FRIES:
3 large Russet potatoes
Vegetable oil, for frying
2 tablespoon salt
GRAVY:
6 tablespoon (90g) unsalted butter
¼ cup (32g) all purpose flour
4 cups (960ml) beef stock
1 tablespoon Worcestershire sauce
1/2 tablespoon dark soy sauce
½ teaspoon salt + more to taste
½ teaspoon black pepper + more to taste
3 tablespoon cornstarch
2 tablespoon water
2 cups (250g) Cheese curds
chives!
Steak

BUDid you know real poutine is illegal outside of Quebec ?
Well, kinda. I’ve gone to great lengths researching why you can’t find good poutine the second you cross the Quebec border, considering this is the only uniquely Canadian cultural food celebrated internationally it actually pains me. And then, I figured it out. Because poutine is so popular in Quebec, Casse Croutes and lux friteries source fresh curds.
Fresh curds you say? That’s simple… Not really! Every province outside of Quebec has strict food handling laws which make it so curd is perishable, meaning you have to refrigerate it. Problem is when you refrigerate curd, the casein protein responsible for its squeak becomes tense instead of rubbery. The problem is systemic, they do not want us to have good poutine. That’s where @summitstationdairy came in super clutch.
After almost a year of applying myself to cooking I have successfully reverse engineered a poutine to the likes of Chez Claudette or Patati Patata. I really breathe this and I won’t hear an ounce of slander about the Quebecois or this particular poutine.
I started by building a heavy fond with the scraps of a Bavette, some onions and garlic. Then I reduced campbells box stock to build a proper sauce brun. Adding Worcestershire, salsa soya, a pinch of acidity and seasoned to perfection. Once I really lock in the fry this thing is 1:1.
