Why order mandazi when you can whip up a whole batch at home the authentic 🇹🇿 way (yes, with your mixer doing the hard work 💁🏽‍♀️). Soft, fluffy, sweet… the kind that disappears before they even cool down because little hands (and husbands 👀) keep “taste-testing.” Ingredients are in the video, and trust me… once you start, there’s no going back. Also… can we talk about mandazi preferences? Some people like theirs with just air inside, light, hollow, doing the absolute least. Me? Give me that soft, pillowy inside with something going on… not just air 😅 Let me know how yours turn out! P.S. there are many ways to make mandazi, depending on where you are from. My family is from Tanga, Tanzania, and this is how we make it (key ingredients for us: coconut milk and cardamom). Salaam & Hello! A few things about me: I was born in Dar-Es-Salaam, Tanzania, the eldest daughter in a vibrant mixed-heritage family. My maternal side is Arab and African, while my paternal side is Indian and African. I was raised to embrace every part of my heritage and so much of it lives in the food I share here. In my late teens, I moved to Canada to study, and it was there, thousands of kilometres from the Swahili coast, that my love for cooking truly began. Becoming a mom of three sparked a deeper passion: the desire to pass on my heritage through food, to make sure my children taste and know the stories of where we come from. On this page, you’ll find meals I grew up with; the traditional flavours of ugali, maharage, samaki, pilau, biryani, kuku wa kupaka, chutneys, and many of the dishes that carry pieces of Africa, India, and the Arabia all in one. 🌍✨ Most of it is self-taught, while some is passed on from family. This page is an ode to my two inspirational Bibis (grandmas) who were extraordinary cooks, known for their snacks like vitumbua, visheti, mandazi and lots more, I wish to show you on this page, the simplified version cuz this working mama is always looking for timesavers! I used to think Swahili biryani was one of those dishes you could only enjoy when an (older) auntie or your mom or grandma made it; but guess what? If I can pull it off (knowing I’m a “young”mama and aunty myself), so can you! 🙌🏽✨ With my rice cooker handling the rice and the stovetop taking care of the gravy, this beauty comes together in under an hour. And the taste? Impeccable! I know there are so many types of biryani out there; Hyderabadi, Pakistani, Lucknowi, Middle Eastern twists, but I’ll admit, I’m biased. Being Tanzanian from the coast, I’ll always stand by Swahili biryani as the absolute best. Rich, fragrant, spicy and just hits differently. Don’t believe me? ✅ Chevro night ✨ The last time I made this was over a year ago, and honestly, I never know if I’ll remember how it’s done since so much of it lives in my head, not on paper. Having this page is inspiring me to finally write things down for anyone who wants to try too. What I’ve learned? Don’t be afraid to step out of your comfort zone; things that feel daunting often aren’t once you just start. I used to think chevro took a full day, but this batch came together between 9–11 pm. Now we’ve got two containers ready to enjoy. 😋 Sure, there are variations of how this is made, some use pre-fried mixes + spices, but the way I learnt it, is to make it how we make it back home. #KhairoonsKitchen #CookingWithKhairoon #TanzanianCuisine #IndianSnacks #Chevro

Kept it simple, but trust me, the variations are endless depending on how wild you want to go! Best part? This chutney is a ride-or-die sidekick for EVERYTHING, from khichro and rice dishes to curries and fried snacks and a lot more! My husband truly makes the best pilau, and a few years ago, I had the opportunity to go back to the source, my mother-in-law’s kitchen in Tanzania 🇹🇿. She’s always so generous with her knowledge, may Allah bless her endlessly for it. Sharing this 1-minute video of how we make pilau using whole spices, no measurements, just heart. This was a big pot, one whole chicken, about 3–4 cups of rice; it was enough to feed my 3 kids, 3 nephews, and a few adults (because pilau is never made small 😄). Let’s make some #chai, the Tanzanian way ☕✨ Begin with six cups of water. Then add two teaspoons of chai masala, add two tablespoons of tea leaves. Grate some fresh ginger. Let those four really get to know each other; bubbling, blending, becoming one, for at least 10 min. Then comes the good stuff: one can evaporated milk and five teaspoons of sugar to bring it all together. Let it simmer for 5 or so minutes and enjoy this East African nostalgia in a cup. And here’s the real tea… after 14+ years of marriage, I still don’t make chai without my husband supervising like a head chef 😭 “Not yet… let it boil… add ginger now… okay NOW the milk.” Sir??? At this point just take the pot 😅 But honestly, he makes the best chai — I’m just the assistant with benefits 💁🏽‍♀️💕 #KhairoonsKitchen #Chai
