Ingredients: • 1 Medium Purple Sweet Potato (Roasted & mashed) • 1 cup Tapioca Starch • 2 tbsp Maple Syrup • 1–2 tbsp Extra Virgin Olive Oil • Pinch of salt • Optional: Splashes of milk if dough is dry How-To: Mix until it feels like Play-Doh. Save this for school mornings & follow @nourish_naturally more easy lunchbox snacks. Ingredients Makes ~48 mini muffins 3 cups wholemeal self raising flour 1 cup oats ⅓ cup brown sugar 2 tsp cinnamon 1 tsp baking powder 180ml extra virgin olive oil 300ml milk 4 eggs 2 very ripe bananas, mashed (need to be black or spotty for sweetness) 2 apples, grated (I used Kanzi) 2 carrots, grated Method: Preheat the oven 170C fan forced & grease or line muffin tins. Place flour, oats, sugar, cinnamon & baking powder into a large bowl & mix to combine. Add remaining ingredients & mix to combine. Spoon into the muffin tins & bake for 15 -18 minutes, checking from 14 minutes, until golden on top and a skewer comes out clean. Store in an airtight container for up to 3 days or in the freezer for up to 3 months. My kids eat snacks like it’s their full time job so I need to save myself the trouble and spend one hour on Sunday so I’m not going crazy all week Mini pizzas • 1 cup of flour • 1 cup Greek yogurt • 2 teaspoons of baking powder • shredded mozzorella cheese • marinara sauce OPTIONAL •everything but the bagel seasoning • one egg for egg wash •pepperoni or pizza toppings of choice Bake at 350 degrees F for about 20 minutes Snickerdoodles • 1 cup oat flour (store-bought or blend rolled oats until fine) • ½ tsp baking powder • ¼ tsp baking soda •½ tsp cinnamon •Pinch of salt • 3 tosp unsalted butter (or coconut oil), softened • ¼ cup 2% Greek yogurt •¼ cup unsweetened applesauce • 3 tbsp honey • 1 tsp vanilla extract • mix together dry ingredients and then add in the wet. Using a cookie dough scoop scoop 12 cookies onto a baking sheet. Leave them in a dome shape for a super soft cookie but you can flatten a bit if you’d like. They don’t spread so shape as you’d like. • Bake at 350 F for 10-13 minutes, until edges are just golden. You can either top with frosting or cinnamon sugar Mini muffins • 1/2 cup melted butter • 1/2 cup of sugar • 1 egg • 1/2 tsp of vanilla • 1 cup flour • 1/2 teaspoon baking soda • 2 over ripe bananas mashed • 1/3 cup mini chocolate chips Makes 24 mini muffins, bake at 350 degrees F for 12-15 minutes. Store in an airtight container in the fridge or freeze! #kidssnacks #toddlermeals #toddlermealprep

🥜PEANUT BUTTER CHEERIO BARS🥜 Recipe below 👇🏻 I've been making these for years and they're still one of the kids favourites! This version has the addition of melted chocolate 😍 INGREDIENTS: 100g Cheerios 2 big heaped tbsp 100% nuts peanut butter (approx 100g) 4 level tbsp honey Chocolate (optional) METHOD: ▪️weigh your Cheerios out ▪️add your peanut butter & honey to a large bowl and microwave for a minute - check it a couple of times times throughout! ▪️give it a good mix then pour it with the Cheerios and mix until the cereal is well coated ▪️press the mixture down into the mini loaf mould as tightly as possible (you can use a large dish if you don't have one and cut into bars afterwards!) ▪️melt the chocolate (I did this in the microwave making sure I checked every 10-20 seconds) ▪️spread the chocolate on top ▪️place in the fridge for a few hours to set, or the freezer for 1-2 hours Enjoy! ❄️ keep refrigerated / freeze for up to 3 months ⚠️ not suitable under 12m due to honey ⭐️ makes 12 bars in our mini loaf tray Hi I'm Laura and I help busy parents make nutritious and delicious family meals that take minimal time and stress.
