The BEST flour on the shelf. 🌾 Traditional wheat and flours are hybridized which means they have been cross-bred so they can have higher yields when being farmed. However there are some consequences to this. More synthetic fertilizers are used on these types of wheats, they have less nutritional value, and they have a MUCH higher Gluten index which is why wheat and flour is so hard for some people to digest. ❌ Non-Hybridized wheat/flour, like Virgin Wheat, also known as “Einkorn”, is what you need to switch to. I started baking with Einkorn in 2024, and since then, we’ve seen real changes in our family’s health—especially for my daughter, who reacts to modern wheat. Einkorn isn’t always the easiest to work with, but the benefits are 100% worth it. More recently, I started trying other ancient grains—spelt, khorasan, and emmer—and honestly, I’ve fallen in love with each one. They all have their own texture, flavor, and strengths in the kitchen. Spelt especially has become a favorite—it’s much easier to bake with and works really well for pancakes, cookies, and pizza dough. As someone who has struggled with gluten intolerance most of my life (but worse as I’ve gotten older) fresh milling regeneratively grown ancient and modern grains has been life-changing. Unfortunately, most modernized and hybridized wheat grains are grown for quantity not quality. Wheat is grown nowadays with a much higher gluten content compared to ancient grains and sprayed with toxic pesticides, so it’s no wonder that so many of us struggle with eating breads and baked goods from the store. Let’s face it, most “bread” isn’t actually REAL bread. If it has a laundry list of ingredients, it’s not fueling your body it’s hurting it and causing chronic inflammation. This is why learning to make your own bread at home is such a great first step in claiming back your health. Especially, for the 46% of the population that has the MTHFR gene mutation. Folic acid (synthetic version of folate) that’s in all enriched flour is toxic to their bodies because they can’t detox properly. This is why using unbleached and unenriched flour if you’re starting your journey is so important! I’ve been fresh milling ancient grains since 2021 and adding a portion into my sourdough loaves with organic bread flour, but it wasn’t until this summer that I really started 100% fresh milling for everything. It has changed the way my body can absorb and process nutrients. Sourdough unlocks the full potential for our bodies to process nutrients in bread and baked goods when fermented properly, so it’s a win-win. If you’ve wanted to start your fresh-milling journey here’s what I would do: + Invest in a grain mill. Mine is the “Harvest Grain Mill” from @nutrimill that uses stones to grind the grains (best option) but they have a ton more you can snag! Get $20 off any of their mills with code: SOURDOUGHSPARROW. + Purchase high quality grains (organic and regenerative is best). I prefer Einkorn, Kamut, & Hard White Wheat for sourdough bread. My favorite place to buy grains is from @grandtetonfamily. + Be patient! There’s a learning curve. Save this if you want to make your own einkorn sourdough starter. Einkorn is a true ancient grain that has never been hybridized. It’s a great choice because because most hybridized wheat aka most wheat on the market is super inflammatory, whereas einkorn actually has anti inflammatory properties and is tolerated and digested easily. It can be a bit of a learned curve because it absorbs less water AND absorbs it slower making the resting periods key, resist the urge to add more water even when the starter or dough appears thick. Here’s how I make my starter: 1/2 cup einkorn flour 1/4 cup warm water Mix, cover and set in a warm place (at least 68-72 degrees, I find the 71-72 sweet spot to work best for me but you may need to play with where you set this for best results depending on the temp of your home / how drafty the kitchen is etc. Day 2 discard 2/3 of the starter and feed again with 1/2 cup einkorn and 1/4 cup water. Repeat this process for 5-7 days until bubbly and sourdough doubles in size within about 4-8hrs. A few months ago we made the switch to a home grain mill and we love it! Here's why: 1️⃣ Did you know that wheat berries can be viable for over 30 years in proper storage conditions? By comparison, flour has a nutritional shelf life of only 7 days from the time it's milled! 2️⃣ A wheat berry is like an egg in that it is a balanced source of protein, fat, and carbs, and also contains many vitamins and minerals. It consists of 3 parts: the bran (which contains protein, fiber and nutrients) and germ (which contains fats, protein, vitamins and minerals), and the endosperm, which makes up about 83% of the berry and contains protein, carbohydrates, iron and B Vitamins. When milled whole, wheat berries become a flour fit for a hearty meal. 3️⃣ Most store bought flour is a white bleached flour that has both the bran and the germ removed. Without the fats, fiber, and extra protein that those provide, the result is a starchy carbohydrate whose nutritional value is zero before it ever leaves the shelf. Which means our modern carb filled, sugary, nutrient lacking breads are a far cry from what bread once was, and what it is supposed to be. 4️⃣ Purchasing wheat berries is quite a bit cheaper than flour. While the grain mill is an upfront investment, it pays off in the long run. And with the ability to store wheat berries for a much longer period of time, we can stock up on more to help make our family less susceptible to food shortage crisis. 5️⃣ Which brings us to Ezekiel bread. The prophet Ezekiel was able to be sustained solely on Ezekiel bread rations for one full year. This isn't the exact recipe, but it is inspired by the description in Ezekiel 4:9. If you have no other means of developing self sustainability and independence from the food system, this is a great option that anyone can do!
