TERIYAKI CHICKEN NOODLES The perfect weekend Fakeaway, quick, easy & delicious. Has the flavours of a Chinese take out, but made at home in under 20 minutes 🥡🥢. Ingredients for 2 For the chicken: - 350g diced chicken thighs - 2tbsp cornflour - Tsp garlic granules & paprika For the sauce: - 2tbsp teriyaki - 2 crushed garlic cloves - 3tbsp soy sauce - Pinch chilli flakes - Tsp cornflour mixed with water For the noodles - 2 nests of dry noodles - 1 sliced onion - 2 spring onions - 2tbsp dark soy sauce - 1tbsp sesame oil Mix all the sauce ingredients together in a bowl. For the chicken use some kitchen roll to get rid of an excess moisture from the chicken. Then toss this in the cornflour and spices. Add a couple spoons of the sauce ingredients and stir. Then get a frying pan nice and hot with lots of low cal cooking spray, once the pan is hot add the chicken and make sure it’s not over crowded and try not to move the chicken too much. Leave it a good 2-3 minutes to cook on each side, so that it goes nice and crispy. When the chicken is almost cooked, reduce the heat of the pan and the sauce and leave this to simmer until it’s thickened and sticky. For the noodles, boil some water and add your noodle nests this takes around 5 minutes. In a wok fry the onion and whites of the spring onion. once soft add the greens of spring onion and cooked noodles, along with sesame oil and soy sauce and stir until the noodles are coated. Serve in bowls with the chicken on top and a sprinkle of sesame seeds and sliced spring onion.

VIRAL HOT HONEY TACO BEEF BOWLS This is my take on the viral hot honey taco beef bowl, with sweet potato & cottage cheese! Gets a 10/10 from us. Follow @kimberlys_journeyy for more recipes like this ⤵️ For two: For the beef - 300g lean beef mince - half packet taco seasoning For the potatoes - 400g sweet potatoes - tsp aromat, smoked paprika & garlic granules For the tomato salsa - half diced red onion - handful diced tomatoes - handful fresh parsley - pinch salt - juice of half a lemon To serve: - half a mashed avocado - 20g hot honey - 2tbsp fat free cottage cheese Start off by cooking your potatoes, cut them into small cubes, add all the seasonings and some spray oil and cook in the airfryer for 20-25 minutes until they are nice and crispy. Add beef to a pan, use a spatula to break up any larger pieces. Then add the seasonings & a splash of water. Then just leave this to simmer for 5-10 mins. Mix together the tomato salsa ingredients. Serve in bowls with the mashed avocado and cottage cheese on top.

It took 30 minutes to make and only one pan. ───────────────────── 🐟 CAJUN SALMON (serves 4) ───────────────────── • 4 salmon fillets (approx. 150g each) • 2 tsp cajun seasoning • 1 lemon (zest + juice) • ½ tsp salt • 2 tbsp olive oil 🍚 CREAMY LEEK ORZO • 300g orzo • 1 large leek, sliced • 2 large handfuls of spinach • 700ml vegetable stock • 150ml double cream • 2 tsp garlic paste • 50g parmesan, grated • 1 lemon (zest + juice) • Small bunch of fresh parsley & dill • ½ tsp chilli flakes • Salt & pepper to taste ───────────────────── 📋 METHOD ───────────────────── 1️⃣ Season your salmon with cajun seasoning, lemon, and salt. Leave to marinate for 30 minutes. 2️⃣ Pan fry the salmon in olive oil for around 10 minutes until cooked through. Set aside. 3️⃣ In a large pan, melt butter and cook your sliced leeks on low heat, stirring occasionally, until soft and caramelised. 4️⃣ Add the orzo and vegetable stock. Stir in the garlic paste, chilli flakes, salt & pepper. 5️⃣ Cook on low heat for around 20 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the stock. 6️⃣ Stir in the double cream and spinach and cook for a few more minutes until the spinach has wilted. 7️⃣ Turn off the heat. Save this chicken dinner recipe for later ✨ Ingredients For the Chicken • 1½ lbs chicken breast (2 large breasts sliced into 4 cutlets) • 1–2 tsp oil • ½ tsp dried thyme • ½ tsp dried oregano • ½ tsp garlic powder • ½ tsp paprika • 1 tsp salt • ½ tsp black pepper For the Breading • ½ cup all-purpose flour • 2 eggs, beaten • ¾ cup plain breadcrumbs • ½ tsp dried thyme • ½ tsp dried oregano • ½ tsp garlic powder • ½ tsp salt • ½ tsp black pepper • 1–2 tbsp neutral oil (for frying) • 2 tbsp butter (for frying) For the Lemon Butter Sauce • 5 tbsp butter • 4 garlic cloves, minced • Juice of 1–1½ lemons (about 3–4 tbsp) • 1½ cups low-sodium chicken broth • 1–2 tsp Dijon mustard • ½ cup heavy cream • Salt and black pepper, to taste • Optional: lemon zest and chopped fresh parsley Instructions 1. Slice chicken breasts into 4 thin cutlets and lightly pound to even thickness. Drizzle with oil and season both sides with thyme, oregano, garlic powder, paprika, salt, and pepper. 2. Set up three bowls: flour, beaten eggs, and breadcrumbs mixed with the seasonings. Coat each cutlet in flour, then egg, then breadcrumbs. 3. Heat oil and butter in a skillet over medium heat. Cook chicken 3–4 minutes per side until golden and cooked through (165°F). Transfer to a plate. 4. In the same pan, melt butter and sauté garlic for 30 seconds. Add lemon juice, chicken broth, and Dijon. Simmer 2–3 minutes. 5. Stir in heavy cream, season to taste, and simmer until slightly thickened. Return chicken to the pan and spoon sauce over the top. 6. Preheat oven to 400 degrees. Ingredients: - Sausage (I used andouille, but any kind you like! If you want to sub for a healthier option, use a chicken sausage!) I used Zummo’s because it’s my culture 🤪 - Cherry tomatoes - Boursin cheese - Orzo pasta - Chicken broth or stock - Baby spinach - Milk (optional*) - Monterrey Jack Cheese (optional*) - seasonings of choice (I used red pepper flakes, Cajun seasoning, dried minced onions, garlic powder, & pepper) Directions: Chop sausage and tomatoes, add all ingredients to casserole dish. Make sure orzo is completely submerged. Cover with foil. Cook at 400 for about 40 minutes or until your orzo is finished cooking. Uncover and stir. When you cook at that scale, recipes slow you down. You cannot stop and measure everything. You learn something else instead. How meals *actually* work. Protein. Carbs. Fats. Fresh stuff. Ingredients: 16 oz wide egg noodles 1 lb imitation crab 2 cups mozzarella cheese 2 tablespoons butter 2 bricks cream cheese 2 cups heavy cream 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon Cajun seasoning Salt & Pepper Sweet Chili Sauce Wonton Chips Green Onion Directions: 1. In a sauce pan, melt together butter, cream cheese, and heavy cream until smooth. 2. At the same time boil and drain egg noodles. 3. In a casserole dish add cooked noodles, flaked crab meat, and 1 cup shredded mozzarella. 4. Pour over cream cheese mixture and mix all together. 5. Top with remaining cheese. 6. Bake in oven at 400 degrees for 20 minutes. 7. Top with sweet chili sauce, wonton chips, and green onion. #easyrecipes #weeknightmeals

ONE PAN RISONI MARRY ME CHICKEN 🍗 Ingredients • 3 chicken breasts, diced • 1 tbsp olive oil • 3 garlic cloves, crushed • 1 ½ tsp paprika • ½ tsp garlic powder • ¼ tsp onion powder • ½ tsp dried oregano • 2 tsp salt • ¼ tsp pepper • ½ cup sundried tomatoes • 1 cup risoni pasta • ¼ cup tomato paste • 300 ml cream • 2 ¾ cups chicken stock • ½ cup grated Parmesan • A large handful of spinach • Squeeze of lemon Serves 6 ⸻ Method 1. Dice chicken and place into a bowl. 2. Heat a large frypan over medium–high heat. 3. Add oil and cook chicken until browned. 4. Add garlic and all spices; mix well. 5. Stir in sundried tomatoes and risoni. 6. Add tomato paste, then pour in cream and chicken stock. 7. Cover and cook on low for 10–12 minutes, stirring frequently so the risoni doesn’t stick to the bottom. 8. Add spinach to wilt, then stir through Parmesan until melted. 9. Finish with a squeeze of lemon.
