Place back side up and find the oysters. Avoid the oysters when cutting out the backbone and save as a pit snack. Using a sharp knife or poultry shears cut along one side of the backbone Optionally cut along the other side of the backbone and remove it Make a small slit in the cartilage between the breasts Put a hand on each side and press down to splay it out Flip it around and use your thumbs to loosen the keel bone and pull it out Flip it over and tuck the wings, secure with toothpicks if they don’t want to stay tucked on their own #bbq #chicken #spatchcockchicken #spatchcock #bbqtips #howto #cooking

Recipe ⬇️ This roast chicken is not only perfect for a Sunday dinner, but is even better for all the turkey-haters on Thanksgiving! 🦃🍗 INGREDIENTS 🌿 * 3 lb Whole chicken * ¼ cup Extra virgin olive oil * 2 heads Garlic - halved * 2 Vidalia onions - quartered * 2 Lemons - quartered * 4 springs Fresh thyme Spice Rub * 1 tablespoon Garlic powder * 1 tablespoon Onion powder * 1 tablespoon Brown sugar * 2 teaspoon Smoked paprika * ½ teaspoon Ground mustard * 1 teaspoon Kosher salt INSTRUCTIONS * Preheat the oven to 375°F. * Pat the chicken skin dry with a paper towel. * Add the spice rub ingredients into a small mixing bowl. Mix until all the spices are combined. * Using kitchen shears, cut two slits along the backbone of the chicken, to remove it. Once removed, flip the chicken over and press firmly on the breastbone to flatten the chicken. * Transfer the spatchcocked chicken to a cast iron skillet. * Drizzle the chicken with the olive oil, and season the chicken with salt and pepper on both sides. Sprinkle the spice rub onto the chicken skin, and rub into the olive oil until the skin is completely coated with the seasoning rub. * Arrange the lemon, onion, garlic, and thyme springs into the skillet with the seasoned chicken. Roast the chicken for approximately 1 hour, or until the internal temperature reaches 165°F on a meat thermometer. * Once the chicken is cooked, remove it from the oven and cover with foil. Let the chicken rest for 10 minutes before carving it.

Broiler Chicken Series Episode One: Spatchcock Chicken (oven roast) Heeeey guys!!!!! Welcome to my new series. I am soo excited for this series you have no idea!!! Starting us off is this tasty oven roasted chicken. I spatchcocked mine but you can cook yours whole. Let’s get in to it…. You’ll need * 1 whole chicken (obviously) * 3 tbsp oil (I used melted butter) * Juice of 1 lemon * 2 tsp paprika * 1 tsp garlic powder * 1 tsp onion powder * 1/2 tsp cumin powder * 1 tsp mixed herbs * 1/2 tsp black pepper * 1 tsp salt (adjust to taste) * 1 tsp Ajinomoto (MSG) How to spatchcock the chicken: * Place the whole chicken breast-side down on a clean surface or board. * Using kitchen scissors, cut along both sides of the backbone and remove it completely.( I used a knife) * Flip the chicken breast-side up. * Press firmly on the breastbone with your palm to flatten the chicken Method: * Pat the chicken dry with paper towels. * In a bowl, mix the oil, lemon juice, and all the spices * Rub the mixture generously all over the chicken front and back making sure to get some marinade under the skin on the chicken breast * Marinate for at least 1 hour (I did mine overnight). * Preheat the oven to 180°C * Place the chicken on a baking tray lined with foil or parchment, skin-side up. You can add some veggies if you like, I did potatoes and onions * Roast for 45-50 minutes at 200°c basting halfway through with the pan juices. * Rest the chicken for 10 minutes before cutting. One-Pan 45 min Roast Chicken 🍗 Ingredients: - 1 whole chicken @magnessfarms - 2 tbsp oil, 2 garlic cloves, handful tarragon, half lemon zest, salt & pepper - 300ml chicken stock - a few potatoes per person, cubed - diced veggies (pepper, courgette, onion) - smoked paprika, garlic, salt & pepper - hot sauce @orrissandson - parsley 1. Grab some kitchen scissors, cut out the back bone, push down the middle and flatten the bird in a tray, cover with your marinade, 300ml chicken stock & get in the oven at 220 degrees C for 45 mins total 2. After 15 mins add your potatoes & veggies, add some extra herbs & spices with some oil 3. After 45 mins, check the temperature of your chicken breast & thighs (aim for 73 degrees C for full safety), rest and add your veggies and potatoes back 4. Pull all of the chicken off your bird after 5-10 mins and save the bones for stock 5. Plate up and cover with your favourite hot sauce, parsley and enjoy! #onetraydinner #spatchcockchicken #fromscratch #familydinner

Spatchcock chicken on the BBQ just hits different. And this one, wow! Smoky, tangy and absolutely delicious! This is my version of chicken with alabama white sauce. You can do this with spatchcocked chickens or just chicken thighs if you want. Make sure you brush on the sauce a few times to really build that flavour then save plenty for dippage. Here's the recipe... 200ml mayonnaise (I used @kewpie_official) 60ml apple cider vinegar 1tbsp Dijon mustard 1tbsp brown sugar 2tsp horseradish 1tsp lemon juice ½ tsp Worcestershire sauce 1tsp hot sauce ½ tsp garlic powder ½ tsp onion powder ¼ tsp cayenne pepper Salt and pepper to taste I've cooked this directly over charcoal at around 200c on my @kamadojoeuk Joe Junior using the sear grate to help build more colour and flavour Give this a go and let me know what you think! #spatchcockchicken #grilledchicken #bbqchicken

Lemon Butter Spatchcock Chicken in the Air Fryer Ingredients: - 1 whole chicken, spatchcocked - 4 tbsp salted butter, softened - 1 tablespoon onion powder - 1 tablespoon ground cumin - 1 tablespoon garlic powder - 1.5 teaspoon salt (adjust to taste) - 1 teaspoon paprika - Zest of 1 lemon - Juice of 1 lemon - 1 teaspoon cayenne pepper (adjust to taste) Instructions: Prepare the Chicken: - Ensure the chicken is spatchcocked (backbone removed) for even cooking. - Pat the chicken dry with paper towels. Lemon Butter Mixture: - In a bowl, mix softened butter, onion powder, garlic powder, salt, paprika, cumin, lemon zest, lemon juice, and cayenne pepper until well combined. Coat the Chicken: - Rub the lemon butter mixture evenly over the spatchcocked chicken, ensuring it’s well coated on both sides and under the skin. Preheat the Air Fryer or oven - Preheat to 375°F (190°C) Air Fry: - Place the chicken in the air fryer basket, skin side up. - Cook for approximately 25 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy. Adjust time based on your air fryer model and size. In the oven cook for 60 to 70 minutes. Rest and Serve: - Allow the chicken to rest for a few minutes before carving. Here’s some tips to check your chicken for doneness without a thermometer, you can check for doneness using these visual and textural cues: 1. Color:The chicken should have a golden-brown color, and the skin should be crispy. 2. Juices:Pierce the thickest part of the chicken (usually the thigh) with a knife. If the juices run clear and not pink, it’s likely done. 3. Texture:The chicken meat should be firm to the touch, and the skin should be crispy. 4. Internal Appearance: Cut into the thickest part of the chicken. If the meat is opaque and there are no traces of pink, it’s likely cooked. Keep in mind that these methods are less precise than using a thermometer, so exercise caution and ensure that all parts of the chicken, especially near the bones, are fully cooked to avoid foodborne illness. #spatchcockchicken
