What’s in it: Rolled oats Salted almonds Pumpkin seeds Unsweetened shredded coconut Chia seeds Maple syrup Dark brown sugar Oil Vanilla extract Kosher salt Dried apricots Dried cranberries Combine all of the wet and dry ingredients (except the dried fruit, that’s added after baking so it doesn’t burn), transfer to a parchment-lined or nonstick baking sheet, and pat the mixture down (this makes large clusters of granola instead of loose bits). After baking, use a spatula to break up the granola, add the remaining toppings, and enjoy! We love this granola with fresh fruit and plain greek yogurt OR as is — it’s that good.
