Welcome back to Friday Night Chip Club! 🍟 I am so excited to be doing this again. If you missed it the first time around, Friday Night Chip Club is my weekly series where I share recipes that you can eat with a big pile of chips...in front of the telly! First up are these insanely delicious oven baked potato wedges. If you've never been able to make a really crispy chip, then you have got to try this method. I promise, you will never make them any other way. I have got loads of pies and bakes and loaded chip loveliness to share over the next few weeks, so make sure you're following me The wedges recipe is below. I'm SO happy to be doing this again! A x #FridayNightChipClub #FNCC Feeds 4 as a side 1kg Maris Piper potatoes Vegetable oil 2 tsp smoked paprika 1 tsp dried oregano Ground sea salt Peel the potatoes, cut them into wedges and soak them in cold water for a couple of minutes, changing the water twice to rinse off the starch. Place the wedges in a saucepan and cover them in cold salted water. Bring the potato water to a simmer and cook for around 5 minutes. The potatoes should still be firm enough to shake them up without them breaking. Heat the oven to 220C fan Drain the potatoes in a colander and give them a good shake. Stir them with the metal prongs of a fork to fluff them up a little. Leave in the colonder until there is no longer steam coming off them. Heat oil in a thin based roasting tin (enamel is perfect) so it just covers the bottom and all the wedges are touching the base. Heat the oil until it's spitting hot. Stir the paprika and oregano into the oil. Tip the wedges into the pan and use a fish slice to turn them over until coated in herby oil. Season generously with salt. Roast in the oven for 12 minutes, remove and turn them over again to get another coating of the oil. Return to the oven for 12 more minutes, remove again and turn them over, before roasting for a final 5-7 minutes or until crisp and cooked through.

Smashed potato chips with dip? SAY LESS. I came up with my own version of a recipe so I’ll share that. SAVE ME for next time you are hosting 🫶🏼👩‍🍳🤤 Ingredients For the smashed potatoes 1½ lbs baby potatoes (Yukon gold or red) 2–3 tbsp olive oil 1 tsp garlic powder ½ tsp salt ½ tsp black pepper 1 cup shredded cheddar (or mozzarella, Monterey Jack, or a blend) 2 tbsp grated Parmesan (optional, for extra crisp) 👩‍🍳 Instructions Boil the potatoes Place potatoes in salted water. Boil 15–20 minutes until fork-tender. Drain and let steam dry 5 minutes. Smash & season Preheat oven to 425°F (220°C). Place potatoes on a lined baking sheet. Use the bottom of a glass to gently smash each one. Brush with olive oil and sprinkle garlic powder, salt, and pepper. Bake until crispy Roast 20–25 minutes until edges get golden and crispy. Add the cheese Sprinkle cheddar (and Parmesan if using) over each potato. Bake another 5–8 minutes until melted and bubbly. Make the dip 🧅 1 cup sour cream ¼ cup mayonnaise (adds richness) 1–2 cloves garlic, finely minced or grated 2 tbsp fresh chives, finely chopped 2 tbsp very finely minced green onion (white + light green parts) ½ tsp onion powder ½ tsp salt (adjust to taste) ¼ tsp black pepper 1 tsp lemon juice (brightens everything) Optional Flavor Boosters 1 tbsp cream cheese (extra thick & creamy) Tiny pinch of smoked paprika 1 tsp ranch seasoning for extra savory punch . . . . . . . #yachtchef #yachtlife #chef #recipes

RECIPE BELOW!👇🏼 🍫 Homemade Chocolate Chips 🍪 I bet you never thought of making your own perfectly tempered✨chocolate chips before! 😍 These would make amazing gifts and will definitely step up your best chocolate chip cookie recipe! 🍪 save this and send it to your favourite baker who has too much time on their hands 😘 Ingredients: 100g couverture/good quality dark chocolate, 70% 1g cocoa butter, very finely chopped 🖤 Instructions for DARK chocolate: Melt chocolate in a bowl set over a gently simmering pot of water (ensure water does not touch bottom of the bowl). Remove from heat. Let the chocolate cool, stirring frequently, to 34°C/93°F. Chop your cocoa butter very very finely, practically powdered. Weigh it after chopping, precision is very important. You need to add 1% of cocoa butter by weight into your chocolate. That means since I used 100g of chocolate I will add 1g of cocoa butter. When the chocolate is at 34°C/93°F, add in your cocoa butter and stir well until melted and smooth. Let the chocolate cool further to 31°C/88°F. Transfer to a piping bag with a very small round nozzle or cut a tiny hole in the bag. Drizzle small rounds onto parchment paper as shown. While it’s still tacky but started to set, lightly press the tip of your index finger and lift upward to create the little point, as shown. Let set at room temperature until fully hardened. Store in an airtight container or jar at room temperature in a cool place. Use in baking or snacking as desired!✨ 🤎🤍 Using MILK or WHITE chocolate?
