My doctor said,
“If we do nothing,
you may have two months.
Even with chemotherapy,
maybe six months.“
When I heard that…
What came to my mind
wasn’t my own death.
It was
my three children.
In the time I have left,
what can I leave behind for them?
Not money.
Not a house.
But something
that will stay in their hearts forever.
So now,
I’m writing a picture book
for my children.
Something they can keep
after I’m gone.

Gajar Ka Halwa 🥕🥧
Ingredients:
• Carrots – 1 kg, grated
• Desi ghee (clarified butter) – 4–5 tablespoons
• Full-cream milk – 1 litre
• Sugar – ¾ to 1 cup (as per taste)
• Mawa / khoya – 150–200 g, crumbled
• Dry fruits:
• Cashews – chopped
• Almonds – chopped
• Pistachios – sliced
• Raisins
• Cardamom powder – ½ teaspoon
Method:
1. Heat ghee
Heat desi ghee in a heavy-bottomed kadhai or pan.
2. Add grated carrots
Add the grated carrots and sauté on medium heat until they become soft and shrink in volume (their moisture evaporates).
3. Add milk
Slowly pour in the milk while stirring.
Cook on medium heat, stirring occasionally, until the milk reduces and the mixture becomes thick and almost dry.
4. Add sugar
Add sugar and mix well.
The mixture will loosen at first—this is normal.
Continue cooking until it thickens again.
5. Add mawa (khoya)
Add the crumbled mawa and mix well.
Cook for 4–5 minutes until the halwa becomes rich and starts leaving the sides of the pan.
6. Add dry fruits and cardamom
Add cashews, almonds, pistachios, raisins, and cardamom powder.
Mix well and cook for another 2 minutes.
7. Serve
Serve hot.
You may add a little extra ghee on top for a richer taste.
