I use an oven thermometer because you cannot always trust the oven display, and temperature makes a huge difference. Have all your ingredients at room temperature. It helps everything blend together smoothly and keeps the batter stable. Use a lower protein all purpose flour and avoid bleached flour. The right flour gives you a softer, more delicate texture. Use light touches when you incorporate the flour. Do not overmix. I love using my whisk attachment very gently to keep the batter airy. If you want a lighter bake, divide the batter into multiple pans. When you bake everything in one pan, the cake will be darker and heavier. Dividing the batter helps it bake more evenly and stay light. And do not forget to grease your wire rack before flipping the cake, or it will stick to the top. Perfect for layering, frosting, or eating straight off the cooling rack If you try this recipe, tag me, I would love to see your bakes! 💛 📝 FULL RECIPE: Ingredients: 700 g all-purpose flour 400 g sugar 400 g margarine (room temperature) 480 g eggs (approx. 8 large eggs, weighed without shells) 240 ml milk 30 g baking powder (approx. 2 tbsp) 60 ml vanilla essence (approx. 4 tbsp) Steps: Bring all ingredients to room temperature. Grease and flour a 2kg baking tin (or two 1kg tins). Preheat oven to 180°C. Separate egg yolks from whites. Beat egg whites until white and fluffy. Set aside. Cream margarine and sugar together until pale and smooth. Add egg yolks one at a time, beating well after each. Add half the flour mixture and the milk. Mix until combined. Gently fold in the beaten egg whites. Add remaining flour and fold gently until no streaks remain. Pour batter into prepared tin and bake for 50–60 minutes, or until a skewer comes out clean. Even if you brush the layers with a lemon syrup, the butter firms up in the fridge and you still do not get that soft, melt in your mouth texture. Creamy fillings give you a completely different result. Whether you use ganache like I did in this cake, mascarpone, or a whipped frosting, the sponge becomes softer, more moist, and full of flavor because the filling actually gives moisture to the layers. And after one night in the fridge? That is when the magic really happens. The texture gets softer, the flavor gets richer, and the whole cake tastes even more delicious. Grease and flour a 20cm round tin. Cream butter and sugar together until pale and fluffy. Add eggs one at a time, beating well between each addition. Stir in vanilla. Gently fold in the self-raising flour until just combined. Add milk if needed to loosen the batter. Spoon into tin and level the top. Bake for 25-30 minutes until golden, springy to the touch and a skewer comes out clean. Cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely.
