Forget about bread and milk! You need brownies to get through a winter storm! We expect to lose power tonight and when we do, we will comfort ourselves with these fudgey brownies with a crackly top from Sweet Tooth, the @bromabakery cookbook. For extra comfort, we added more dark chocolate chips. Semisweet and milk chips would also be delicious. Stay safe, everyone! Crackle Top Brownies 3/4 cup (1 1/2 sticks) unsalted butter 3/4 cup Dutch-processed cocoa powder 1 teaspoon vanilla 1 3/4 cups packed light brown sugar 3 large eggs, room temp 3/4 cup AP flour 1/2 teaspoon salt 1 cup bittersweet chocolate chips Heat oven to 350F. Line an 8X8 square baking pan with parchment, with overlap in all sides. Place butter in a large measuring cup and microwave for one minute. Add cocoa powder and vanilla and whisk until smooth. In a stand mixer with the whisk attachment, beat brown sugar and eggs until mixture lightens and is smooth, about three minutes. Slowly add chocolate mixture on low speed and mix just until incorporated. With a spatula, fold in the flour and salt until no streaks remain, then fold in chocolate chips. Pour batter into prepared pan and spread evenly. Bake for 25-30 minutes until surface is shiny and a toothpick or skewer inserted into the center comes out with just a few crumbs. Let cool in pan, then lift out and cut into squares. #twobeachesbaking #durhamfoodie #fern

A sweet friend gifted my family the fanciest bar of dark chocolate with raspberry flakes and I decided to turn it into a spell for my family to share. This recipe is an adaptation of @marthastewart fudgy double-chocolate brownies, and my favorite brownie recipe in the whole world. 🍫✨ Fudgy Raspberry Brownies 3/4 cup all-purpose flour 2 tablespoons cocoa powder 3/4 teaspoon kosher salt 8 ounces bittersweet or semisweet chocolate in chunks 1 1/2 cups white sugar 3 large eggs 2 teaspoons vanilla extract ~2 tablespoons crushed freeze dried raspberries Flakey sea salt to garnish Preheat oven to 350°, then butter and line a 9-inch square baking pan with parchment. In a medium bowl, whisk together flour, cocoa, and salt. Set aside. In a large heat proof bowl combine butter and chocolate and set over a pot of simmering water to melt. Stir until melted. Remove from heat and whisk in sugar until fully incorporated. Add eggs, one at a time. Then whisk in vanilla until glossy and smooth. Gently stir in flour mixture with a spatula until combined. Pour batter into prepared baking dish and top with crushed raspberries and flakey salt to taste. Bake until top is shiny and crackly and a tester comes out clean, about 35 minutes. Let brownies cool completely before cutting into squares. Store in airtight container at room temperature up to 2 days. Baking note: freeze dried raspberries will brown in the oven, but won’t taste burnt. These chocolate brownies will make everyone happy - an incredible fudgy centre, chewy edges and a crisp meringue-like top! Ingredients: 150g unsalted butter 150g dark chocolate (70%) 450g caster sugar 1/4 teaspoon of salt 1 tbsp vanilla extract 3 large eggs 185g plain flour 3 tbsp cocoa powder Method: 1. Sieve flour and cocoa powder into a bowl.  Set aside. 2. Melt butter and chocolate over a bain marie until melted and glossy. Remove from heat and leave to cool. 3. Beat eggs and caster sugar with a spatula or wooden spoon until combined. 4. Add vanilla and salt and mix briefly until combined. 5. Add your sieved flour and coco powder and again mix until just combined.  Do not over-mix! 6. Pour into an 8x8 cake tin and bake for approximately 50 minutes at 160C fan.  When testing with a skewer, this should come out with some wetness and crumbs on, but not completely raw. 7. Leave to cool fully before serving. If you want them to set really fudgy, pop them in the fridge for an hour or so, then bring back to room temperature before serving. #homebaker #baking #brownie #nicolehart.bakes

Perfect for weekend baking, lunchbox additions or a post dinner sweet fix. Here’s the recipe: 125 g butter 200 g dark chocolate 1 cup caster sugar ½ cup brown sugar 2 eggs 1 tsp vanilla ¾ cup plain flour ¼ cup cocoa powder ½ tsp salt Optional: chocolate chips or walnuts Preheat oven to 180°C and line a 20 x 20 cm tin. Melt butter and chocolate together. Stir in sugars. Add eggs one at a time, then vanilla. Fold through flour, cocoa and salt until just combined. Pour into tin and bake for 25 to 30 minutes. For that fudgy centre, the middle should still have a slight wobble when you take it out. Let them cool completely before slicing. No need to label food as good or bad. Sometimes it’s just brownies. And brownies are meant to be enjoyed. Save this for your next baking day.

Pro tip: don’t over bake these beauties, and don’t over mix your eggs and sugars, 2-3 minutes is fine. Refrigerate, tightly wrapped, after cooling and they’re even better with a dense texture and superior flavor. Enjoy! Wishing you all a very happy 2026😍 8 oz (226g) unsalted butter 1⅓ c (226g) rough chopped 72% chocolate (I used 64%) 3 T (42g) rough chopped unsweetened baking chocolate ⅔ c (142g) brown sugar 1½ c (300g) granulated sugar 1 t kosher salt 4 eggs 1 egg yolk 2 t vanilla extract 1 ⅔ c (208g) unbleached bread flour ½ c (42g) cocoa powder ½ c (85g) milk chocolate chips Lightly grease a 9x13” quarter sheet pan, then line the bottom and sides with parchment paper and let the excess overhang the pan. Preheat the oven to 375 degrees. Melt the butter over medium heat. Place both chocolates in a heat-proof bowl. Pour hot melted butter over the chocolate and stir until chocolate melts into butter. In a large mixing bowl, combine both sugars, salt, eggs, yolk, and vanilla. Use a hand mixer to whisk vigorously until the mixture is pale in color and very creamy, 2 minutes (this ensures a shiny, flakey top on your brownies). Add melted chocolate-butter mixture to egg mixture and whisk until combined. Fold in flour and cocoa powder with a spatula, mixing only until combined. Spread brownie batter in prepared pan and smooth. Rap pan on the counter a couple of times to release any air bubbles. Sprinkle chocolate chips over the top and gently press some into the batter. Transfer the pan to the oven and bake 10 minutes, the rotate pan and bake about 15 minutes more, until a cake tester comes out with a few moist crumbs. Remove from the oven to a wire rack and cool in the pan. Refrigerate for a day, tightly wrapped, and they’re even better. #chouquettekitchen #bestbrownies #bake #happynewyear #chocolate
