Walnut Cranberry Date Sourdough Mix 530 grams bread flour and 360 grams water. Let it rest 30 minutes. Add 100 grams active starter, 15 grams honey, and 10 grams salt. Mix until fully incorporated. Bulk ferment 4 to 5 hours, doing 3 to 4 stretch and folds in the first 90 minutes. After the first fold, add 70 grams dried cranberries, 30 grams chopped dates, and 100 grams toasted walnuts. Fold gently to distribute. When the dough is puffy and airy, pre-shape. Rest 20 minutes. Final shape and place seam side up in a floured banneton. Cold proof overnight. Place dough into a cold Dutch oven. Bake at 450°F for 50 minutes covered, then 10–15 minutes uncovered until deep golden. Cool completely before slicing. I’ve come back to this Cranberry & Walnut with a new addition! It’s ✨Walnut Oil✨ as recommended by @maurizio in his book The Perfect Loaf! It adds such a nice aroma to the bread that wasn’t there when I made it without and the flavour of walnut is enhanced. I’ve been loving the cookbook so much, can you tell?? 😅 Sourdough Base Recipe (1 Loaf) ∙ 500g Bread Flour ∙ 325g Water ∙ 100g Sourdough Starter ∙ 10g Salt Mix flour, water (reserving 50g) and and autolyse for 30 min to an hour. Add the starter then rest for 30 min. Add salt dissolved in the reserved water and dimple in. Bulk ferment for 3-5 hours according to your kitchen temperature and in that time perform 3 stretch & folds and 2 coil folds spaced out by 30 minutes each. Preshape and bench rest for 20 minutes. Final shape and into bannetons and fridge for 4-18h. Score and bake for 20 mins in a dutch oven at 250C (480F). Then remove lid, lower the temperature to 210C (410F) and bake for a further 20 mins. Notes for inclusions: I actually just eye-ball the amount (sorry) but I can tell you that I added on top of the dough at the point of moving into the coil folds. Fresh cranberry walnut sourdough is so cozy this time of year! 🍞✨ Strong starter → 75% hydration → stretch & folds → inclusions → tight shaping → overnight fridge proof → perfect rise. If you want tall, airy, bakery-style sourdough at home, save this recipe! Ingredients: 750g water, room temperature 200g starter 1,000g unbleached bread flour 25g Himalayan sea salt 1 cup cranberries 1 cup chopped walnuts Directions: Feed starter in the morning (1:2:2 starter + water + flour). When doubled and bubbly (anywhere from 4-12 hrs depending on how active your starter is), mix water, starter, flour, and salt until shaggy. Rest 30 min. Do 4 rounds of stretch-and-folds every 30 minutes, folding in the inclusions during the second stretch and fold. Set aside and let rise 4-5 hours until doubled. Flour the top, flip out, divide the dough. Pre-shape each half, rest 20 min. Do final shape. Flour banneton, place dough seam-up. Cover and cold proof overnight. Next day, preheat Dutch oven at 500°F for 45-60 min. Lower to 480°F, score the dough, transfer to dutch oven, mist, cover and bake 30 min. Cranberry Walnut Sourdough Bread 💫⁣ ⁣ Happy Friday, friends 🫶 It’s been a while since I’ve baked a classic sourdough bread on here, so I thought I’d bring it back with one of my favorite flavors!⁣ ⁣ Bread notes ⁣ ⁣ Sourdough levain⁣⁣ 15 g active sourdough starter⁣⁣ 30 g bread flour⁣⁣ 30 g water, at around 78F/26C⁣⁣ ⁣⁣ Main dough⁣⁣ 270g bread flour⁣ 30g whole wheat flour⁣ 249g water, at around 78F/26C⁣⁣ 60g sourdough levain⁣⁣ 6g salt⁣⁣⁣ 30g walnuts, toasted and chopped ⁣ 30g dried cranberries, soaked in water for 2-3 hours (drain water before adding them to the dough) ⁣ ⁣⁣ Method:⁣⁣ ⁣⁣ 1. Make the levain:⁣⁣ Mix the levain and rise at around 78F/26C for 5 hours or until peak. ⁣⁣ ⁣⁣ 2. Prepare the main dough:⁣⁣ Three hours after mixing up the levain, you can start preparing the main dough: ⁣⁣ •In a bowl, add flour and water and mix until combined. Cover and rest/autolyse for 2 hours - until the levain is ready. ⁣⁣ ⁣⁣ 3. Add levain and salt:⁣⁣ •Add levain to the main dough and hand mix using the Rubaud mixing method (or whatever method you prefer). I mixed for about 3 minutes. ⁣⁣ •Rest for 30 minutes. ⁣⁣ •Add salt and hand mix for another 3-4 minutes.⁣ ⁣⁣ 4. Notes on the fermentation process:⁣⁣ I let my dough ferment/proof for 6.5 hours at 75F/24C, including one lamination and four coil folds. Berries and nuts were added during lamination. Each fold was separated by around 60 minutes in this order: fold, lamination, fold, fold, fold. ⁣⁣ ⁣⁣ When the dough had finished fermenting, I shaped it into a batard, placed it in my banneton, and transferred it to the fridge for an overnight cold-proof. ⁣ ⁣⁣ 5. Bake:⁣⁣ I baked the bread straight from the fridge in a preheated cast iron pan at 500F/260C for 20 minutes. Then, I removed the lid, turned the heat down to 430F/220C, and baked for another 15-20 minutes until dark golden brown.

One of my all-time favs: walnut+cranberry sourdough. I have had this recipe posted for a good 8 years, and it’s even in my cookbook. To me, this is perfect for fall (and Thanksgiving). I legit ate 3/4 of this loaf in one sitting. Watch yourself 😂 [[Recipe]] Levain 40g medium-protein bread flour or all-purpose flour 40g whole rye flour 80g water 8g ripe sourdough starter Main Dough 600g medium-protein bread flour or all-purpose flour 120g whole wheat flour 160g walnuts, shelled and toasted 112g cranberries, sweetened 24g walnut oil (optional!) 15g sea salt 520g water 1 (autolyse) 80g water 2 (mix) 168g levain [[Method]] 1. Mix Levain ingredients and keep warm overnight (starts 9:00 p.m.). 2. Toast walnuts at 350°F (175°C) for 10-15 minutes until fragrant. 3. In the morning, mix flours (600g bread, 120g whole wheat) and 520g water, rest for 1 hour. 4. Add levain, rest 10 minutes, then add salt and walnut oil (if using). Mix until smooth. 5. Bulk ferment for 3 hours, incorporating walnuts gradually during first fold set as seen in the reel. Perform two more gentle folds at 30 minute intervals. 6. Divide dough in half, preshape into rounds, rest 30 minutes. 7. Shape into boules or batards and place in proofing baskets. 8. Proof in refrigerator overnight (about 20 hours). 9. Preheat oven to 450°F (230°C), bake 20 minutes with steam, then 30 minutes without. Internal temp should reach 204°F (95°C). Cool 2 hours before slicing.
