I love adding these to rice bowls, pairing them with meat to cut through the richness, chopping them into salads, or even adding them to avocado toast. Plus they keep for months in the fridge, and the flavor honestly gets even better with time! #RECIPE — Ingredients listed below! If you’re subscribed on my Substack, then this recipe is already waiting for you in your inbox💌 ~0.7 lb beets, cut into thin matchsticks ¼ large onion* (or half a small onion), thinly sliced 10–12g (about a 1-inch piece) fresh ginger, peeled and thinly sliced 2 cups filtered water 1 tbsp sea salt or kosher salt Optional: 1-2 garlic cloves, minced *I love using red onion for the beautiful color, but yellow or sweet onion works too if you prefer a milder taste.

Head to the refrigerated section, not the shelf stable aisle!⁠ ⁠ Grab a jar and flip it over. The ingredients should be super simple, usually just vegetables (cucumbers, radishes, carrots, cabbage), water, salt. That is it ✅.⁠ ⁠ If you see vinegar, added sugar, “natural flavors,” calcium chloride, or the word pasteurized on the label, that is a shortcut for “this is not truly alive” so back it goes on the shelf ❌.⁠ ⁠ You want key words like raw, unpasteurized, live cultures, naturally fermented. Healthy soda?! Yes please! We turned pineapple scraps into homemade soda and the kids thought it was magic ✨️ This is tepache—a naturally fermented drink made from the peels and core of a pineapple. It turned DARK PURPLE thanks to the butterfly pea flowers Before you start—this part matters: 👉 Don’t wash your pineapple with vinegar or baking soda. You want the natural microbes for fermentation, so just rinse with plain water. How we made it: ½ gallon mason jar Peels + core from 1 pineapple 2 cinnamon sticks A few whole cloves A few star anise A few tsp dried butterfly pea flowers (optional, but fun!) ½ cup brown sugar Filtered water to fill Let ferment for 2–4 days (depending on temp of your kitchen, ours was perfect at 2.5 days), then strain and bottle. Let it sit another 24 hours to build that fizzy carbonation. That’s it. Lightly sweet, a little tangy, naturally fizzy and SUCH a fun way to use something that would’ve been thrown away. This is exactly the kind of simple, from-scratch habit that saves money and makes food more fun for your family. Thinly slice the cabbage (a mandolin slicer makes this much easier). 2. Add the grated carrots and salt. 3. Gently mix everything together with your hands until the cabbage begins releasing some moisture. 4. Pack the cabbage tightly into a clean jar. 5. Press it down so the cabbage is fully submerged in its natural brine. 6. Leave the jar on the counter to ferment for 4 days, releasing trapped air once a day. 7. Perfect Snacking Pickles 🥒🥒 Ingredients: - 1lb cucumbers - 2 tablespoons pickling salt (or 3 tablespoons kosher salt) - 1 small white onion - Pinch of Dill - 5oz white vinegar - 4oz apple cider vinegar - 6oz sugar - 1 tsp whole mustard seeds - 1/2 tsp red pepper flakes - 1/2 tsp celery seeds - 1/4 tsp turmeric - 1/4 tsp allspice - Couple whole black pepper corns - 2 whole cloves What I did: 1. Slice cucumbers in 1/4 in rounds and toss with salt. Add to jar with minced dill and sliced onion. Transfer to a sterile mason jar. 2. Grab a small sauce pan and whisk together apple cider vinegar, white vinegar and sugar. 3. Add mustard seeds, red pepper flakes, celery seeds, tumeric, allspice, peppercorns and cloves. 4. Bring to a boil over medium heat and pour all contents into the jar. 5. Screw on lid and once cool place in fridge overnight and up to 10 days. Fermentation is a complex process and there is always risk of spoilage or undesirable outcomes. Follow safe food handling practices and ferment at your own risk. There are so many recipes you can create with fermented raw mangoes. I have posted fermented raw mango chutney, kozhambu, pickles etc 1. Fermentation takes 4-6 days depending on climate 2. If there is too much bubbles on the side after a few day, open lid carefully and let out some gas. This is good. This is called burping 3. You can avoid this step and buy jars that are meant for fermentation but that’s just waste of money unless you are a serious fermenter 4. How much salt ?? Typical formula calls for 3% salt by weight to weight of ingredients and water Since Indian pickles are more heavy on salt, I use 7% I will keep you posted on how this comes through #vegan #plantbased #vijimoo #ibs #fermentedfoods

A simple coconut yogurt, made at home. No dairy. No additives. This is one of those recipes that doesn’t try to do too much, and that’s exactly why it works. RECIPE: • Pulp of 2 tender green coconuts • Water from 1 green coconut (adjust based on thickness) • Juice of ½ lemon Blend until smooth. Transfer to a clean glass jar, cover loosely with a cloth or paper towel, and let it rest at room temperature for 12 hours. Refrigerate after. I had used less coconut water for such creamy texture. Funnily enough, I loved the taste even more on day three. Letting it sit in the fridge made it naturally sweeter. You can taste it each day and see what feels right for you. Why this works for the gut: • Naturally dairy-free • Light, easy to digest • Fermentation makes it gentler on the gut than raw coconut • Suitable for sensitive digestion and bloating-prone systems This isn’t about trends or superfoods.
