👑🌹 What’s in a name? Princess Cake definitely suits this dessert better than Green Cake! As soon as I started this Illustrated Bakes from Around The World series I knew I would be making this cake at some point. I was a bit intimidated though - there’s a lot of elements and having once shot to smoothly cover a dome of cream in marzipan didn’t sound like a casual day in the office, but this cake is so delicious I already can’t wait to make it again. Traditionally the marzipan is green, and topped with a rose, but I am already dreaming up different flavours and decorations. Apparently the Prinsesstårta is having a moment, with a lot of fancy bakeries around the world making their own versions, but of course I love to find out about the origins of each bake and how they came to be! I went through dry sponges, loose custard that never set and a mish mash of both those issues on the final try before scrapping the recipes I was following online and deciding to make it my way...which worked justttt perfectly. ⁣⁣ ⁣⁣⁣⁣⁣ I’ve come to learn that yes, whilst using authentic recipes is what I would love to do everytime, sometimes it’s not your day or sometimes it just doesn’t work out. ⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣ BUT what did finally work out was nothing short of beautifully delicious. Think of this as a jazzed up, sassier version of a Viccy Sponge, except better in every way. For MY version of the cake, you’ll need:⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣ • Sponge⁣⁣⁣⁣⁣ 100 g Unsalted Butter, room temp⁣⁣⁣⁣⁣ 40 ml Oil (neutral tasting, eg Veg)⁣⁣⁣⁣⁣ 200 g Caster Sugar⁣⁣⁣⁣⁣ 4 Large Eggs, plus 1 Yolk⁣⁣⁣⁣⁣ 140 g Potato Starch, sifted (can sub for cornflour)⁣⁣⁣⁣⁣ 140 g 00 Flour, sifted (can sub for Plain/AP)⁣⁣⁣⁣⁣ 1 tbsp Baking Powder, sifted⁣⁣⁣⁣⁣ 1 tsp Vanilla Bean Paste⁣⁣⁣⁣⁣ • Filling: Custard⁣⁣⁣⁣⁣ 500 ml Whole Milk⁣⁣⁣⁣⁣ 1 tsp Vanilla Bean Paste⁣⁣⁣⁣⁣ 6 Large Eggs, yolks only⁣⁣ 100 g Caster Sugar⁣⁣⁣⁣⁣ 20 g Plain Flour, sifted⁣⁣⁣⁣⁣ 20 g Cornflour, sifted⁣⁣⁣⁣⁣ 250 ml Double Cream, fridge temp⁣⁣⁣⁣⁣ • Filling: Raspberry⁣⁣⁣⁣⁣ 350 g Frozen Raspberries⁣⁣⁣⁣⁣ 15 g Caster Sugar⁣⁣⁣⁣⁣ 1 tbsp Cornflour, sifted⁣⁣⁣⁣⁣ • Crumb Coat & Mound⁣⁣⁣⁣⁣ 100 g Mascarpone⁣⁣⁣⁣⁣ 25 g Icing Sugar⁣⁣⁣⁣⁣ ½ tsp Vanilla Bean Paste⁣⁣⁣⁣⁣ 300 ml Double Cream⁣⁣⁣⁣⁣ • To Finish⁣⁣⁣⁣⁣ Marzipan⁣⁣⁣⁣⁣ Green Food Colouring⁣⁣⁣⁣⁣ Pink Food Colouring⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣ I’ll try and squeeze in a super basic method below in the pinned comments 👇🏽 but a full detailed recipe went out in my newsletter a while back - just search for Prinsesstårta in the search bar to find 🖤⁣⁣⁣⁣ ⁣⁣⁣⁣⁣ #aroundtheworldin80cakes #sweden #creamcake #fruitcake #marzipan #raspberry #cake #swedishfood #freshcreamcake #princesscake #prinsesstårta

Some say it didn’t have raspberry jam from the beginning, either or I like it!
