If you haven’t tried buckwheat yet then you are missing out! Despite the name it is gluten free and packed full of antioxidants. The flakes are a great swap for oats too. These no bake buckwheat energy bars bars are also refined sugar free and full of whole foods. Combined with hazelnuts they taste a bit like a good-for-you Ferrero Rocher. Full recipe and nutritional info is on my website www.helenridgeway.com ✅ Save to try Base ingredients: 12 large medjool dates, pitted 1/2 cup peanut or almond butter (120g) 2 tbsp maple syrup 3 tbsp cacao powder 1.5 cups hazelnuts (210g) 1 cup of buckwheat flakes* (or oats) (100g) Topping ingredients: 5 tbsp melted coconut oil 4 tbsp cacao powder 3-4 tbsp maple syrup (Or just use melted dark chocolate as a topping) Chopped hazelnuts to finish 1️⃣ Add all the base ingredients to a food processor and blend until they form a sticky ball. It should be really soft and sticky but if it doesn’t seem sticky enough then add 1-2 tbsp of water and blend again. 2️⃣ Separate into 12 pieces and press down into silicone tray (or cupcake tray/cases) and then put in the fridge whilst you make the topping. 3️⃣ For the topping, mix the ingredients together and pour over the base then top with some extra chopped hazelnuts 4️⃣ Put in the fridge to set and store in the fridge *Feel free to roast your buckwheat in the over for 10-12 mins if you prefer - it’s not necessary as you can eat it uncooked but it gives a slightly nuttier flavour. #energybars #vegantreats #vegansuk #healthytreats #healthydessert #nobake #buckwheat

I keep going back to make it. 💕 It’s so easy, delicious, packed full of nutrients, fiber, low GI and it’s so cost effective! ✨It makes the ultimate avocado toast, perfect for dipping into hummus even to make herby bread crumbs to sprinkle over toasted veggies! Naturally gluten free despite its name buckwheat is a seed. Fermentation improves the bioavailability of certain nutrients such as iron, zinc and magnesium making them more available for the body to absorb. Why Do People Buy Green Buckwheat? #pancakes #dessert #buckwheat #crepes Delicious Green Buckwheat Crepes Ingredients: 1 cup dry green buckwheat 1½ cups coconut milk Any milk works, but the richer and creamier the milk, the creamier the pancakes will taste 3–4 tbsp honey (or any sweetener of your choice) ⅓ tsp baking soda + lemon juice or vinegar (apple cider, rice vinegar, etc.) A few drops of vanilla extract A pinch of salt Instructions: 1. Rinse the green buckwheat and soak it overnight, or at least for a couple of hours. Then drain the water and rinse the buckwheat several times. 2. Blend all the ingredients except the baking soda and lemon juice/vinegar until smooth. 3. Activate the baking soda with lemon juice or vinegar and add it to the batter. The batter will be quite thin. If needed, adjust the consistency by adding more milk or water. Let the batter rest for 10 minutes. 4. Cook over medium heat on a hot pan suitable for pancakes. Grease the pan with oil if necessary.

Crunchy, chocolatey, nourishing snack 🍫🌰 These puffed buckwheat bars taste like a homemade Ferrero Rocher but so easy to make. They’ve got healthy fats, fiber, and antioxidants, and the texture is everything, crisp from the puffed buckwheat, rich from the hazelnut butter, with a smooth dark chocolate layer. Too good! I make my hazelnut butter at home (just roasted hazelnuts in the food processor) but any nut butter works here. You can also swap puffed buckwheat with puffed rice if that’s what you have. These won’t last long, trust me. Save this one. Puffed Buckwheat Chocolate Bars with Hazelnut Butter 🍫🌰 Ingredients * 180 g hazelnut butter (¾ cup) (or any nut butter) * 75 g honey (¼ cup) * 1 tsp vanilla extract * 40 g puffed buckwheat (3 cups) (you can swap with puffed rice) * 200 g dark chocolate (about 1 ¼ cups chopped or chips) * Optional: 2 tbsp hazelnut butter for the chocolate topping * Flaky sea salt Instructions 1. In a mixing bowl, stir together the hazelnut butter, honey, and vanilla extract until smooth. 2. Add the puffed buckwheat and mix until fully coated. 3. Line a loaf pan or glass container with parchment paper and transfer the mixture into it. Press it down firmly using the bottom of a glass or a spatula. I used two containers for this recipe. 4. In a double boiler, melt the dark chocolate. If using, stir in the extra hazelnut butter for a creamier finish. 5. Pour the melted chocolate over the packed buckwheat mixture and spread it evenly. 6. Sprinkle sea salt on top. 7. Freeze for about 2 hours or until the chocolate is firm. 8.
