Recipe: Ingredients: Two packages (10.5oz / 300g each) of pre-cooked beets (I used @lovebeets) 2 tablespoons of chopped fresh dill 1/2 teaspoon of salt 1/2 teaspoon of sumac 2 tablespoons of olive oil 2 tablespoons of white vinegar Juice from 1/2 lemon Method: 1. Use a mandoline slicer with julienne blades or a julienne peeler to slice the beets into thin strips. 2. Crunchy walnuts get toasted in brown butter then cut with capers, dijon, lemon, parsley, vinegar, and honey to create this sweet, salty, super punchy dressing with tons of texture and flavour. Simply roasted beets that i’ve torn apart like an animal, drowning in that pan sauce. Magnifique! recipe in my substack <3

Frisée & Beet Salad Recipe: frisée red onion, thinly sliced orange slices goat cheese, for topping pistachios, for topping Beets: red beets golden beets olive oil salt -Preheat oven to 400°F. -Wash the beets, scrubbing off any dirt. Add beets to a large bowl with olive oil and salt. Wrap beets in aluminum foil and add to a baking sheet. -Bake beets for 40 minutes, until fork tender. -Let beets cool completely then peel off the skin and chop into cubes. Honey Orange Dressing: 1/2 shallot, finely diced 1/3 cup olive oil 2 tsp honey 2 Tbsp Dijon mustard 2 Tbsp white wine vinegar 1/2 orange zest 1/3 cup orange juice 1/2 tsp salt 1/4 tsp pepper -Add all ingredients to a bowl and mix until fully combined.

Recipe: Ingredients- 6 precooked beets Handful of chopped dill and mint leaves 1 chopped green onion 2 chopped celery sticks with the leaves Dressing- 1/4 cup of olive oil 1/2 teaspoon of salt 1 teaspoon of sumac 1 tablespoon of champagne vinegar 1 teaspoon of Dijon mustard 1 teaspoon of honey or date syrup Juice from 1/2 lemon 1 minced garlic clove Put all the ingredients in a bowl and stir it well. Method- 1. For a no-mess and easy cleaning of the cutting board, place a baking / parchment paper on your cutting board. 2. Put the beets on the parchment paper, cut them to halves and to thin slices with a crinkle cutter. 3. Grab the edges of the parchment paper with the beets and pour the beets into a nice bowl. 4. Discard the parchment paper. Notice how clean the cutting board is! 5. Add the rest of the salad ingredients to the bowl. 6. Pour the dressing on top and mix it well. Enjoy! And, letting the flavors and textures of simple ingredients shine together through simple prep, is all it takes to make a salad crave worthy, Im clearly still obsessed with fresh parsley and hearts of palm lol. You can’t rip it out of my hands Salad: - 2 cans white cannelloni beans, drained & rinsed - 1 can hearts of palm, sliced - 4-5 small beets, boiled & thinly sliced - 1 bunch radishes, cut in half and thinly sliced (finely chop the greens too) Dressing: - 1 cup fresh parsley - 1/4 cup olive oil - Juice of a small lemon - 1 clove garlic - 2 tsp dried dill - 1 tsp mustard - Salt & pepper to taste

BEET SALAD For the beet LOVERS & HATERS. Full recipe below. Serves 5-8 Beet 8 Large beets ⅓ Cup chopped parsley ⅓ Cup chopped walnuts ½ Tsp salt 2 Shallots sliced thin Balsamic Vinaigrette 3 Tbsp balsamic ⅓ Cup olive oil 1 Small shallot 1 Tbsp honey ½ Tsp salt Pinch of pepper ½ Tsp mustard Whipped Goat Cheese 8 Ounces goat cheese 2 Garlic cloves finely minced or grated ½ Lemon juiced ¼ Cup milk Optional: 4-6 slices of toasted bread. I used the Seeduction bread from Whole Foods -Preheat oven to 375F -Remove beet stems and leaves. Rinse and scrub the beets well then wrap then in aluminum foil and roast in the oven for 75 minutes or until you can easily pierce through the beet using a fork. -Once the beets have cooked and cooled, remove the skin, dice and add to a medium sized bowl -Add all the balsamic vinaigrette ingredients to a blender and blend until smooth. -Pour balsamic vin over the beets and let marinate for 1/2 hour. -While the beets marinate, add all of the whipped goat cheese ingredients to a blender or food processor and blend until creamy and smooth. -Add walnuts, parsley, salt and shallots to the beets and gently mix together -Spread the whipped goat cheese on toast and top with beets or serve on a plate as shown

Wrap each beet loosely in foil and roast for 35–40 minutes, or until fork-tender. Allow the beets to cool slightly, then peel and cut into bite-sized cubes. In a large bowl, combine the roasted beets, diced cucumber, red onion, and fresh dill. In a small bowl, whisk together olive oil, lemon juice (or vinegar), honey, salt, and black pepper. Üzerini geçecek kadar su ilave edip haşlanmaya bırakalım. Pancarları kabukları ile birlikte haşlamak rengini korumasını sağlayacaktır. Yumuşayan pancarların suyunu süzdükten sonra biraz soğumaya bırakalım. Daha sonra kabuklarını soyalım ve her birini küp küp doğrayalım.
