Many of our modern front-line therapies against cancer incorporate anti-angiogenesis strategies, opposing the creation of blood vessels. In other words, fighting cancer by cutting off tumor supply lines. Without a blood supply, some cancers are only able to grow to be about the size of the tip of a ballpoint pen, then tumor growth stalls. Autopsy studies show that virtually everyone has tiny tumors in them by age 70. “Cancer-without-disease” can, therefore, be considered the normal state during aging. Tumors release angiogenic factors, chemicals that cause new blood vessels to sprout toward the cancer. Once a blood vessel reaches the tumor and attaches, it’s off to the races and the tumor can take off like wildfire. By starving cancer of its blood supply, chemotherapy that blocks this process can sometimes cause tumors to shrink. But, ideally, we wouldn’t have to wait until such a late stage to nip them in the bud. That’s where our diet may come in. Many of the phytonutrients we know and love in berries, broccoli, beans, teas, and spices have anti-angiogenic properties. Given the power of plants, think of a whole food, plant-based diet as the foundation of an anti-angiogenic approach to cancer. Fat cells release the same kinds of chemicals that tumors do to swell their blood supply, so might eating an anti-angiogenic diet help with weight loss, too? If you’re looking for foods with anti-cancer benefits, pick up watercress. Cruciferous vegetables like watercress are linked to a decreased risk of developing several types of cancers. Watercress stands out from other cruciferous vegetables because it is the best source of phenethyl isothiocyanate (PEITC), shown to decrease the growth of human breast cancer cells. Epidemiological studies also suggest greater intake of PEITC rich foods is tied to lower cancer risk. PEITC has been shown to diminish angiogenesis —the method by which tumors send out signals to induce surrounding normal tissues to grow new blood vessels into the tumor. Watercress has antioxidant, anti-genotoxic, and anti-inflammatory properties and contains significant levels of beneficial micronutrients linked to a reduced risk of breast cancer. Eating watercress daily has been shown to significantly reduce DNA damage to blood cells, which is an essential trigger in cancer development. Eat watercress raw to obtain the most potent anti-cancer effects. Watercress Grain Bowl Serves 2 - 1 package firm tofu - 2 cups cooked brown basmati rice - ½ bag B&W watercress - 1 yellow onion, diced - 1 cup multicolor grape tomatoes - 3 Tbsp toasted slivered almonds -4.5 Tbsp hoison sauce - 2.25 Tbsp + 3 tsp toasted sesame oil - 1.5 Tbsp rice vinegar - 1.5 Tbsp soy sauce - 1 large clove garlic, minced Directions 1. Drain tofu and cut into cubes. Place cubes in a bowl and lightly dust with cornstarch. Add 1 tsp toasted sesame oil to a nonstick saute pan. Cook tofu on low heat until browned on each side. 2. In a bowl whisk together hoison sauce, 2.25 Tbsp sesame oil, rice vinegar, soy sauce and minced garlic. 3. Add 1 tsp toasted sesame oil to a nonstick sauté pan. Sauté diced onion on low heat until glassy and slightly brown. Set aside. 4. Cut tomatoes in half. Add 1 tsp. sesame oil and tomatoes to a nonstick sauté pan. Cook on low heat stirring constantly until tomatoes are soft and their skin starts to wilt, about 4 minutes. 5. Place rice, tomatoes, watercress, onions and tofu in a bowl.
