Peruvian Chicken | Full Recipe ⬇️ (Serves 6–8) Ingredients For the Chicken 4–5 lbs bone-in chicken thighs 3 tbsp @ajiamarillosauce 3 tbsp @mama.tere.usa aji panca paste Zest of 1 lemon Juice of 1 lemon 2 tsp paprika 2 tsp cumin 1 tsp dried oregano 5 cloves garlic, minced Salt & pepper to taste For the Aji Verde (Green Sauce) 2 cups fresh cilantro (packed) 2–3 jalapeños, seeded for less heat 3 cloves garlic ½ cup mayonnaise ¼ cup sour cream Salt & pepper to taste Method Marinate the Chicken In a huge bowl, toss chicken thighs with aji amarillo, aji panca, lemon zest, lemon juice, paprika, cumin, oregano, minced garlic, salt, and pepper. Mix well to coat everything evenly. Cover and marinate at least 3 hours (overnight is best). Grill or Roast Preheat your grill (I used my Big Green Egg) or oven to 375°F. If grilling, use indirect heat or a deflector plate to prevent burning. Cook for about 1 hour or until internal temp hits 165°F. Let rest for 10 minutes. Make the Aji Verde Blend cilantro, jalapeños, garlic, mayo, sour cream, salt, and pepper until smooth. Chill in the fridge for at least 30 minutes before serving. Serve Pile the chicken on a big platter. Serve with the chilled green sauce on the side. Watch your friends and family devour it.

Sunday Lamb Shoulder on a @biggreenegguk MiniMax | AD Ingredients: * Leg or shoulder - 1 * Rosemary - 2 sprigs * Garlic cloves - 4 * Dried mint - 2 tsp * Ground fennel seeds - 2 tsp * Paprika - 2 tsp * Chilli powder  - 1 tsp * Olive oil - 3 tbsp * Salt - 2 tsp * Pepper - 1 tsp * Anchovies - 4 * Red wine  - 350ml * Mixture of vegetables (eg 1 chopped onion, 1 potato, 2 carrots, celery sticks) 1. Get your Big Green Egg fired up with the convEGGtor in legs up position with a stainless steel grill on top. You’re aiming for a temperature of around 140°C. 2. Make the marinade - finely dice rosemary and garlic cloves. Add to a pestle and mortar with dried mint, fennel, paprika, chilli powder, salt, pepper and anchovies. Pound to a paste then add the olive oil and mix again.  3. Lightly score the lamb all over then marinade. 4. Place the roughly chopped veg into a heat proof tray, I’m using this lovely tray from @falconenamel , add in the red wine then top with the lamb (ensuring the lamb is propper up by the veg and not in the wine) 5. Place in the Big Green Egg for 3-4 hours. You may need to top up the tray with water as the red wine evaporates. #bgechampion

🔥 Struggling to keep your grilled chicken juicy and packed with flavour? We’ve all been there! The solution? It’s all in the technique, the tare, and the power of cooking over charcoal. That smoky depth from charcoal brings a whole new level of flavour! 😏 I’m grilling up juicy chicken thighs on my @BigGreenEggau, skin-on for crispy perfection. Spray the chicken with sake and a generous amount of salt while grilling to keep it moist; I use the chicken bones to simmer a rich tare sauce, dunking the skewers in it just before they’re done for that caramelised, umami-packed finish. Ingredients: - 6 chicken thighs, skin-on, deboned (save the bones for tare) - Spring onions: white ends in 2cm chunks for skewers, green ends in tare - 1/4 cup sake (for spraying) - Salt and pepper, to season - Sesame seeds for garnish For the Tare: - 1/2 cup soy sauce - 1/4 cup mirin - 1/4 cup sake - 1 tablespoon sugar - 2 garlic cloves, minced - 1 teaspoon grated ginger - Chicken bones from the thighs - Green ends of spring onion - 1 teaspoon sesame oil Instructions: 1.Make the Tare: In a saucepan, simmer the soy sauce, mirin, sake, sugar, garlic, ginger, chicken bones, and green onion ends for 30 minutes. Strain and stir in sesame oil. 2.Skewer the Chicken: Season the deboned chicken thighs generously—alternate chicken pieces with the white spring onion chunks on skewers. 3.Grill & Spray: Fire up the Big Green Egg with charcoal. Grill the chicken skin-side down, spraying with sake to keep it juicy. Flip, spray again, and cook until almost done. 4.Dunk & Caramelise: Just before the chicken is fully cooked, dunk the skew and finish off the grill.
