Recipe for sticky date pudding For the Pudding: - 1 cup (175g) pitted dates, chopped - 1 cup (250ml) boiling water - 1 tsp baking soda - 75g unsalted butter, softened - ¾ cup (150g) brown sugar - 2 large eggs - 1 tsp vanilla extract - 1 ¼ cups (190g) plain flour - 1 ½ tsp baking powder - ¼ tsp salt *For the Toffee Sauce:** - 1 cup (200g) brown sugar - 100g unsalted butter - 1 cup (250ml) heavy cream - 1 tsp vanilla extract Instructions 1. Preheat the Oven Set your oven to * 180°C (350°F) Grease a baking dish (8-inch square) or individual ramekins. 2. Place the chopped dates in a bowl, pour over the boiling water, and stir in the baking soda. Let it sit for about 0 minutes to soften. Mash lightly with a fork. 3. Make the Batter: - In a large bowl, cream together the butter and brown sugar until light and fluffy. - Beat in the eggs one at a time, then add the vanilla extract. - In a separate bowl, whisk together the plain flour, baking powder, and salt. - Gradually fold the dry ingredients into the wet mixture. - Stir in the softened date mixture until just combined. 4. Pour the batter into the prepared dish or ramekins. Bake for 30–35 minutes (or 20–25 minutes for ramekins), until a skewer inserted comes out clean. 5. *Prepare the Toffee Sauce: - In a saucepan over medium heat, melt the butter and brown sugar together. - Add the cream and vanilla, stirring continuously. Sticky Date pudding!! You’ve got to try this easy warm, gooey sticky date pudding! Best of all, you throw it in a slow cooker, which uses less energy than a traditional oven, and it’s SO simple to make! Ingredients - 400g dates - 1 teaspoon baking soda - 1 cup boiling water - 60g butter, room temperature - 150g brown sugar - 30g white sugar - 2 eggs - 160g plain flour - 1 teaspoon baking powder Sticky caramel sauce - 150g brown sugar - 84g butter, cold cut into cubes - 360g heavy cream Method 1. Pit the dates and cut into small pieces. Place them in a bowl and add the baking soda and boiling hot water. Mix well and set side aside to soften. 2. Place the room temperature butter and sugars in a large bowl and whisk until well combined. Add the eggs and whisk again until doubled in size. Fold in the softened date mixture and the flour and baking powder. Do not over mix. 3. Butter the slow cooker generously and fill it with the pudding mixture. Turn it on low for 4 hours. 4. To make the caramel add the brown sugar and cubed butter in a saucepan over medium heat and continue to stir until melted. Add the cream and continue to cook for 5 minutes. It will get thicker as it cools. 5. Once the pudding is cooked and still warm, prick holes in the pudding and pour half the caramel mixture on top. Even better, it’s gluten-free, dairy-free, vegan, and refined sugar-free—but you’d never know it from the taste! Date Cake 3/4 cup boiling water 1 cup pitted dates, packed 1 tsp baking soda 2 cups oat flour (I make my own by blending gluten-free oats in a high-speed blender) 1/4 cup coconut sugar 2 tsp pumpkin spice 1 tsp baking powder 1/2 tsp salt 1 tsp pure vanilla extract 2 flax eggs (or regular eggs) 1/3 cup olive oil Caramel Sauce 1 cup canned full-fat coconut milk 2/3 cup coconut sugar 1 tsp pure vanilla extract 1/2 tsp salt Instructions 1. Make the caramel sauce: In a small saucepan, combine the coconut milk and coconut sugar. Stir well, then heat over medium until it reaches a gentle boil. Reduce to low and simmer for about 15 minutes, stirring often to prevent burning. Remove from heat, stir in the vanilla and salt, and set aside. 2. Soak the dates: Chop the dates into small pieces and place them in a heat-safe bowl. Pour the boiling water over the dates, mix in the baking soda, and let soak for 10–15 minutes. 3. Mix the dry ingredients: In a separate bowl, whisk together the oat flour, coconut sugar, pumpkin spice, baking powder, and salt. 4. Add the wet ingredients: Add the soaked dates along with all the soaking liquid to the dry mixture. Add the flax (or regular) eggs, olive oil, and vanilla. Stir until smooth and well combined. 5. Assemble: Preheat the oven to 350°F (175°C) And grease a 7x11 glass baking dish. Pour in the batter and smooth the top. 6. Bake: Bake for 20 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool slightly, then poke holes across the surface with a fork. 7. Top: Pour the caramel sauce evenly over the warm cake. If desired, drizzle a bit of extra coconut milk over the top for added richness and moisture (highly recommend!). 8. Sticky Date Cake with Miso Butterscotch Sauce. Cannot go wrong. Sticky date pudding was one of the first things I learnt how to bake as a teenager. Here it is, the cake version with a salty twist on the sauce. Serve with ice cream. 500g dates, chopped 2 tsp bicarb soda 850ml boiling water 250g unsalted butter, softened 250g brown sugar 2 tsp vanilla essence 4 eggs, room temperature 480g all purpose flour, sifted 20g baking powder 1 tsp salt 150g unsalted butter, chopped 250ml thickened cream / heavy cream 250g brown sugar 1 tbsp miso paste Preheat oven to 180°C Grease and line a cake tin or roasting tray with baking paper (I’m using a 7cmx22cmx28cm dish) In a heat proof bowl, soak the dates and bicarb soda in boiling water, leaving it uncovered for about 20 minutes until the dates soften. Use a stand mixer or hand mixer to beat together the butter, brown sugar, and vanilla until they become pale and creamy. Then, add the eggs one at a time, ensuring thorough mixing after each addition. Use a fork to mash the dates so that the mixture thickens. Lumps are ok! Then gently stir in the softened date mixture, flour, baking powder and salt until everything is just combined. Transfer the mixture into the prepared cake tin and bake in the preheated oven for 45-60 minutes, or until a skewer inserted into the centre comes out clean. Allow the cake to rest for 10 minutes before turning it out onto a wire rack. In a saucepan over medium heat, combine the butter, cream, and sugar, stirring until the sugar has completely dissolved. Let the mixture simmer for 8-10 minutes until the sauce thickens slightly. Once off the heat, add miso paste through a fine sieve and mix to combine. Save this recipe to make for your next dessert 👀 We’ve seen the viral Sticky Date Pudding all over our feed recently so we had to share with you our version! Sticky Toffee Puddings with Salted Caramel Sauce 🧡🤤

Makes: 6
Time: 35 minutes Puddings:
1 cup almond meal
1/2 cup flour (GF option: buckwheat flour)
3/4 cup plant-based or dairy milk
1/4 cup maple syrup
1/3 cup coconut oil, melted
2 tsp ginger, ground
1 tsp baking soda
1 tsp apple cider vinegar
1/2 tsp sea salt
1 cup dates, soaked in boiling water and drained Salted Caramel Sauce:
1/2 cup water
1/4 plain plant based or dairy yoghurt
1/2 cup coconut sugar
1 1/2 tsp cornstarch
1 tsp sea salt To Serve:
6 scoops of plant based or dairy vanilla ice cream  Method:
Preheat the oven to 180C.

Add all of the pudding ingredients, excluding the soaked dates, to a bowl and mix until well combined. 
 Roughly mash the dates with a fork until they create a chunky paste. Add them to the pudding mixture and evenly mix them through. 
 Grease a muffin tin and fill 6 holes with the pudding mixture. 
 Place in the oven for 20 minutes or until golden brown. 
 To make the caramel, place all the ingredients in a small pot and bring to the boil. Continue to boil, stirring constantly, for 30–60 seconds to thicken. Once thick, remove the caramel from the heat and set aside.
 Once the puddings are out of the oven, divide them between bowls and serve warm with a generous amount of caramel sauce and a scoop of ice cream. Leftovers will last in an airtight container in the fridge for up to 7 days. #stickydate #stickydatepudding #dessert #caramelsauce #toffeepudding #dessertsofinstagram

SAVE, SHARE & DOUBLE TAP if you like the recipe 🥰 INGREDIENTS: 125 grams of unsalted butter, softened 1/4 cup of light brown sugar 2 eggs 1 tbsp of date molasses 1 tsp of vanilla 150 grams of flour (or 3/4 cup) 6 medjool dates, seeds removed and chopped 1/4 cup of water 1 tbsp of bicarbonate soda Caramel sauce: 50 grams of unsalted butter 1/2 cup of brown sugar 1/4 cup of cream Pinch of sea salt You can bake in those ramekins or any traditional cake /oven dish you have. If you’ll go for the ramekins, they’ll need 20-25 mins in a preheated oven ~180 degrees. The batter should be slightly undercooked and it’ll be become more sticky when you pour the hot caramel sauce over. Also let me know what other cakes or desserts you wanna see in the comments below👇🏼

⚠️GROSS-OUT ALERT⚠️That date sludge might look like something that came out of Dozer but it’s the secret to the best sticky date pudding!!! - N x ❤️ (I bet someone berates me for that caption😂) Sticky Date Pudding 280g / 9oz pitted dates , roughly chopped (Note 1) 1 tsp baking soda / bi carb soda 1 cup / 250 ml boiling water 40 g / 1/4 cup brown sugar , loosely packed 80 g / 6 tbsp unsalted butter , softened 2 eggs , at room temperature 1 1/4 cups / 185 g plain flour (all purpose) 1 1/2 tsp baking powder BUTTERSCOTCH SAUCE: 200 g/ 1 1/4 cups brown sugar , loosely packed 375 ml ml / 1 1/2 cups thickened cream (heavy cream) 1/2 tsp vanilla extract 70 g / 5 tbsp unsalted butter SERVING: Ice cream or dolloping cream 1. Grease 7 x 210ml 5 x 8 cm pudding moulds OR 12 muffin tin holds ) with butter OR grease and line a 20 cm / 8" square cake pan with overhang. 2. Sprinkle dates with baking soda, pour over boiling water, stand 10 min, mash until sloppy. 3. Beat butter and sugar until smooth and creamy, beat in eggs until incorporated. Add flour, sprinkle baking powder across surface, mix just until flour is incorporated. Stir in dates. 4. FILL & BAKE: Bake all at 180C/350F (160C fan). Fill pudding moulds 2/3 of the way (bake 25 min), or divide all batter between 12 muffin tin holes (bake 25 min), OR spread into baking pan (bake 35 min). Pierce with toothpick to ensure baked. 5. While hot, poke holes, pour over butterscotch sauce so it soaks pudding (1 tbsp per individual / ½ cup for large pudding), stand 10 min. Turn out, serve with remaining sauce with ice cream! 6. BUTTERSCOTCH: Put all ingredients over medium heat, once butter melted, stir, simmer 2 min, serve warm! #recipetineats #stickydatepudding #pudding
