Tonkatsu in RV kitchen🚌💞Here’s how I make it at home🫶You’ll need: – Pork loin cutlets – Salt & pepper – Flour – 1 egg (beaten) – Panko (Japanese breadcrumbs) – Oil for frying – UMAMI SAUCE – Ketchup – Shredded cabbage on the side Lightly score the white muscle fibers on the pork (to keep it from curling). Season both sides evenly with salt and pepper. Dust with flour, dip in beaten egg, then coat with panko. Deep-fry in oil until golden and crispy. Home Cooking Sessions: Gyūdon. Had this a lot in Japan! A delicious, thinly sliced and simmered, beef and rice bowl. Full recipe below! 👇🏽🔥😍 - 1. Start with the beef. Typically this dish calls for ultra thinly shaved beef which you can pick up from most Asian supermarkets. I used a 400g ribeye 2. Wrap in clingfilm and freeze for few hours so it’s easier to slice. Then remove and slice as thin as possible. A sharp bread knife works well here. I shoulda gone thinner and used a mandolin.. but 🤷🏽‍♂️ 3. Dashi: add a large sheet of kombu to about 750ml water and soak 30 mins, then bring up to a simmer and remove kombu. Can use instant Dashi too 4. Add in 4-6 dried shiitake mushrooms, simmer for 5 mins, then remove from heat and add handful of katsuobushi - steep for 10 mins, then strain and your dashi is done 5. Add some chopped beef fat to cold pan and bring to med-high 6. Once sizzling, add in knob of finely minced ginger + 2 cloves minced garlic and sauté ~2 mins before adding in 2 finely sliced white onions 7. Sauté and sweat onions on med heat for 15 mins with pinch of salt, then add in all the Dashi along with 20g brown sugar - mix to dissolve 8. Add beef to the Dashi with some spring onion 9. Add 100ml sake, splash of mirin and leave to gently simmer ~5-7 mins, skimming off any scum that rises to surface 10. Finish with 30ml of soy and leave to simmer for ~5 mins, then remove beef and onions 11. Reduce the sauce down by half and set aside for serving 12. Plate up the beef over seasoned sushi rice, top with either a raw yolk or onsen egg, season with sichimi and garnish with sliced spring onion + more sauce 13. For the onsen egg, simply boil 750ml water, set aside, pour in 200ml cold water, then leave eggs in for 17 mins - let cool for 5 mins and crack over beef - This one’s really delicious. The beef should have been thinner, so go thinner! Another recipe from my mom that I want to remember- so I can make it myself, wherever I am! 🥔 Japanese Potato Salad ポテトサラダ Cook potatoes Steam or boil until soft. Peel while warm and lightly mash. Prep vegetables Cucumber: slice, salt (massage), squeeze out water Carrot (50 g): boil, chop smaller Onion (½): thinly slice, salt lightly, soak 5 min, squeeze Ham: cut into small pieces Eggs Boil eggs (12 min). Separate yolks and whites. Cube egg whites, save yolks for topping. Make dressing Mix wine vinegar (50 ml), olive oil (150 ml), mustard (½ tbsp), salt & pepper. Use 4 tbsp of this dressing. Assemble Mix mashed potatoes with dressing. Add vegetables, ham, egg whites, and Kewpie mayo (up to you). Mix gently. Chill before serving. crispy pork katsu over japanese curry at home >>> so simple but literally restaurant qualityyy - def worth trying at home :) ingredients pork loin (for katsu) salt + pepper flour eggs panko breadcrumbs white rice japanese curry cubes (golden curry, vermont, etc.) carrots potatoes soy sauce, mirin, sake, dashi (optional) water or broth pickled ginger (optional) oil for frying instructions 1. cook your rice and set aside 2. (optional) if using onions, sauté them first until soft for extra flavor 3. chop carrots + potatoes into bite-sized pieces 4. in a pot, add water + soy sauce + mirin + sake + a bit of dashi and bring to a boil (you can also just use water or broth, but this adds more depth) 5. add carrots + potatoes and let simmer until tender 6. add in your curry cubes and mix until fully dissolved, then let it thicken on low 7. prep your pork: flatten it (we just use a pan), then season with salt + pepper 8. coat in flour → dip in egg → cover in panko 9. fry at ~350°F: 3 minutes on one side, then flip and fry another 2 minutes until golden and crispy 10. let it rest, slice into strips 11. plate with rice, pour over curry, top with katsu + pickled ginger Soo comforting and crispy, you gotta try at home!! <3 #japanesefood #katsu #curryrice #easyrecipes #homecooking
