A strong dough is everything. Fresh yeast is my go-to for pizza, that way I know it’s alive and working (Polish shops are the best place to find it in the UK). I only hand knead for a few minutes these days, then ball up and let it rest - stretching briefly again a couple of times after half hour dough naps. Speaking of timing, there’s no substitute for time during fermentation (sugar/honey hacks only get you so far). I always go for 24hrs or more, room temperature, to ensure a well developed gluten network. 65% water hydration works great on a carbon steel for your home oven too ♨️ It’s all about temperature and duration of the bake, plus cycling the grill when you can. Do multiple coil folds (no waiting in between). Cover and rest 1½ hour. 2. On a floured surface, divide dough into 5. Shape each into a small ball and create surface tension by turning it in your hands. Dust with flour and rest 10 min. 3. Score each from the side, then lightly brush with water. 4. Ingredients: 🐭Tangzhong • ¼ cup bread flour • ½ cup milk 🥛 🐭Main Dough • 3 ¾ cups bread flour • ½ cup milk • ¼ cup heavy cream • 3 tsp instant dry yeast • ¼ cup sugar • 2 tsp salt • 2 large eggs 🥚 • 4 tbsp unsalted butter 🐭Egg Wash • 1 egg • 1 tbsp milk • Sesame seeds 🐭For Toasting • Melted butter • Garlic powder 🧄 🎃Instructions 1. Make Tangzhong: Cook flour + milk in a small saucepan until thick like mashed potatoes. Cool. 2. Activate Yeast: Warm milk + cream (110°F), stir in sugar + yeast, let sit 5–10 min until foamy. 3. Make Dough: Mix flour + salt. Add Tangzhong, yeast mixture, and eggs. Knead until shaggy. 4. Incorporate Butter: Knead until smooth. 5. First Rise: Form ball, cover, rise 1 hour until doubled. ⏰ 6. FULL RECIPE of my chili oil crunch sourdough is on my website! Link in bio. My Original No Knead No Touch Bread Ingredients: 3 cups bread, strong white or plain flour Tbsp yeast Tsp salt 1.5 cups warm water (ensure it’s not too hot) Method: Add all the ingredients to a bowl and mix until you have a wet, sticky dough. Cover the bowl with a tea towel and leave to rise for 1 hour. To help fasten this heat your oven to 50c whilst you mix then turn off and place the bowl inside the oven. It should now have doubled in size with bubbles on the surface. You can leave it longer if you wish. Preheat the oven to 230c. Using two spoons grab some of the dough and place it on to a parchment paper on a baking sheet. Repeat this to make 6 leaving a small space between them. If they touch it’s ok. Sprinkle on some flour and chia seeds. Add nuts or herbs too if you. Make a water bath by adding water to oven proof bowl or dish and place it on the lower shelf of the oven and place the baking sheet on the middle rack. Bake for 25mins or until nice and golden brown.
