~Pineapple Tart~ Is the time of the year again for pineapple tarts, a must for Chinese New Year celebrations. This rich buttery crust with a melt in mouth texture encases a core of sweet pineapple jam. I don’t make many types of cny cookies but this is definitely in my list. What cny snacks are you making this year? For full process video, please refer to my YouTube *Pastry crust recipe* 250g unsalted butter 370g All purpose flour 50g icing sugar 20g corn flour 2 egg yolks *Egg wash* 1 whole egg 1 yolk A few drops of oil Method ➡️ Beat butter and sieved icing sugar till smooth. Do not over beat. ➡️ Add the egg yolk and mix well ➡️ Add in the sieved all purpose flour + corn flour ➡️ Use spatula to fold, finishing by hand ➡️ use pineapple tart mould to pipe out the dough and wrap the pineapple jam in the middle ➡️ bake at 180C for 8 mins, remove from oven and egg wash ➡️ Bake for another 10 mins or until it is golden yellow #pineappletart #cnycookies #cny2023 #cnybaking #pineappletarts #pastry #meltinmouth #meltinmouthcookies #凤梨酥 #黄梨饼 #新年饼

Hi folks!Just had my birthday and thank you for all the dm of birthday wishes🥰 For this week’s CNY bakes, let’s do the Kueh Bangkit 😜 It’s one of my must haves and here’s the recipe!( it’s an easy bake and rather satisfying 🤭) The Ingredients 360g Tapioca Flour/starch 2 tbsp corn flour/starch 2 large egg yolks 130g icing sugar 180g coconut cream 8 stalks of pandan leaves cookie mould The Process -bake both flour and pandan leaves in the oven..130 degrees for 50 mins. stir it in between bakes -when it’s done, pass it thru a sieve and let it cool till room temperature - add coconut cream to the egg yolk and whisk well -add icing sugar to the mixture and whisk well -add baked flour in 3 batches to the mixture and after the last bit of flour goes in , knead with your hands. the texture should be almost like cookie dough.. holds together well and when broken apart ,slightly crumbly -get the dough into the mould and remember to coat the insides of the mould with some flour to prevent the dough from sticking - depending on the mould that you use, mine yields about 60 cookies -bake at 180 deg for 20mins ( depending again on your oven’s temp.. keep a lookout when nearing the 18 mins mark) So thats it, you have the kueh bangkit! it’s a real easy bake and you might wanna try baking it for CNY🤭🥰#cny

The pineapple tart comprises a rich buttery crust with a “melt in mouth” texture, encasing a core of sweet pineapple jam. I love to make the pineapple jam from scratch, but store bought jam works too. *Jam recipe* 2 medium ripe pineapples 2 cinnamon sticks 90g rock sugar (adjust to taste) Method ➡️ Remove the pineapple skin and core. Blend in food processor ➡️ Pour blended pineapple into a saucepan. Add cinnamon sticks and sugar ➡️ Cook over medium heat until the jam thickens. These cornflake chocolate chip cookies? They’re a Chinese New Year problem — no matter how many I make, it’s never enough. So here I am again… back to the conventional method, whipping up the dough the old-school way. Simple. Reliable. Always a crowd-pleaser. Classic dough, classic crunch RECIPE: 250gm butter (room temperature) 160gm sugar 1 tsp salt Mix until pale and fluffy Add in 1 egg and 1 tsp vanilla essence and mix to combine Add in 300gm cake flour, 1/4 tsp baking powder & 1/4 tsp baking soda. Plain flour is ok if do not have cake or superfine. Fold in 100gm corn flakes and 100gm chocolate chips. Pinch and drop, no rolling no patting no smoothing. Rustic and spiky. Bake in preheated oven 180 ℃ for about 20 minutes, switch top tray to bottom and bottom tray to top and continue to bake for another 10 minutes or until golden brown. #happinessishomemade #cnybaking #thebestcookies #easyrecipes #bakewithlove

Yay, not bad 😊 Ingredients: 250g Cold Butter (Salted) 60g Icing Sugar 115g High Protein Flour 200g Low Protein Flour 50g Corn Flour You can do whatever flavour you love, here are some guidelines if you divide the dough into 2 portions. More portions, calculate yourself ya. Coffee - 15-25g espresso Black Sesame - 15-20g black sesame paste , 10g sesame powder , 5g charcoal powder If you have encountered hard dough, add 20-30g milk , but not more than that. ——Other flavour to be updated—- Notes: 1. Fotile one oven , use convect mode where use full convect mode for one oven plus. 2. If you baking 2 trays at once, recommend to bake up to 30 mins. 3. Cookies can collapse during baking if the butter is softened too much. 4. Use the right 853 / 856 nozzle. 5.
