EASY HOMEMADE CHICKEN POT PIE INGREDIENTS • ½ cup butter • 2 cups sliced carrots • 1 cup sliced celery • 1 cup chopped onion • ½ cup flour • 1 teaspoon salt • ½ teaspoon black pepper • ½ teaspoon celery seed • 1 teaspoon garlic powder • 1 teaspoon thyme • 1 cup whole milk • 2 cups chicken stock • 2 cups frozen peas • 4 cups cooked shredded chicken • 1 (17.3-oz) puff pastry, thawed • 1 large egg HOW TO MAKE IT 1. Preheat oven to 425°F. 2. Sauté butter, carrots, celery + onion until soft. 3. Add flour + seasonings and stir until it forms a thick paste. 4. Slowly whisk in the milk, then slowly whisk in the chicken stock until smooth and thickened. 5. Stir in peas + shredded chicken. 6. Lay the full sheet of puff pastry over the top 7. Brush with egg wash and bake for 25-30 minutes, until golden and bubbling. Ingredients: -4 tbsp. butter -1 yellow onion, diced -2 medium carrots, peeled & diced -6 cloves garlic, minced -1 tbsp. fresh thyme -1/4 cup flour -2.75 cups chicken stock -3/4 cup heavy cream or milk -2 large chicken breasts, cooked & shredded -1 cup frozen peas -salt & pepper to taste -1/2 tsp. garlic powder -2 sheets puff pastry, cut into small squares -egg wash -flaky salt & fresh thyme for garnish Instructions: 1. Preheat oven to 400 degrees. In a large pot melt butter then add carrots and onions and cook until softened, about 10 minutes. 2. Stir in garlic and thyme, then cook for a few minutes before mixing in flour. 3. Slowly pour in chicken broth, then add heavy cream and simmer for 4-5 minutes until thickened. 4. Stir in chicken, peas and seasonings, then remove from heat. 5. Divide into mini pie dishes, top each with puff pastry squares, brush with egg wash, then bake for 20-25 minutes or until the pastry is golden brown. 6. It’s full of tender chicken, soft noodles, and all the cozy veggies in a rich, creamy sauce. Perfect for chilly weeknights, or even a quick spin on post-Thanksgiving comfort food. Ingredients: 12 oz pasta (rotini, penne, or egg noodles work great) 2 cups cooked, shredded chicken 1 cup frozen peas and carrots 1 cup frozen corn 1 small onion, diced 2 cloves garlic, minced 2 tbsp butter 2 tbsp all-purpose flour 2 cups chicken broth 1 cup milk 1/2 cup heavy cream (optional, for richness) 1/2 tsp thyme Salt and black pepper, to taste Optional: 1/2 cup grated Parmesan cheese Fresh parsley, for garnish Instructions: Cook pasta in salted boiling water until al dente. Drain and set aside. In a large skillet or pot, melt butter over medium heat. Add diced onion and cook 3–4 minutes until soft. Add garlic and cook 1 more minute. Stir in flour and cook for 1 minute to form a roux. Slowly whisk in chicken broth and milk, stirring constantly until smooth. Add thyme, salt, and pepper. Simmer for 4–5 minutes until slightly thickened. Stir in frozen vegetables and shredded chicken. Let cook for 4–5 minutes until veggies are tender and everything is heated through. Chicken Pot Pie Makes me feel like I’m back in grandmas kitchen Recipe: 2 c chicken stock 2 c half and half Thyme, rosemary, sage 1 Roti Chicken 1 onion 1 rib of celery 1 carrot 4 cloves garlic Aleppo or red pepper flakes Italian Seasoning 4 tbsp butter 1/4 c flour 2 c frozen peas 1 sheet thawed puff Egg wash Flaky salt Thyme Steep your herbs in the half and half and stock for 10 min to infuse. Sauté your veg in the butter for 5-7 minutes and add your chicken. Add the flour and cook out for 2 minutes. Add the hot cream mix and bring to a boil to thicken. Add the peas and then transfer to your baking dish of choice. Top with the puff, egg wash, salt and thyme. Bake at 400 for 20-25 minutes.
