The perfect croustade! It took me almost 3 days of test to get to this final result, but I can finally say this is a croustade to be proud of! Dry and crispy, perfectly smooth on the surface, and resistant to the moisture of the filling for waaay longer than you would expect. Here’s the full recipe and all my tips to get to this results. Ingredients: 20g of flour 80g of rice flour 18g of cornstarch 100g of vegetable broth or water 100g of blonde beer 5g of seeds oil 1 whole egg 4g of salt 4g of sugar Mix the flours, the cornstarch, the salt and the sugar. Then take a bowl pour the egg, the broth, the beer and the oil and mix well with a whisk. Add the mix to the dry ingredients and blend until you get a smooth batter. Let the batter rest in the fridge for at least 30 minutes. In the meantime pour some seed oil in a small pot and bring it to 135C. Put the pie tee stamp inside the hot oil and let it heat up as well. Take the pie tee and quickly dab it on a paper towel to remove the last drops of oil, then immediately dip it in the batter for around 10 seconds. Slowly lift it up and make sure there are no missing spots on the surface of the pie tee. Let it rest for around 5-10 minutes before deep frying the pie tee. The shell needs to feel really dry at this point. Deep fry the shells at 140C for around 1 minute. Use your tweezers to touch the shell and if it feels dry and crispy already, just put some pressure to release it from the mold. Let it fry for another 30 seconds or until golden. When you’re done frying all your pie tee shells let them dry in your oven at 60-70C for a couple hours and they’ll be ready to be stored and kept for service. #cooking #gourmet #finedining #culinary #chefs

Are you making your own croustade batter this year? 🥳 By @nicky.arentsen Recipe below: Ingredients: • 300g (about 2 1/2 cups) all-purpose flour • 8g (11/2 teaspoons) salt • 200g (about 3/4 cup plus 11/2 tablespoons) milk • 200g (about 3/4 cup plus 11/2 tablespoons) beer • 2 eggs Instructions: 1. Combine Dry Ingredients: 2. In a large mixing bowl, sift together the all-purpose flour and salt. 3. Add Wet Ingredients: 4. Create a well in the center of the flour mixture and add the milk, beer, and eggs. 5. Mix the Batter: 6. Blend all the ingredients together using a stand mixer or a hand mixer, . If the batter is too wet, add a bit more flour; if it’s too dry, add a little more milk. It needs to look like a pancake batter. 7. Cover the batter with plastic wrap or a damp cloth and let it rest in the refrigerator for at least 24 hours. 8. Vacuum the batter (Optional): 9. If available, vacuum seal the dough to remove any air bubbles. This step is not essential for home baking but is used in professional kitchens to achieve a consistent texture. 10. Ready to Use: 11. After the resting period, the Croustade batter is ready to be used in approximately 190 degrees hot oil. Paso a paso 1: En una jarra, combina agua, huevo, harina, sal, azúcar y la pasta de vainilla. Turmix hasta homogeneizar. 2:Deja reposar mínimo 30 minutos en nevera para relajar las proteínas e hidratar el almidón. 3:Precalienta el aceite (usé oliva suave) a 185 °C. Sumerge el molde de croustade @nordic_chefs durante 5 minutos. El metal debe arder (no lo toques). 4: Escurre el exceso de aceite y sumerge el molde caliente en la masa bien fría, sin cubrirlo por completo. Espera 3 segundos y levanta lentamente. 4:Secado estratégico: deja secar la película de masa 5 minutos a temperatura ambiente. Evita así las burbujas y lograrás una carcasa completamente lisa. 6:Reintroduce en el aceite caliente hasta que tome un color ámbar. 안녕하세요! 이번에는 크루스타드를 만들어봤습니다. 어떤 재료로 셸을 만드느냐에 따라 불리는 이름이 달라지는 개념이라고 생각해요. 쌀을 베이스로 만들면 라이스 컵처럼 불리기도 하고, 밀가루나 다른 곡물을 사용하면 크루스타드라는 이름으로 불리기도 합니다. 이번에는 강력분을 베이스로 메밀가루를 배합해 만들었습니다. 메밀가루를 섞으면 튀겼을 때 표면에 점점이 남는 질감이 생기고, 색도 조금 더 진하게 올라와 보여지는 인상이 좋아 사용했습니다. 부족하지만 재밌게 봐주시고, 영상을 보시는 분들께 조금이나마 도움이 되었으면 합니다. 🍽 [레시피 정리] 1. 반죽 베이스 재료를 섞은 뒤 체에 내려 한 번 걸러줍니다. 냉장에서 1시간 이상 휴지합니다. 2. 반죽 정리 휴지 후에는 침전물이 생기기 때문에 사용 전에 한 번 저어 점도가 고르게 섞이도록 합니다. 3. 성형 스탬프를 기름에서 충분히 달군 뒤 반죽에 찍어 표면에 반죽이 얇게 붙도록 합니다. 4. 튀김 기름 온도는 **170~180℃**를 유지합니다. 이 온도대에서 반죽이 반응하기 시작하고, 기포가 천천히 올라오면서 형태가 잡힙니다. 너무 빠르게 색이 나지 않도록 온도를 유지하며 튀기는 게 포인트입니다. #크루스타드 #croustade #메밀 #Madewithbuckwheat #shell
