I used to be intimidated by homemade pasta. I thought it required special equipment, complicated ratios, and hours of work. Then I took a pasta-making class while traveling in Rome, and realized how simple it actually is. Since then, I make fresh pasta at home all the time. For one serving: ½ cup flour | 60g ( I used @kingarthurbaking 00 flour ) 1 egg Pinch of salt That’s it. Multiply by however many people you’re feeding. Ideally, use “00” flour, it gives you a smoother, more delicate, authentically Italian texture. But regular all-purpose flour works perfectly fine too. Homemade pasta isn’t complicated. It’s just misunderstood. Lightly moisten the pasta sheet with water and carefully place fresh herb leaves on top. 3. Cover with a second pasta sheet and gently press with a rolling pin. 4. Roll out the dough until 1.2 mm (0.047 in) thick and make your favorite pasta shape. 🔔 Secret tip: Choose softer herb leaves and remove the stems, this way the sheet won’t tear when rolling and you’ll get a clean, delicate mosaic effect.

• Pasta maker (fresh pasta at home is UNMATCHED)
• Ice cream maker (you can’t go back after trying this)
• Dough hook (bagels, bread, pizza dough)
• Paddle attachment (cookie dough, cake batter)
• Whisk attachment (whipped cream, meringue, marshmallow fluff)
• Meat grinder (fresh ground meat, homemade sausage) I love how one mixer can do so much — especially if you’re into cooking at home, baking from scratch, and DIY kitchen projects.

Fresh homemade Fettuccine 🍝 My promise kept! When I posted that creamy fettuccine Alfredo video, I said I’d show you how to make fresh pasta from scratch, so here we are. Handmade fettuccine is silky, tender, and perfect for clinging to rich sauces like Alfredo. That said, I’m not one of those “fresh is always superior” purists. Store-bought dry pasta has its place too. INGREDIENTS * 100g flour (80% tipo 00 + 20% semolina for that perfect bite and texture) * 1 large egg * Pinch of salt IMPORTANT NOTES Eggs vary in size, and flour humidity changes everything—don’t dump in all the flour at once! Trust your hands and the dough’s feel over strict numbers. Add flour only if it’s too sticky. PROCEDURE How to make it Start by mixing the salt into your flours. In a separate bowl, crack the egg and whisk it. Add about half the flour mixture to the egg and mix with your hands until it comes together. Add half of what’s left and mix again until incorporated. Turn it out onto a floured surface and knead, gradually adding more flour as needed until the dough is smooth, elastic, and no longer sticky (you might use all the flour or even a bit more—depends on your eggs!) Wrap and rest the dough for 45 minutes at room temp, this relaxes the gluten for easier rolling. To roll: Dust your surface with flour, flatten the dough ball with your hands (add flour if sticky), then roll out with a rolling pin until it’s paper-thin (almost see-through). Cut into two 8-inch-wide strips, then slice into fettuccine ribbons with a knife (or use a pasta cutter if you have one). Cook immediately in boiling salted water for 1–3 minutes, or dust lightly with flour/semolina, freeze on a tray, and store for later Fresh, dry or both?

Save this video and probably never look at it again. Here are my 10 steps to perfect homemade pasta: 1. Use 00 flour, not all purpose. It gives you better elasticity and a silkier finish. 2. Weigh everything. 100 grams of 00 flour per person, and 1 large egg for every 100 grams of flour. 3. Add extra yolks for richness. Swap one egg for two yolks or add an extra yolk for deeper color and a silkier texture. 4. Incorporate gradually. Make a well, whisk the eggs, and slowly pull in flour from the edges. Don’t rush this stage. 5. Knead for at least 8 to 10 minutes. Push, fold, rotate. It should become smooth, elastic, and slightly firm. 6. Rest at room temperature for at least 30 minutes. This relaxes the gluten and makes rolling easier. 7. Roll it out gradually. Start on the widest setting, fold and pass through a few times, then reduce thickness slowly. 8. Roll the dough out thin. You should almost see your hand through it. 9. Let it sit briefly before cooking. 10-20 minutes in loose nests helps it firm slightly and prevents sticking. 10. Cook in well salted boiling water, briefly. Fresh pasta only needs 2 to 3 minutes. If we were sheeting pasta together, this is the first step I’d show you 💛 I dust the sheets with semolina, not 00 flour, and here’s why: semolina doesn’t absorb back into the dough like flour does, so the strands stay separate as you cut them. Flour can sometimes make the pasta a little tacky, especially if your dough is on the wetter side. I also like to let the sheet air-dry just a touch before folding and cutting. That tiny bit of dryness gives the pasta a really nice bite when it cooks. There’s a little semolina in this dough too, which helps the sheets hold their structure. Every step has a reason, and understanding why makes all the difference.
