Meat Stock 🍖 (short simmer, 2-4 hours) - Made by simmering meat on the bone (like a whole chicken, short ribs, or oxtail) for a shorter period. - High in gelatin and easy-to-digest amino acids like glycine and proline. - Best for healing leaky gut, sensitive digestion, and autoimmune conditions because it’s gentle and doesn’t extract excess histamines. Bone Broth 🦴 (long simmer, 12-48 hours) - Made by simmering bones with little to no meat (often roasted first) for a long time. - Extracts more minerals, collagen, and glutamic acid. - Can be too harsh for people with gut issues, histamine intolerance, or inflammation. (Head to may website for a delicious “Homemade Broth” Recipe) Gently frying chopped garlic in olive oil…making sure it doesn’t burn… creates an incredible flavour to boost your broth. Fry until the garlic releases that unmistakenly pungent aroma and then literally dip the whole frying pan into the broth (make sure it’s a clean frying pan!) This will infuse the whole dish. And finally, a squeeze of lemon for a zingy lift and also balance. This is an easy way to make simple food taste layered rather than flat. This isn’t complicated cooking but it can add so much! Roasting bones – deepens the flavour and gives the broth a rich colour. It adds a depth you won’t get from raw bones alone. Adding an apple – a traditional addition. The natural acidity helps draw minerals and gelatin from the bones while adding subtle flavour. Apple cider vinegar – helps extract nutrients and collagen during the long simmer. Whole peppercorns – add warmth and depth without overpowering the broth. Whole basil leaves – bring a gentle herbal note that balances the richness. Ceylon cinnamon – adds mild warmth and rounds out the flavour without making it taste sweet.
