Mini Egg Chocolate Pots If you love mini eggs, you are going to be OBSESSED with these! These are a bit like the Bailey's Chocolate Orange Pots I made at Christmas - except these are EVEN easier with only 5 ingredients - although if you wanted to add a shot of Bailey's to these, I'm sure it would work 😅 I've written up the recipe below - let me know what you think of them! A x Makes 6 chocolate pots 2 x 80g bags of mini eggs 150g dark chocolate 300ml double cream 8 digestive biscuits 25g melted butter Crush the digestive biscuits, either with the end of a rolling pin until you have a rough crumb Add 25g of melted butter to the crumb and mix well until all of the crumbs are coated. Divide the biscuit between 6 ramekins and press down with the back of a teaspoon. Put the dark chocolate in a microwaveable bowl broken into pieces Microwave the chocolate at 30 second intervals stirring each time. Stop when the chocolate is not quite all melted, remove from the microwave and stir until smooth, this will stop you overheating it. Leave to cool. Place 300ml double cream in a mixing bowl and using a hand blender, mix until it begins to thicken and bubbles start to form - about a minute. Crush both bags of mini eggs. Add the cooled, melted chocolate and stir until combined or use the hand whisk briefly. She made these for me when I was little and now my kids love them too. 😋 INGREDIENTS -roast chicken breast -half head steamed broccoli -200g of pan fried bacon -150g of tasty cheese -small tub of cream -small can of corn -6 sheets of puff pastry METHOD -preheat oven to 180 -steam small florets of broccoli -pan fry diced bacon -shred the chicken breast into a bowl -add the cooled broccoli and bacon -add corn, cheese and cream and stir -lay out pastry and when it’s defrosted, make the pillows as shown in video ensuring it’s well sealed. -place in oven until pastry is golden brown, approx 30 mins Recipe note: steaming broccoli and pan frying bacon is personal choice! Family Friendly Beef Casserole: HIT SAVE TO MAKE LATER! The most delicious, satisfying winter dish the whole family will love using seasonal produce from @woolworths_au. It’s such a mum win to be able to prep and chuck in the slow cooker in the morning and have dinner ready at night. Ingredients: 1kg Woolworths heart smart beef Can Woolworths diced Italian tomatoes 500ml Campbells Beef stock 1 Medium sweet potato 3x medium carrots 1 brown onion 3-4 potatoes + extra potatoes to make mash Handful Green beans Splash Worcestershire sauce 2 tablespoons plain flour Method: Roughly chop your veggies Brown beef in 2 batches & add to slow cooker Brown onion, add 2 tablespoons of plain flour to coat and then add large splash of your stock. Simmer for a minute while stirring and scraping the pan to get all the flavour. Add onion mix to slow cooker. Add remaining stock, diced tomatoes, Worcestershire sauce and all vegetables besides the beans. Cook on high for 7 hours. With one hour to go add your beans to the slow cooker. Make mash potato to serve with casserole. Plate up and enjoy! Find a whole heap of delicious seasonal produce in abundance, and at great prices in Woolworths stores now. Sunday Osso Bucco 🤤 Nothing brings me more joy than a slow braise on a Sunday and cooking for loved ones. Genuinely nothing! This osso bucco is one I’ve been making since @garymehigan shared it with us on Masterchef many years ago. It’s a classic for a reason and it goes a long way! The leftovers can be made into a delicious pasta sauce with pappardelle. 😋 I was requested to make it with mash (learnt this method of baking potatoes on rock salt and passing through a sieve before adding copious amounts of butter and warm milk from @cfassnidge once at a organic pig farm!) And I think a little gremolata and green beans freshen it all up. Perfect Sunday lunch. Recipe below (thanks Gaz!) Cute apron and kitchen kit kindly gifted from @gormanhome Ingredients Osso Buco 8 pieces osso buco ½ cup plain flour, for dusting 4 tbsp olive oil 2 large onions, finely diced 3 carrots, finely diced 4 sticks celery, finely diced 6 cloves garlic, diced 1 bay leaf 2 tbsp tomato paste 1 cup dry white wine 1 x 400g cans crushed tomatoes 4–5 cups beef or chicken stock (enough to cover) 1 tbsp fresh thyme leaves (or a few sprigs tied) 4 tbsp flat-leaf parsley, chopped   👨‍🍳 Method Preheat oven to 180°C Season osso buco with salt and pepper, then dust lightly with flour. In a large heavy based fry pan, heat olive oil over medium-high heat. Brown meat in batches, 3–4 min per side. Remove and set aside.   Build the Sauce In the same pan, add a little oil if needed. Sauté onion, carrot, celery, and garlic for 10–12 min until soft. Stir in tomato paste and cook for 2 min. Deglaze with white wine, scraping the base. Reduce by half. Add crushed tomatoes, thyme, herbs and enough stock to cover the meat. Return osso buco to pot   Braise Cover and cook in the oven for 2.5–3 hours, or until meat is tender and nearly falling from the bone. Serve with mash, greens and your mates!
