge Cake 1. Preheat oven to 350°F (175°C). Grease a 9×13-inch pan. 2. Whisk flour, baking powder, and salt; set aside. 3. Whisk egg yolks with ¾ cup sugar and strawberry purée until pale and fluffy. Add milk and vanilla. Mix in dry ingredients. 4. Whip egg whites with remaining ¼ cup sugar to stiff peaks. 5. Gently fold whites into batter in two additions. 6. Pour into pan and bake 30–35 minutes, until a toothpick comes out clean. 7. Cool 30 minutes, then poke holes all over the cake with a fork. Tres Leches Soak 1. Whisk all milk-soak ingredients together. 2. Slowly pour over cake. Cover and refrigerate at least 4 hours (overnight is best). Strawberry Whipped Cream 1. Whip cream, powdered sugar, and freeze-dried strawberry powder to soft peaks. 2. Add strawberry purée and vanilla; whip until fluffy. 3. Spread or pipe over chilled cake. Dust with extra strawberry powder if desired. Storage Keep refrigerated for up to 4 days.

Fondant Recipe 👇🏻 453g marshmallows 2-3 tablespoon water Powdered sugar 453 g Butter/shortening/ flavourless oil for kneading. You can speed up time and make it simpler by using a kitchen mixer. I have used hand to show that manually is also achievable 🙂 ✅ Method: Melt marshmallows with water Add 1/2 of the icing sugar and mix by hand or on low speed in mixer. Once incorporated add some more icing sugar (not the entire amount) and mix again. Now rub some shortening or oil in your hands and counter top and knead the mixture by hand. Knead knead knead - add the remaining icing sugar bit by bit. Knead for about 7 minutes until it’s soft and shiny. If dry, a 1/2 tbl soon water at a time - knead till it feels soft and pliable. 🌟To store: grease outside ball, double wrap in cling film and store in an airtight container or ziplock bag.
