I’m obsessed with this coffee cheesecake! It’s so creamy with such a good kick of coffee, you’d never be able to guess I made it without eggs! ☕️ I used @continentalcoffeeindia ’s 100% pure instant coffee for this recipe and the flavour is bang on! I can’t wait to make more coffee flavoured desserts super soon! ❤️ For the base- 120g crushed biscuits 30g melted butter For filling- 300g cream cheese 50g caster sugar 120g cream 200g condensed milk 1 tablespoon corn flour 2 tablespoons @continentalcoffeeindia instant coffee 1 tablespoon water Milk chocolate ganache and whipped cream, to top Method- 1. Combine the crushed biscuits and melted butter and press the mixture into the base of a 7 inch springform pan. 2. To make the filling, whisk together the cream cheese and caster sugar. 3. Stir in the cream, condensed milk and corn flour. 4. Dissolve the coffee powder in warm water and stir that into the cheesecake batter. 5. Pour the batter over the biscuit base and bake at 160C for 25-30 minutes in a water bath. 6. Line a 23cm springform pan. 📝 Crust: Blend nuts, cookies, sugar, and salt. Mix in butter. Press into pan. 🥧 Filling: Beat cream cheese. Dimakan dingin udah paling mantep🥹🤎 Bahan ib: Luvitaho • 400gr cream cheese • 100-120gr gula kastor • Secubit garam • 1/2sdt vanilla extract • 2btr telur • 12g maizena • 220gr whipping cream Tuang ke loyang ukuran 20x10x7. Oven di suhu 200-210c (setiap oven beda, jadi bisa disesuaikan) Bahan cokelat: • 200gr whipping cream • 1 kuning telur • Secubit garam • 1/2sdt vanilla extract • 130gr dark compound chocolate Colatta Setelah campurin semua bahan, aduk merata kemudian panaskan di api sedang sampai mendidih. I wanted to play a little, try something I hadn’t really seen before - and hopefully surprise ☺️ A heart-shaped Basque cheesecake felt like a good challenge. I was genuinely curious: would it work at all, or would I quickly understand why people don’t usually do this 😅 In this setup, this is what I observed👇 Basque cheesecake is very honest - it reacts immediately to height, shape, and heat. 💛 a taller cheesecake doesn’t just look different - it also changes the center, giving more of that delicate, custard-like “alive” texture 🤍 more cheesecake mass doesn’t necessarily mean more baking time ❤️ the shape itself is just as important - the heart changes how heat moves through the cheesecake. Sharp corners, rounded edges: all of it affects how the center sets and the edges brown. È la CHEESECAKE più golosa che tu abbia mai assaggiato😍 Se anche tu ami questi biscotti devi assolutamente prepararla: 👉INGREDIENTI Per la base: 250g di biscotti lotus 90g di burro fuso Per la crema: 250ml di panna da montare 360g di formaggio cremoso 260g di crema di biscotti lotus 50g di zucchero a velo Per la parte superiore: 150g di crema di biscotti lotus 👉PREPARAZIONE 1. Sbriciola i biscotti lotus nel robot da cucina. Aggiungi del burro per ottenere un impasto più compatto e sabbioso. 2. Copri il fondo dello stampo circolare con la carta forno poi distribuisci l’impasto schiacciandolo col cucchiaio. Lascia in frigo per 1 ora. 3. Monta la panna con la frusta elettrica. 4. Usa la frista elettrica anche per mescolare il formaggio cremoso con la crema di biscotti lotus e lo zucchero a velo. Poi aggiungi poco alla volta la panna montata e mescola delicatamente con la spatola per farla amalgamare alla crema. 5. Versa la crema nello stampo e livellala. Fai riposare la torta in frigo per 4 ore. 6. Infine versa e distribuisci la crema di biscotti lotus sulla cheesecake. Falla raffreddare in frigo giusto per 15 minuti. 7. 🧀 BASQUE CHEESECAKE 🔥 Creamy. Caramelised. Wobbly in the middle. Ingredients • 625g (2 ½ cups + 2 tbsp) cream cheese, room temp • 200g (1 cup) caster sugar • 225g @fromagerdaffinois_au • 4 large eggs • 250ml (1 cup) thickened cream • 1 tbsp plain flour, sifted • 1 tsp vanilla paste • Pinch sea salt HOW TO 1. Preheat oven to 190°C fan-forced (375°F). Line a 21cm round cake tin with baking paper, leaving overhang. 2. In a stand mixer (paddle attachment), beat cream cheese + caster sugar until smooth. 3. Add in Fromager D’Affinois. Mix well. 4. Beat in eggs one at a time. 5. Add cream, flour, vanilla + salt. Mix until combined. 6. Pour into tin and bake 45–50 min until the top is dark and caramelised but the centre still has a wobble. 7. Cool to room temp in the tin. Slice, serve, devour.
