Anzac biscuits for ANZAC DAY 2025. Lest we forget. 🌹 ANZAC BISCUITS (Makes 16 to 18)   1 cup plain flour (150g, all-purpose flour) 1 cup rolled oats (100g) 1 cup desiccated coconut (80g) 3/4 cup (165g) white sugar, preferably caster / superfine 150g / 5oz unsalted butter 4 tbsp golden syrup (sub 1 tbsp light molasses OR treacle plus 3 tbsp honey) 1 tsp baking soda (bicarbonate soda)   DIRECTIONS 1. Mix flour, oats, coconut and sugar. 2. Melt butter with golden syrup over medium heat. Once it starts bubbling, add the baking soda. Stir to dissolve - it will foam! 3. Pour into flour mixture, mix until combined. 4. Scoop up 1 tbsp of mixture, roll into ball then flatten into a thinnish patty (they don’t spread much). For standard size you buy in packets at the supermarket, use 2 tsp of mixture. 5. Place on paper lined trays 2.5cm/1” apart. Bake 15 min at 180C/350F (160C fan) for crisp or until deep golden, or 12 min or until golden for chewy centres. 6. Cool 5 min on tray then transfer to cooling racks. They will be soft when warm but will crisp up when cooled. Crispy ones stay crispy for a week in an airtight container, after that they soften but still super tasty. Also can crisp up in oven – 5 min at same temp. #recipetineats #anzacbiscuits #Anzacday2025

Find the recipe below or comment RECIPE for the link Ingredients 110g rolled oats 150g plain flour 160g brown sugar 80g shredded coconut 125g butter 25g golden syrup 1 tsp bicarb soda 2 tbsp boiling water Method 1. Preheat oven to 180°C. Line tray. 2. Mix oats, flour, sugar, coconut. 3. Melt butter + golden syrup. 4. Stir bicarb + boiling water into butter (it foams). 5. Pour into dry mix. Combine. 6. Scoop large balls (95–100g) onto tray and slightly flatten each ball with the palm of your hand. 7. Bake 12 mins. DRY 125g wholemeal flour 100g rolled oats 60g desiccated coconut 125g caster sugar WET 125g unsalted butter 2 tbsp honey 1 tsp baking soda (bicarbonate soda) 1. Preheat oven to 180° 2. Add all DRY ingredients to bowl & mix. 3. Melt butter & honey in a saucepan. Once bubbling, add baking soda. Pour into DRY mix. 4. Combine well. 5. Scoop about 1 tbsp mixture, roll in ball, flatten and press down on lined baking tray. 6. Bake for 10 minutes at 180° Makes 10- 12 biscuits #anzac #anzacbiscuits #biscuit #easyrecipe #snack

ANZAC DAY BISCUIT RECIPE With Anzac Day just around the corner, enjoy this recipe from back in my navy days… Ingredients - 175 g rolled oats - 150 g sifted flour - 275 g sugar - 85 g shredded coconut - ¼ tsp salt - ¼ cup golden syrup - 175 g butter - 5 g bicarbonate of soda - 35 mL boiling water Method 1. Begin by mixing the sifted flour, sugar, shredded coconut, and salt in a large bowl. 2. In a saucepan, melt the butter along with the golden syrup. 3. Next, combine the bicarbonate of soda with the boiling water, and then add this mixture to the melted butter and syrup. Thoroughly combine the wet and dry ingredients until well mixed. 4. Spoon the mixture onto a greased baking tray in small dollops. 5. Bake in an oven preheated to 150-160°C for about 15 to 20 minutes, or until the biscuits turn a golden brown. Why not make it an ice cream sandwich? Ingredients: - 2 Anzac biscuits - Your favorite ice cream - Crushed nuts (e.g., walnuts) Butterscotch Sauce: - 100g brown sugar - 100g butter - Pinch of salt - 100ml cream Instructions: 1. Melt butter and sugar together until dissolved. 2. Stir in cream until desired consistency is reached. 3. Add a pinch of salt. Store in a jar in the fridge. I’ve always loved a classic Anzac biscuit — crispy, chewy, and made to last. No surprise they were sent to our soldiers as a little comfort from home. This year, I’ve sandwiched mine with some good quality vanilla ice cream for a simple, sweet twist. ANZAC biscuits ice-cream sandwich Makes 10 1 litre good quality vanilla ice-cream ANZAC biscuits  100 g rolled oats 100 g plain flour 70 g castor sugar 50 g desiccated coconut 5 g bicarbonate soda 25 ml water 125 g butter, melted 20 g golden syrup Method Preheat the oven to 150°C. Line a baking tray with greaseproof paper. To make the ANZAC biscuits, in a bowl, mix the rolled oats, plain flour, caster sugar and coconut together. In a separate dish, mix the water and bicarbonate soda together, then add to the dry mix. Stir in the melted butter and golden syrup then mix until combined. Divide the mix into 20 even portions, approximately. 1 tbsp of mixture per biscuit. Roll the biscuit dough into a ball and place it onto the baking tray. Lightly press the biscuits down gently to flatten slightly. Bake in the preheated oven for 15- 20 minutes or until golden. Remove and then leave to cool. Once the biscuits are cooled, place one biscuit on a serving plate, top it with a scoop of vanilla ice cream, and then add another biscuit on top. Gently squeeze together and enjoy straight away.
