Let me know if you like this style of video where I walk you through it step by step as if you were in the kitchen with me or like shorter videos instead. I make this recipe a few times a week because it’s so quick and my fam will eat half a loaf or more during one meal. 🫠 You can also add in cinnamon brown sugar, cheese and herbs, or whatever you want. Recipe: 1 1/2c warm water 2tsp active dry yeast 2tsp salt 3 1/4c unbleached all purpose flour 1tsp honey In a bowl, add warm water + sprinkle yeast on top. Let that bloom for 10-15 minutes. Once foamy, add salt and flour 1c at a time. Knead gently (dough will be sticky). Place in bowl, cover, let rest until doubled 1-1.5 hours. Once doubled, preheat oven to 425. Place dough on counter, shape gently into a ball. Place on unbleached parchment paper then into dutch oven. Place lid on, bake for 35 minutes. Remove lid after 35 minutes then bake for 10-15 minutes with the lid off to get a nice crusty outside! Enjoy! 🤎🍞🍯 #breadrecipes #artisanbread #simplebaking

Guinness Brown Bread Bread baking on a Saturday morning is one of my rituals… The smell of the bread baking in the oven wafting around the house is for me the happiest smell I can think of. Scroll down for the recipe. It’s simply weigh, stir and bake. Clodagh xx Serves 6 INGREDIENTS: 400g wholemeal flour 100g rolled oats, plus 2 tbsp for the topping of the bread 2 tsp bread soda 1 tsp sea salt 330ml Guinness 170ml buttermilk 2 tbsp black treacle METHOD: 1. Pre-heat oven to 350oF/180oC. 2. In a large mixing bowl, whisk together the dry ingredients. 3. In a large measuring jug whisk together the treacle, buttermilk and Guinness. 4. Make a well in the centre of the dry ingredients and using a fork mix in the wet ingredients. Stir together until combined (the mixture will appear quite wet). 5. Grease a 1 lb loaf tin and tip the bread dough in. Sprinkle two tablespoons of the oats on top. Bake the bread in the pre-heated oven for 45 minutes. 6. Once baked allow to cool on a cooling rack.

My version of wheat-stalk bread, or pain-d-epi and it is #vegan I am not saying my Frech pronounciation or bread baking is perfect or to the point, but this is my version of it. In France you will probably use a baguette dough for it, but I used simple bloomer dough. Recipe is below It makes 2 Ingredients 250g storng bread flour 3g salt 3g yeast 150g water To coat 50g Sesame seeds Method Mix all the bread ingredients to make a dough and knead for 2 to 3 mins. Let it prove for 30 to 45mins. Then divide the dough in half and roll each half to an 'I' shape. Coat them in sesame seeds and let it prove on a baking sheet for another 30mins. Use a pair of scissors to cut in the dough (not all the way through) at a 45degree angle. Turn each cut part to the alternating sides as shown in the video. Preheat the oven to 180C. Then bake for 20 - 25mins or till golden brown. These bread is great for breaking and dunking in soups. Enjoy. Bread baking is one of the oldest culinary practices in human history, yet it continues to be one of the most misunderstood, especially when short clips leave out the deeper science behind what’s happening in the dough. One of the biggest myths circulating online is that salt instantly “kills” yeast the moment they touch. In reality, the interaction between salt and yeast is far more nuanced and rooted in basic microbiology. Yeast are living microorganisms. When salt is introduced into a hydrated yeast environment, the yeast experience what’s known as osmotic pressure. Salt pulls a small amount of water away from the yeast cells, which temporarily slows their metabolic activity. This brief slowdown is referred to as the osmotic lag phase. During this phase, yeast do not die... they simply pause and adapt before resuming fermentation. This is actually beneficial for dough development because it prevents yeast from consuming sugars too rapidly and producing carbon dioxide too aggressively early in the process. This controlled fermentation is exactly what bakers want. Salt serves several critical functions in bread making: • Regulates fermentation speed so the dough doesn’t overproof too quickly • Strengthens gluten structure, giving the dough better elasticity and support • Improves gas retention, leading to better rise and crumb texture • Enhances flavor, bringing balance to the finished loaf Without salt, dough tends to ferment too quickly, producing weak structure, bland flavor, and a loaf that collapses more easily. This is why experienced bakers understand that recipes are guides not rigid formulas. Bread has evolved for thousands of years across cultures and techniques. Summer time means wood fired bread time. Here are some tips to prep your @oonihq Karu 16 for bread baking: 1. Get the stone piping hot by burning wood directly on it. Once it dies down, spread the embers all over the stone. Once those go out, use a wet cloth to clean the stone. 2. Dont bake bread with live flames burning, you will scorch your loaves and they won’t bake on the inside 3. Make bread that isn’t dependent upon being scored. Don’t worry about aesthetics here. You should be aiming for flavor. 4. Add ice or spray to help get a crunchy crust - a lot of it will escape, but it will still moisten the dough and allow for some good crust development. This is a simple 4 hour dough that uses two preferments and a pinch of fresh yeast. Simplicity baby. #ciabatta #chapata #sourdough #oonikoda #ooni #woodfired #artisanbread
