It’s here! The best Heavenly Hunks copycat recipe! These require just a handful of vegan and gluten-free ingredients and NO baking! These took so many tries but I wanted to nail them and mission accomplished- they taste identical to Heavenly Hunks and even the texture is spot on without having to bake them. We’ve been loving these for a little snack or dessert and they’ve been perfect to put in my daughter’s lunchbox- such a fun kids treat!
RECIPE ⬇️
Ingredients:
-5 tbsp pure maple syrup
-6 tbsp semi-solid coconut oil (soft and scoopable)
-2 cups sprouted rolled oats
-3/4 cup oat flour
-1/2 cup shredded unsweetened coconut
-5 tbsp light brown sugar
-2 tsp vanilla extract
-1/2 tsp salt
-Heaping 1/3 cup mini chocolate chips
Instructions:
Line a 4 1/2 x 8 1/2 loaf pan with parchment paper, set aside. In a food processor, combine all of the ingredients MINUS the pure maple syrup and coconut oil (also leave out the mini chocolate chips. You’ll add these later) and set aside. Next, add the pure maple syrup and coconut oil to a microwave safe bowl. Microwave for about 20 to 30 seconds to warm it up. Add the pure maple syrup and coconut oil to the food processor with the rest of the ingredients. Run the food processor for 1 to 2 minutes. The mixture should be wet and sticky. Remove the blade and stir in the chocolate chips. Add the mixture to the loaf pan, pressing down firmly so it all sticks together. Freeze for about 40 minutes, cut into 24 squares, cover and store in the refrigerator. Enjoy!
