Some recipes don’t need a long ingredient list to impress. This Ginger Scallion Chicken is proof, fragrant, juicy, and full of comforting flavours. Ingredients • 400 g boneless chicken thighs, thinly sliced • 40 g ginger, thinly sliced • 3 spring onions (white part chopped, green part cut into large pieces) • 4 cloves garlic, minced • ½ white onion, cut into wedges Marinade • 1 tsp soy sauce • 1 tbsp oyster sauce • 1 tsp sesame oil • ½ tsp white pepper • 1½ tbsp cornstarch Sauce • 1 tbsp soy sauce • 1 tbsp oyster sauce • ½ tsp white pepper • ½ tsp sugar • ¼ cup water Method 1. In a bowl, combine the chicken with soy sauce, oyster sauce, sesame oil, white pepper, and cornstarch. Mix well and allow it to marinate for 15 minutes. 2. In a small bowl, prepare the sauce by mixing together the soy sauce, oyster sauce, sugar, white pepper, and water. Set aside. 3. Heat oil in a pan or wok over medium-high heat. Add the sliced ginger and fry until fragrant and lightly golden. 4. Add the minced garlic and the white parts of the spring onions. Cook briefly until aromatic. 5. Add the marinated chicken and cook without stirring for a minute to allow a light crust to form. Continue cooking for about 5 minutes, stirring occasionally. 6. Add the white onion wedges and stir-fry for 2 minutes. 7. Pour in the prepared sauce and stir well, allowing it to coat the chicken and thicken slightly. 8. Add the green parts of the spring onions and stir-fry for another 1 minute. 9. Finish with a few drops of toasted sesame oil for extra aroma. Serve hot with steamed white rice. Garlic Pak Choy: ✨Ingredients 400–500 g pak choy 1 cup diced shallots 2 tbsp minced garlic 2 tbsp oyster sauce 2 tbsp light soy sauce 1–2 tbsp neutral oil 👉🏻Instructions Wash pak choy and trim the ends. Blanch stems in boiling water for 45 sec, then add leaves for another 45 sec. Drain. Heat oil in a wok, sauté shallots + garlic until golden. Add oyster sauce and soy sauce, stir well. Toss in pak choy, coat evenly, and serve hot with rice or noodles. #cooking #asianfoodie #asiansauces

CHINESE CHILI OIL 🌶️ Chinese, Chili oil is a condiment made by infusing oil with chili peppers. It's used in various dishes and many cuisines, particularly Sichuan cuisine, to add spice and flavor to dishes. Ingredients ½ cup avocado oil or other neutral oil 1 cinnamon stick 1 whole star anise 1 tsp chinese 5 spice 1 tbsp szechuan peppercorns 3 tbsp chili pepper flakes Instructions To make the chili oil in a pot add the avocado oil on high heat and once is gently boiling, reduce heat to low and add in the cinnamon stick, star anise, chinese 5 spice and szechuan peppercorns. Leave them to sit in the oil for 5 minutes. In a small bowl or jar add the chili flakes and place a sieve overtop. Pour the oil through the sieve onto the chili flakes.
