The World’s Crispiest Turkey There are infinite Thanksgiving turkey methods and all of them have their pros and cons. Some lead to the juiciest meat but chewy skin, while others have the crispiest skin but often lead to dry meat. This method allows you to slowly smoke or roast your turkey for ultimate juiciness while cooking the skin separately for guaranteed crispiness. Simply remove the turkey skin, ideally season then place on a rack for a few hours to dry out, then roast. I roasted at 350F for 10 minutes, flipped and continued roasting, finally cranking the heat to 450F to get it bubbly. Add some weights during the first 10 minutes or so to help it keep its shape. Fried herbs is another great touch that adds a pop of texture and color. I used chopped sage and rosemary, and after about a minute in 350F oil they get super crunchy. Thanksgiving Turkey For the butter: 1lb salted butter 1Tbsp chopped parsley 1Tbsp chopped thyme 1Tbsp chopped rosemary 1Tbsp chopped sage Zest 1 lemon 1 clove garlic zested into paste 1tsp sugar 1tsp salt -Let butter come to room temp -Add all and mix well For the glaze: 2oz neutral oil 1/2 cup soy sauce 1/2 cup maple syrup -Combine and cook while whisking until thickened -Place turkey on a rack.Pat dry turkey, cover inside and outside liberally with salt. -Leave turkey to sit in the fridge for 24 hours -Make compound butter and glaze -Use a wooden spoon to separate skin from turkey, fill with compound butter -Stuff cavity with chopped celery, shallot, lemon -Coat outside of skin liberally with neutral oil -Bake at 375f for 30 minutes, remove from oven and brush well with glaze -Bake another 30 minutes and glaze again -Repeat process until a thermometer at the breastbone reaches 160f -Remove turkey from oven and let rest at least 45 minutes -Slice and enjoy #food #foodie #foodies #recipe #recipes #receta #comida #cocina #cooking #cookingvideo #cookingvideos #turkey #turkeyrecipe #thanksgiving #brine #brined #luxury #finedining #foodporn #chef #privatechef #chefalextrim #holiday #holidays #holidayfood

THANKSGIVING TURKEY!! 🦃🍗 INGREDIENTS FOR THE HERB BUTTER 4 stick of salted butter Hand full of chopped fresh herbs ( rosemary, sage, thyme) 3 tablespoons garlic powder Zest of 3 lemon 3 tablespoons lemon juice 1 tablespoon chicken bullion 3 tablespoons olive oil 2 tablespoons ground black pepper FOR THE DRY BRINE 4 tablespoons garlic powder 3 tablespoons onion powder 3 tablespoons cayenne pepper 4 tablespoons ground black pepper 4 tablespoons salt You’ll also need some onion, carrots, celery and fresh herbs to add in the roasting pan! STEP 1 Pat dry the turkey. In a bowl, combine salt and dry spices and rub salt mixture all over turkey. refrigerate the Turkey uncovered overnight or up to 2 days before cooking. STEP 2 Preheat the oven to 325°F (160°C) and adjust the oven racks so that the turkey will fit. STEP 3 In a small bowl mix all the ingredients for the herb butter and set aside. STEP 4 Remove the turkey from the refrigerator. Use your hands to create a pocket between the skin and breast meat. STEP 4 Add the butter into the pockets under the skin and the holes near the thighs. Massage the butter to create an even layer underneath the skin . Rub the remaining butter all over the turkey. STEP 6 Place onion, carrot, celery, garlic cloves, thyme and sage leaves, in the bottom of the roasting pan. Place a roasting rack into the pan . STEP 7 Now Place the turkey on the roasting pan and cover with an aluminum foil. STEP 8 Roast in the preheated oven for an hour and half and then remove the foil and roast another 30-40 minutes or until the skin is crisp and golden . STEP 9 Rest the turkey for 30 minutes before serving! ENJOY 😊

Whether you’re celebrating Thanksgiving in a few weeks or planning ahead for Christmas, this recipe takes all the stress out of the process. The goal is a golden, lacquered skin, succulent meat, and a glaze that’s equal parts sweet, sharp, and buttery. It’s all about balance. I’ve been making this version for the past 5ish years and the method leans on a few tricks that make all the difference: a two-stage dry brine to ensure juicy, tender and flavoursome meat; a compound butter packed with garlic, herbs and lemon for added depth; and a maple-butter glaze that gives you the most gorgeous, bronzed finish + a turkey-dripping gravy that’ll tie it all together. My go to turkey recipe 🦃 full recipe in caption below ⬇️ in case you missed it last year here it is. You all gave this rave reviews and said it was exceptional! Thank you! I have tried a lot of turkey recipes and this one is the best. This one comes out great, super juicy every time, the key is to temp it and make sure you are following the steps below. Ingredients Turkey 14-16 lbs will be the most aesthetically pleasing but I tested this on a 21lb Compound butter- 2 sticks of butter .25 oz sage .25 oz rosemary .25 oz thyme 1 tablespoon onion powder 1 tablespoon garlic powder Salt and pepper Cheesecloth basting sauce- 3x10 cheese cloth 1 stick of butter 1 tablespoon AP seasoning 2 cups white wine (I used Pinot Grigio) 2 cups chicken broth @kettleandfire .25 oz sage .25 oz rosemary .25 oz thyme Half of a lemon 4 crushed garlic cloves Start by removing the gizzard, beck and plastic pieces in the turkey. Pat it dry. Combine butter, herbs, and seasonings listed above to make a compound butter. Rub this under the skin of the breast and all of the turkey until it is completely coated. Stuff the inside with veggies if you like as well as additional fresh herbs. Tie the legs together with kitchen twine or a thick strip of twisted up cheese cloth. For the basting sauce melt butter on medium low in a pot. Add in white wine, chicken broth, AP seasoning, fresh herbs or dried along with lemon and garlic. Allow this to simmer on low for 5-10 minutes. Add in your cheese cloth until it is drenched in the sauce. Completely cover your turkey in the cheese cloth. Cook at 325F basting every 30 minutes. I found that with the cheese cloth the turkey will cook faster I would say 10 minutes a pound. This will vary on your oven and altitude. Temp it after 2.5 hours and every 15 minutes after until it reaches just under 165F. Repost - Save my recipe for a super flavorful and moist Turkey for Thanksgiving! Start with two sticks of soften butter and add 1/2 tbsp of five spice, 1/2 tbsp of garlic powder, 1/2 tbsp of black pepper, 1 tbsp of salt and 1 oz finely chopped rosemary. Next separate the skin from the turkey meat and smear the seasoned butter under the skin, on top of the skin and then melt the rest in the microwave. Inject the melted season butter into mainly the turkey breast. Then melt 1 stick of butter and 32oz’s of chicken stock in a small saucepan and soak a cheesecloth with it. Place the cheesecloth over the turkey and pour the rest into the pan. Preheat oven to 325F degrees and bake for 15 minutes per pound. Base the turkey every 25-30 minutes. Remove the cheesecloth the last hour and increase the temperature to 375F degrees to crisp the skin. #thanksgivingturkey #turkey #thanksgiving
