I finally succeeded in making Mozzarella cheese at home. I wasted 2 liters of pasteurized fresh milk and 1 liter of raw fresh milk to understand why. I was quite stubborn in trying to use pasteurized milk from the supermarket to make this, even though I did use rennet. The first time I tried fresh milk, it had rennet but it still failed because I measured the temperature incorrectly. Is Mozzarell cheap where you live? Where I live, it's cheaper to make because it's quick and standard, but when I made it myself, I learned the process and part of the reason why rennet is used when making cheese, it's really special. I'm still researching how to make fresh, soft, and delicious cheese to use in salads. Soft and fresh. I dissolved 1.5 rennet tablets in 20 grams of filtered water I defrosted 2L of fresh milk (by which I mean milk I bought directly from the farm and had it delivered to my house). I didn't have enough knowledge to make it so I was instructed to put it in the freezer. I put 150 grams of vinegar into the pot, then added milk (I didn't stir) and just like that, then heated it to 32 degrees Celsius. I slowly added the rennet to the pot and stirred slowly from top to bottom (of course, still following the recipe). circular path, like a spiral). I just stir like that twice then turn off the stove and leave for about 7 - 10 minutes. When I opened the lid, I got a mass with a texture similar to a giant pudding. I used a knife to cut into checkerboard-shaped squares so that the curds were in direct contact with the rennet. Then I stir slowly until the mixture reaches 40 - 45 minutes. Then filter the curd and keep the water hot to 90 degrees then soak the cheese block in water for about 15-20 seconds, use your hands to stretch the cheese and do so a few times until the cheese is pliable and soft. Wear a thick glove. Store cheese in a jar of cold water and use within 5-7 days. Recipe below. 😋 If you’re interested in learning how to make cheese at home, you just need a few ingredients. ⬇️ Ingredients * 1 gal milk (fresh is best if you have access. Otherwise buy from the store and avoid ultra high pasteurized milk) * 1/4 tablet rennet (there are vegetarian and non-vegetarian options) * 1 and 1/4 tsp citric acid (lemon juice or white vinegar works) * 1-1/4 cup water * Salt to taste Recipe * �Dissolve citric acid and1 cup water into large pot. * �Add milk to the pot and heat to before boiling or 90° (F) * �Dissolve rennet in 1/4 cup water * �Remove pot from heat and add rennet. * Mix gently for about 30 seconds. * �Put the lid on your pot, and let sit 5-10 minutes * �Using a knife that reaches the bottom of the pot, cut cheese curd into cubes. * �Place put back into the stove, heating to 110°, and gently mix curds. Then remove pot from heat. * �Ladle out the curds into a strainer, and press out the whey. (You can also rinse the curds) * �Heat the pot of whey or water to 165° (F) and place the curd ball into the hot water for 10-20 seconds at a time. You can also do this step using a microwave. It’s time to make the original mozzarella recipe that you’ve been anxiously awaiting! Moreover, we made our favorite grilled cheese and tomato soup recipe with the freshly made cheese. You can find the recipe for the soup under my previously shared tomato soup reel. Homemade Original Mozzarella Ingredients For Homemade Fresh Mozzarella: 1 gallon/3.78 liters milk (raw, low temp pasteurized, or non-homogenized milk; avoid using ultra-pasteurized milk) 1 1/2 tsp citric acid+1/2 cup water 1/8 tsp lipase powder+5 tbsp water (optional) 1/4 tsp rennet+4 tbsp water Cheese salt or sea salt (optional) Instructions: Mozzarella: In a small bowl, add water and citric acid and stir until dissolved. In another small bowl, add water and rennet and stir until dissolved. (if you are going to use lipase powder, do same process with it) In a large pan, add the room temperature milk, citric acid mixture, lipase powder mixture and stir well. Heat the milk over medium-heat until 95F. Remove the milk from the heat and pour in the rennet mixture while stirring. Stir for 20 sec til well mixed. Add a lid and let it sit for 5-7 min. Using a sharp knife, cut the curd and place the pot back on the heat and warm until 105-110F, while gently stirring. Remove from heat and continue to stir for 1-2 min. Then using a big spoon or spatula, remove the curd from the pot and place it into a strainer to separate the curd from the whey. Place it in a bowl. Using your hands, squeeze out the curd. Transfer the whey to a jar . Place the curd back into the bowl. (I don’t use salt but if you want you can add the salt at this time.) Microwave the cheese for about 30 sec. until 145-155F, then using your hands, stretch it and fold until the cheese is smooth. (Or you can heat using 155-165F hot whey and let the curd sit in it for around 20 sec) Repeat the process one or two times until the cheese is very smooth. !! The cheese would be a little hot, so you can use food-safe gloves during this process. Shape the cheese into a ball as in the IG Reel and place it in room temperature water. Refrigerate it for around 1 hour or until you are ready to use. 📌the grilled cheese recipe is in the comments!
